1 skinless, boneless chicken breast half
1 tablespoon fresh lemon juice

Steps:

  • Melt butter in a small skillet. Pepper the skillet with 1/2 tablespoon of the pepper, then lay the chicken breast onto the pepper. Squeeze fresh lemon juice onto the chicken, then season with the remaining pepper.
  • Saute chicken breast for about 5 to 7 minutes, then turn to the other side, squeeze lemon juice onto the other side and saute for another 5 to 7 minutes (or until chicken is cooked through and juices run clear).

3 tablespoons butter
8 bone-in skin-on chicken thighs (2 1/2 to 3 lb total)
1 teaspoon lemon pepper
1/2 teaspoon salt
2 teaspoons finely chopped garlic
1 cup Progresso™ chicken broth (from 32-oz carton)
2 teaspoons grated lemon peel and 2 tablespoons lemon juice (from 1 large lemon)
2 tablespoons cold water
2 tablespoons cornstarch
Cooked white rice, if desired

Steps:

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray.
  • In 12-inch nonstick skillet, heat 1 tablespoon of the butter over medium-high heat. Season chicken with 1/2 teaspoon of the lemon pepper and the salt. Place half of the chicken thighs skin-side down in skillet; cook 4 to 5 minutes or until skin is golden brown and chicken releases easily from surface. Turn chicken over; cook 2 minutes. Repeat for remaining chicken.
  • Layer chicken thighs, skin-side up, inside slow cooker; sprinkle with garlic. In 2-cup measuring cup, mix chicken broth, lemon peel, lemon juice and remaining 1/2 teaspoon lemon pepper; pour over chicken thighs. Cover and cook on Low heat setting 3 to 3 1/2 hours or until chicken is tender (at least 165°F).
  • Remove chicken to serving platter; cover and keep warm. In small bowl, mix water and cornstarch; beat with whisk into cooking juices in slow cooker. Cover and cook on High heat setting 20 to 30 minutes or until slightly thickened and bubbly around edges. Stir in remaining 2 tablespoons butter. Serve sauce with chicken and cooked rice.

1 clove garlic, minced
1 chicken breast
salt, to taste
½ teaspoon pepper

1 lemon, half for the juice, half for slices
parchment paper

Steps:

  • Preheat oven to 400°F (200°C).
  • Place asparagus into mixing bowl and thoroughly coat with olive oil, salt, pepper, and garlic.
  • Tear off a sheet of parchment paper, large enough to fold into a packet.
  • Place asparagus and chicken breast on top of parchment paper. Season with salt, pepper, oregano, and lemon juice. Garnish with 2-3 lemon slices.
  • Fold the edges of the parchment paper widthwise 2-3 times then twist the ends until fully closed.
  • Bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).

Crispy on the outside and tender on the inside, these not-so-chicken tenders satisfy that craving because the tofu is soaked in a "not chicken" broth, yielding an umami flavor. Don't be tempted to skip the pressing of the tofu-that's crucial in removing its liquid so it can soak up that broth.

Two 14-ounce packages firm tofu
3 cups "no chicken" broth (or broth made with no chicken base)
Peanut or canola oil, for frying
1 1/2 cups unsweetened almond milk
1 1/2 tablespoons white vinegar
2 cups all-purpose flour
1/4 cup cornstarch
1/4 cup lemon-pepper seasoning, plus more for sprinkling
Kosher salt and freshly ground black pepper
1 cup vegan mayonnaise
1/4 cup unsweetened almond milk
1 teaspoon dried parsley
1 teaspoon white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon dried dill
Kosher salt and freshly ground black pepper

Steps:

  • For the lemon-pepper "chicken": Place the tofu on a layer of paper towels on a cutting board. Top with more paper towels. Place a pot over the top and fill with heavy cans to press the excess liquid from the tofu. Let stand for 30 minutes.
  • Cut the tofu into strips. Soak the strips in the broth in a bowl for 1 hour.
  • Meanwhile, make the ranch dip: Stir together the mayonnaise, almond milk, parsley, vinegar, garlic powder, onion powder and dill in a small bowl. Season with salt and pepper. Refrigerate until ready to serve.
  • For the lemon-pepper "chicken": Pour enough oil to reach halfway up the sides of a cast-iron skillet. Heat the oil to 350 degrees F. Line a rimmed baking sheet with a wire rack.
  • Make the "buttermilk" by stirring together the almond milk and vinegar in a shallow dish. Let stand, whisking occasionally, for 10 minutes to develop a tangy flavor. Combine the flour, cornstarch, lemon-pepper seasoning and salt and pepper to taste in a separate shallow dish.
  • Dip the tofu strips in the "buttermilk," then dredge in the flour mixture. Fry, in batches, turning occasionally, 7 to 8 minutes. Drain on a wire rack and sprinkle with additional lemon-pepper seasoning while still hot. Serve hot with the ranch dip.

Be careful not to overbake the dip or it will split; you just want the edges lightly golden and the dip hot in the center. Spread any leftovers on sourdough toast for an excellent grilled cheese sandwich.

3 ounces feta, divided
1/3 cup everyday olive oil, plus more for drizzling
2 1/2 teaspoons freshly ground black pepper, divided

1/2 teaspoon crushed red chile flakes
1/2 teaspoon Diamond Crystal kosher salt
2 lemons
8 ounces shredded cooked chicken
1 scallion, thinly sliced
Crackers, pita chips or bread and carrot, celery and/or cucumber sticks, for serving

Steps:

  • Heat the oven to 350 degrees. In a large bowl, mash the cream cheese with a fork until broken up. Crumble in about two-thirds of the feta, then add the olive oil, 2 teaspoons of black pepper, the garlic powder, chile flakes and salt. Using a microplane set over the bowl, finely zest both lemons into the dip. Juice the lemons and pour 1/2 cup juice into the dip; discard or save any leftover juice for another use. Stir everything until evenly combined.
  • Add the chicken to the dip and stir until just combined (you don't want to stir so much that the chicken turns to mush). Transfer the mixture into a shallow 1-quart baking dish or pie plate and sprinkle the top with the remaining ½ teaspoon pepper.
  • Bake the dip until it is heated through and lightly browned around the perimeter, about 30 minutes. Remove from the oven and sprinkle with the scallions. Crumble the remaining 1 ounce of feta evenly over the scallions, then drizzle with more olive oil, if you like. Serve the dip while hot with crackers and veggies for dipping.

4 bone-in chicken breast halves or 4 chicken pieces
3 lemons
1 medium onion
3 tablespoons olive oil
1 tablespoon minced garlic (or fresh)
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
2 tablespoons fresh ground pepper

Steps:

  • Put chicken into a large bowl.
  • In a separate bowl, zest the lemon peel off the lemons. Then cut them in half and juice the lemons. (juice and zest in bowl; reserve lemon rinds).
  • Mince onion and add it to the bowl with olive oil, paprika, thyme, salt and pepper. Reserve 3 tbsp of this marinade.
  • Use hands or tongs to turn chicken over and coat it with the marinade.
  • Marinate for 12 hours or overnight.
  • Heat oven to 500 degrees.
  • Put chicken skin side up on a shallow, medium-sized roasting pan.
  • Place reserved lemon rinds into pan.
  • Put chicken in oven and reduce heat to 375 degrees. Bake for 25 minutes, brushing with the reserved marinade, or until chicken is cooked through.
  • Discard lemon rinds. Serve with remaining marinade. Good served with my almond green beans and.

2 shallots, minced
3/4 teaspoon oregano, crumbled

3 lbs chicken, halved or quartered (depending on how many servings you want to get)
1 tablespoon freshly grated lemon, zest of

Steps:

  • In a large, shallow bowl, whisk together lemon juice, garlic, shallots, oregano, rosemary, bay leaf, lemon zest, pepper and oil.
  • Add chicken, turning it to coat with marinade, and let it marinate, skin side up, covered and chilled, for 3 hours.
  • Preheat oven to 450 degrees F.
  • Put rack in middle position of oven.
  • Arrange chicken, skin side up, on a rack in a roasting pan.
  • Season lightly with salt.
  • Roast for 35-45 minutes. Halfway through, sprinkle on pepper and lemon zest.
