FILET WITH ROASTED GARLIC BUTTER

Filet with Roasted Garlic Butter image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 2h35m

Yield 4 servings

Number Of Ingredients 9

10 cloves garlic
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup (2 sticks) salted butter, plus 1 tablespoon for the steak pan
1/2 cup chopped fresh parsley
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh thyme
2 teaspoons crushed red pepper
Four 2-inch thick beef filet steaks (8 to 10 ounces each)

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the garlic cloves in a small ovenproof dish. Drizzle with 2 tablespoons of the olive oil and sprinkle with salt and pepper. Cover with foil and roast in the oven until the garlic is golden and soft, about 45 minutes. Set aside to cool completely.
  • To a large bowl, add the softened butter, parsley, chives, thyme, red pepper and the roasted garlic. Using a spatula, mix everything together until well combined. Lay out a large piece of plastic wrap and add the butter in a long strip down the middle. Pull one side of the plastic wrap over the butter and gently form it into a log. Tightly twist the ends like a candy wrapper, until everything is nice and tight. Transfer to the fridge for a couple hours to harden. (Butter can be made ahead; it will keep for 1 week in the fridge.)
  • When you are ready to cook the steaks, preheat the oven to 450 degrees F.
  • Sprinkle the steaks liberally with salt and pepper. Add the remaining tablespoon each olive oil and butter to an ovenproof skillet and place over a medium-high heat. When the oil is hot and the butter is melted, place the steaks in the skillet and cook until well browned, about 1 minute per side.
  • Place the skillet in the oven and cook the steaks for 4 to 5 minutes for medium-rare. Remove from the oven and top each steak with a thick slice of the garlic butter. Loosely cover with foil and allow to rest for 8 to 10 minutes.

PERFECT FILET MIGNON RECIPE

Perfect Filet Mignon Recipe image

Learn how to cook the best filet mignon perfectly like a steakhouse, pan seared in a cast iron skillet & finished in the oven (with time chart!). This filet mignon recipe is EASY, juicy and flavorful.

Provided by Maya | Wholesome Yum

Categories     Main Course

Time 15m

Number Of Ingredients 7

2 tbsp Unsalted butter ((softened, divided))
1/2 tbsp Fresh rosemary
1/2 tbsp Fresh thyme
1 clove Garlic ((minced))
4 8-oz Filet mignon steaks ((at room temperature))
Sea salt
Black pepper

Steps:

  • Remove your filet mignon from the fridge about 30 minutes before cooking to bring it to room temperature. (This will ensure even cooking.)
  • Mash together half of the butter (1 tablespoon, 14 g), rosemary, thyme, and garlic. (Sprinkle in a little sea salt if using unsalted butter.) Form into a log and refrigerate until the last step.
  • Preheat the oven to 400 degrees F (204 degrees C).
  • Trim any connective tissue around the edges of the beef tenderloins. Season the filets liberally with sea salt and black pepper on both sides.
  • Heat the cast iron skillet over medium-high heat, until the skillet is very hot. Melt the remaining butter (1 tablespoon, 14 g) in the skillet.
  • Add the filets. Sear for 2 minutes on each side, without moving them around.
  • Transfer the skillet to the preheated oven. Bake to desired level of doneness. (I recommend medium rare.) For a 2 in (5 cm)thick filet, that is 5 minutes for rare, 6 minutes for medium rare, 7 minutes for medium, or 8 minutes for medium well. Use a meat thermometer to check for the right temperature - 120 degrees F (52 degrees C) for rare, 130 degrees F (54 degrees C) for medium rare, 140 degrees F (60 degrees C) for medium, and 155 degrees F (68 degrees C) for medium well. The temperature will rise by another 5 degrees F while resting (see next step).
  • Remove the filets from the oven and transfer to a plate. Top each with 1/2 tablespoon (7 g) of herb butter (slice the log of herb butter into four parts and put one on each steak). Let the steaks rest for 5 minutes before cutting.

Provided by Food Network

Categories     main-dish

Time 2h50m

Yield 6 servings

Number Of Ingredients 8

Six 4-ounce filet mignon medallions
Olive oil
1 teaspoon sea salt, plus more for seasoning
Seasoned salt (recommend: Lawry's Seasoned Salt)
1/2 teaspoon freshly cracked black pepper, plus more for seasoning
3 Bartlett pears
6 cloves garlic, peeled
3/4 cup chicken stock

Steps:

  • Preheat the oven to 450 degrees F.
  • Rinse the filet medallions and pat completely dry. Add the medallions to a medium mixing bowl, and drizzle with olive oil. Sprinkle with sea salt, a few pinches of seasoned salt, and black pepper. With your hands, rub both sides of the medallions until they are covered with the oil and spices. Set aside in the refrigerator for at least 1 hour.
  • Meanwhile, cover the bottom of a glass baking dish with aluminum foil. Cut off a small slice from the bottom of each pear they can stand up straight and arrange them, upright, in the baking pan. Add garlic and drizzle the pears and garlic with olive oil. Cover with aluminum foil. Roast in the oven for 30 minutes.
  • Allow the pears to cool for 30 minutes and then peel off the skin and remove the core.
  • Add the garlic, pears and chicken stock to a blender and blend until smooth. Pour the mixture into saucepan over low heat and season with a couple of pinches of sea salt and pepper and let simmer for a couple of minutes.
  • Heat the broiler. Cover a baking sheet with foil and arrange the filet mignon medallions on the pan. Charbroil on high on the top rack, about 6 inches below the broiler. Broil for 5 to 7 minutes for medium-rare. Do not flip.
  • Ladle a bed of the roasted pear and garlic sauce on each of 6 plates. Use tongs to top each with a filet and serve.

Pan Roasted Filet Mignon with Green Peppercorns image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 12

Four 6-ounce filet mignon steaks, at room temperature, lightly pounded
Kosher salt
1/4 cup black peppercorns, coarsely ground, such as Butcher Cut
3 tablespoons canola or grapeseed oil
1 shallot, minced
2 tablespoons green peppercorns in brine, drained
2 ounces brandy
3/4 cup beef stock
1/2 cup heavy cream
2 tablespoons unsalted butter
Chopped fresh parsley, for sprinkling
1 teaspoon red wine vinegar

Steps:

  • Sprinkle the steaks generously with salt on both sides. Press the top and bottoms of the steaks into the peppercorns to crust on each side.
  • Heat 2 tablespoons oil in a large heavy saute pan or cast-iron pan over medium-high heat until very hot. Add the steaks and sear for 3 to 4 minutes on each side. Cook until the internal temperature is around 125 degrees F for medium-rare. Remove the steaks from the pan and allow them to rest.
  • In the same pan the steaks were cooked in, add the shallots along with the remaining tablespoon oil and the green peppercorns and reduce the heat to medium. Cook until the shallots are softened and lightly browned, 2 to 3 minutes.
  • Turn off the heat, then add the brandy and return the heat to medium. Cook for 1 minute. Add the beef stock and cream, then reduce the liquid by half until thickened, 8 to 10 minutes. Season with salt as needed.
  • Turn off the heat. Swirl in the butter and melt, stirring often. Return the steaks to the pan and coat with the sauce. Sprinkle with the parsley and a splash of red wine vinegar to balance the richness of the sauce. Place the steaks on a plate, then spoon the sauce over and serve.
