CREAMY POLENTA WITH CRISPY BACON AND CHARD
Steps:
- Add the milk and heavy cream to a medium saucepan and bring to a low boil, stirring constantly so the milk doesn't scorch. Whisk in the polenta, whisking constantly until smooth. Stir in a big pinch of salt. Reduce the heat to medium low and cook, stirring frequently, until the polenta is tender, about 30 minutes.
- Meanwhile, add the bacon to a medium pan. Turn the heat to medium high and cook, flipping once, until the bacon is crispy, about 10 minutes. Remove the bacon to a paper towel-lined plate to drain. Add the shallot to the pan and cook until translucent, about 2 minutes. Add the chard and a big pinch of salt and cook until wilted but still crisp-tender, about 7 minutes. Stir in a shake of hot sauce if desired. Chop the bacon, add it to the greens and stir to combine. Remove from the heat.
- Add a big pinch of black pepper to the polenta and stir. Taste and adjust for salt and pepper. Remove the polenta from the heat and stir in the butter. Transfer to a serving plate and top with the greens in the center.
SAUTEED SWISS CHARD WITH BACON

- Coat a large saute pan lightly with olive oil and add the diced bacon, garlic, and crushed red pepper. Bring the pan to medium-high heat. When the garlic has turned a lovely golden brown, remove from the pan and discard. At this point the bacon should start to become brown and crispy. Add the Swiss chard stems and the stock and cook until the stock has mostly evaporated. Add the Swiss chard leaves and saute until they are wilted. Season with salt.
SAVORY SWISS CHARD WITH BACON

- Chop chard stems into 1-inch pieces. Tear leaves in half.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook and stir until fragrant. Stir in bacon; cook until browned and crisp, about 5 minutes.
- Stir Swiss chard stems and leaves into the skillet. Reduce heat and cover skillet. Cook for 5 minutes. Turn chard with tongs to coat with bacon drippings. Cover and cook, turning once, until stems are fork tender, about 10 minutes more.
- Increase heat to medium; stir white wine and red pepper flakes into the skillet. Cook, uncovered, until moisture evaporates, 2 to 3 minutes. Season with salt and pepper.

Here's an easy, quick and savory recipe for Swiss chard from zany, excellent Chef Anne Burrell. It's one of my favorites! Chard is one of the super leafy greens packed with minerals and vitamins as well as a healthy dose of fiber. It tastes a lot like spinach with a slightly stronger taste, depending on the cooking method. Use regular olive oil, not virgin, for best flavor. Reduce the amount of bacon if desired.

CHARD WITH BACON DRESSING
Mom would prepare this for us often when fresh chard from Dad's garden was plentiful. When I finally wrote down the recipe, Mom couldn't give me exact measurements, as all good cooks are guilty of. I think this recipe is based on traditional Mennonite/Pennsylania Dutch fare, since my Dad was from that region. A blast from the past!

- Rinse and drain well the chard to remove grit. Cut away stems and discard.
- Fry up bacon slices until crisp. Transfer to paper towel and drain. Let cool, then crumble. Set aside. Reserve bacon fat.
- On medium-high heat in frying pan, add the vinegar and sugar to the bacon fat and bring to boil. Boil for about 30 seconds. Make sure not to burn; reducing heat if necessary.
- Reduce heat to medium, add the chopped chard and sautè 2-3 minutes until slightly wilted but not slimy.
- Add the crumbled bacon. Stir well to coat with the bacon dressing. Transfer to platter and serve warm.

WILTED CHARD WITH BACON AND GARLIC

- Place a double layer of paper towels on a heat resistant plate. Heat a large heavy pot with a cover over medium heat. Add bacon and cook until bacon is crisp and brown, stirring occasionally. Remove bacon with a slotted spoon and place on the prepared plate with the paper towel to drain.
- Discard all but 1 Tablespoon bacon grease from pot. With pot over medium heat, add the butter and allow pan to reheat. Add the onion slices and cook, stirring occasionally until the onions are translucent with browned edges. Add garlic to pan and cook for two minutes, stirring constantly.
- Add vinegar to the pan, stirring to scrape up browned bits. Cook until liquid is reduced by half. Add chard and lightly sprinkle with salt. Stir to combine ingredients. Cover to allow chard to wilt for about 30 seconds.
- Uncover and stir, then replace lid for about 30 seconds. Repeat until chard is wilted as desired. Stir in reserved bacon. Taste and adjust seasoning if necessary.
