Inspired by the classic Reuben sandwich, this nontraditional, healthy Reuben meatloaf recipe includes sauerkraut, Swiss cheese, dill pickles and rye breadcrumbs.

1 large yellow onion, cut into 2-inch pieces
1 large carrot, cut into 2-inch pieces
1 tablespoon extra-virgin olive oil or canola oil
2 cups sauerkraut, drained and squeezed dry
1 cup diced Swiss cheese
4 tablespoons ketchup, divided
1 tablespoon caraway seeds
¼ teaspoon salt
1 large egg, lightly beaten
¾ cup fresh breadcrumbs, preferably from Jewish rye bread (see Tip)
2 pounds lean (90% or leaner) ground beef
3 tablespoons low-fat mayonnaise
½ cup chopped dill pickles

Steps:

  • Preheat oven to 375 degrees F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation).
  • Pulse onion and carrot in a food processor until finely chopped. (Or finely chop them with a knife.)
  • Heat oil in a large nonstick skillet over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender and most of the liquid has evaporated, 5 to 10 minutes. Transfer to a large bowl and let cool for 10 minutes.
  • Add sauerkraut, cheese, 2 tablespoons ketchup, caraway seeds and salt to the vegetables; stir to combine. Stir in egg and breadcrumbs. Add ground beef and with clean hands gently knead the vegetable mixture into the meat; do not overmix. Pat the meat mixture into a loaf shape (about 12 by 5 inches) on the prepared baking sheet. Combine the remaining 2 tablespoons ketchup and mayonnaise in a small bowl. Spread on the loaf.
  • Bake the meatloaf until an instant-read thermometer inserted in the center registers 165 degrees F, about 45 minutes. Sprinkle with chopped pickles. Let rest for 10 minutes before slicing.

8 ounces deli-sliced corned beef
1 slice rye bread, cut into cubes
1 pound ground beef
1 large egg
1/4 cup milk
1/2 onion, grated on the large holes of a box grater
1 1/4 cups shredded Swiss cheese (about 5 ounces)
Kosher salt and freshly ground pepper
1 cup drained sauerkraut
Russian or Thousand Island dressing, for topping
Chopped fresh parsley, for topping
Potato chips and pickles, for serving

Steps:

  • Preheat the oven to 450 degrees F. Put the corned beef in a food processor and pulse until finely ground; remove to a medium bowl. Add the bread to the food processor and pulse until fine; add to the corned beef. Add the ground beef, egg, milk, onion, 3/4 cup cheese, 1/4 teaspoon salt and a few grinds of pepper. Mix well with your hands and transfer to a rimmed baking sheet. Form into four 3/4-inch-thick oval patties.
  • Bake the patties until lightly browned, firm and cooked through (a thermometer inserted into the centers should register 160 degrees F), 20 to 23 minutes. Evenly top the meatloaves with the sauerkraut and remaining 1/2 cup cheese. Return to the oven and bake until the cheese is melted, about 3 minutes.
  • Transfer the meatloaves to plates and top with Russian dressing and parsley. Serve with potato chips and pickles.

ROSE'S REUBEN LOAF

1 pound frozen pizza dough, or 2 (10-ounce) canisters, at room temperature
2 cups Russian Dressing, recipe follows
2 cups leftover minced corned beef
2 cups leftover sauerkraut, drained well
1 pound sliced Swiss cheese, domestic or imported
Oil, for brushing
2 cups mayonnaise
1/2 cup drained pickle relish
5 pitted green olives, chopped fine
1/2 tablespoon olive juice
1/2 cup ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • With rolling pin, roll out dough to 1/4-thick. Spread some of the dressing over dough, leaving a border around the edges, and reserve the rest to serve on the side. Layer the corned beef, sauerkraut and cheese over the dressing.
  • Roll up the dough halfway, fold in the sides, and continue rolling to form a tight log. Place on a greased or parchment paper-lined baking sheet, placing the seam-side down. Brush the top lightly with oil.
  • Bake until the crust is golden, about 30 minutes. Let cool slightly before slicing. Serve with the remaining dressing.
  • Place all the ingredients in a bowl and mix well.

REUBEN-LIKE MEATLOAF

I've been making this for quite a while. I always liked it because it uses pastrami instead of the normal corned beef.It has sort of a strong mustard taste, so you may want to tone that down by cutting the 1 Tbsp down to a 1/2 Tbsp if you prefer.

2 lbs lean ground beef
4 ounces deli pastrami, chopped
1 (8 ounce) can sauerkraut, rinsed and drained
1 cup shredded swiss cheese
1/4 cup sour cream
1 tablespoon prepared mustard

Steps:

  • In a large bowl, combine the egg,ketchup, bread crumbs, and salt.
  • Crumble the beef over the mixture and mix well;set aside.
  • In a bowl,combine pastrami, sauerkraut,cheese, sour cream and mustard.
  • Press a third of the mixture into a greased 9x5x3 inch loaf pan.
  • Top with half of pastrami mixture.
  • Repeat layers.
  • Top with remaining beef mixture.
  • Cover and bake at 350 degrees for 1 hour or until meat is no longer pink;drain.
  • Let stand 10 minutes before slicing.

1 lb ground pork
1 cup sauerkraut or 1 cup shredded cabbage
1 cup finely chopped onion
2 eggs
1 1/2 tablespoons caraway seeds
2 teaspoons celery seeds
2 tablespoons coarse ground dry mustard
1/2 teaspoon black pepper
1 1/2 teaspoons salt

Steps:

  • Mix all the ingredients together until thoroughly blended.
  • Free-form into a loaf shape in a casserole dish and bake and 350°F until done, about 1 1/4 hours.
  • This can be served with a low carb Russian or Thousand Island dressing.

I've made this meatloaf for years but I didn't have it written down anywhere so I had to wait til I made it again tonight to measure the ingredients. I'm not usually a huge fan of sauerkraut but my husband likes it so I combined a couple of different recipes to come up with this.

1 1/2 lbs ground beef
1 cup rye breadcrumbs
1/2 cup Russian salad dressing or 1/2 cup thousand island dressing
1 egg
1/4 teaspoon pepper
1 (8 ounce) can sauerkraut, rinsed and drained
1/2 cup swiss cheese, shredded

Steps:

  • Combine ground beef, bread crumbs, dressing, egg and pepper.
  • Pat into approximately a 10x12 rectangle on a piece of waxed paper.
  • Top with sauerkraut and Swiss cheese, and roll up like a jelly roll.
  • Seal ends and place seam side down into a meatloaf pan.
  • Bake at 350 for 45 minutes or until done.
  • I usually sprinkle a little more cheese on top and put it back into the oven to melt it.

3/4 c oatmeal
2 eggs, beaten
1 medium onion, chopped
1 1/2 tsp salt
1/2 tsp pepper
1 c milk
1 can(s) (small) sauerkraut, drained
2 c grated swiss cheese
little caraway seed, if desired

Steps:

  • 1. Combine all ingredients except kraut and cheese. Put 2/3 of the meat mixture into 7 x 11" baking dish. Cover bottom and sides of dish. Layer kraut, then top with grated cheese. Pat remaining meat mixture on top and seal edges of meat. Bake one hour at 350 degrees. ENJOY!!!

When I make this bread, I almost always have to bake two loaves so that everyone gets a taste! It's especially good in the winter. In fact, last year when we went to a Christmas buffet at my husband's aunt's house-with a hearty soup as the main course-I took a Reuben Loaf along. It looks so pretty sliced and arranged on a platter, too. My husband and I are crop farmers with three young children. Cooking-especially baking-is one of the ways I relax, and I also enjoy sewing.

3-1/4 to 3-3/4 cup all-purpose flour, divided
1 package (1/4 ounce) quick-rise yeast
1 tablespoon sugar
1 tablespoon butter, softened
1 teaspoon salt
1 cup warm water (120° to 130°)
1/4 cup Thousand Island salad dressing
3 packages (2 ounces each) thinly sliced deli corned beef
4 ounces sliced Swiss cheese
1 can (8 ounces) sauerkraut, drained
1 large egg white, beaten
Caraway seeds

Steps:

  • In a bowl, combine 2-1/4 cups flour, yeast, sugar, butter and salt. Stir in warm water; mix until a soft dough forms. Add remaining flour if necessary. Turn out onto a lightly floured surface; knead until smooth, about 4 minutes. , On a lightly greased baking sheet, roll dough to a 14x10-in. rectangle. Spread dressing down center third of dough. Top with layers of beef, cheese and sauerkraut. Make cuts from filling to edges of dough 1 in. apart on both sides of the filling. Alternating sides, fold the strips at an angle across filling. Cover dough and let rise in a warm place for 15 minutes. , Brush with egg white and sprinkle with caraway seeds. Bake at 400° for 25 minutes or until lightly browned. Serve immediately; refrigerate leftovers.

3 cups chopped cooked corned beef
6 slices Swiss cheese
1 cup sauerkraut, drained and pressed

Steps:

  • In a large bowl, combine 1 1/2 cups flour, yeast, sugar and salt. Add warm water, mustard and butter; stir well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Cover and let rest for 10 minutes.
  • On lightly floured surface, roll dough to a 10x15 rectangle. Layer corned beef, Swiss cheese, and sauerkraut in the center third of the rectangle. Use a knife to make cuts from filling to dough edge, approximately 1 inches apart. Folds strips across bread, alternating sides. Cover loaf and let rise in a warm area for 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush risen loaf with beaten egg. Bake in preheated oven for 30 minutes, until golden brown.
