ARTICHOKE AND FETA QUICHE

Artichoke and Feta Quiche image

A custardy quiche, with a crust made from scratch, is filled with shallots, artichoke hearts and feta.

Provided by Food Network Kitchen

Time 3h30m

Yield 6-8

Number Of Ingredients 13

1 3/4 cups all-purpose flour, plus more for dusting (see Cook's Note)
1 tablespoon sugar
1/2 teaspoon fine salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, diced and kept very cold
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more as needed
1/2 cup thinly sliced shallots
1 cup chopped thawed frozen artichoke hearts
1 cup crumbled feta
1 1/4 cups half-and-half
2 tablespoons chopped fresh flat-leaf parsley
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas. Pulse in the vinegar. Then add the ice water, pulsing quickly a few times to combine. Squeeze some dough between your fingers--it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. (Pulse quickly, do not overwork or the dough will be tough.0 Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • Sprinkle the shallots evenly into the crust. Combine the artichoke hearts with the feta and sprinkle it in an even layer over the shallots.
  • Whisk together the half-and-half, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

BACON AND SPINACH CRUSTLESS QUICHE

Bacon and Spinach Crustless Quiche image

Hold the crust: this simple egg dish uses a sprinkle of Parmesan cheese instead of a crust.

Provided by Food Network Kitchen

Time 3h

Yield 6-8

Number Of Ingredients 11

2 tablespoons unsalted butter, at room temperature
2 tablespoons finely grated Parmesan
2 cups half-and-half
1 tablespoon all-purpose flour
Pinch cayenne
2 large eggs plus 2 large egg yolks
Kosher salt and freshly ground black pepper
2 cups packed baby spinach, plus more for serving (optional)
3/4 cup chopped cooked bacon
1/2 cup grated mozzarella
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 350 degrees F. Brush a 9-inch pie pan with the butter and sprinkle the grated Parmesan evenly on top. Put the pan on a rimmed baking sheet.
  • Whisk the half-and-half, flour, cayenne, eggs, egg yolks, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl. Spread the spinach and bacon out in the prepared pie pan. Pour the egg mixture over top and sprinkle with the cheese and chives.

Mini Leek Quiches image

Provided by Sandra Lee

Time 45m

Yield 24 pieces

Number Of Ingredients 9

1 large or 2 small leeks, white and light green parts only, finely chopped
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme, leaves only
1 (14-ounce) box refrigerated pie dough, 2 rounds
3/4 cup heavy cream
2 large eggs
1/8 teaspoon pumpkin pie spice
1/2 cup finely grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse the leeks in a bowl of water and strain. Set aside.
  • In a skillet over medium heat, add the butter. When it is melted, add the leeks and season with salt and pepper. Cook until they are soft and tender, 6 to 8 minutes. Remove from the heat, stir in the thyme, and let cool to room temperature.

  • In a large measuring cup, whisk the cream and eggs with the pumpkin pie spice and a generous pinch of salt and pepper.
  • Fill each muffin cup with 1 teaspoon of the cooled leeks and top with 1 teaspoon of the cheese. Cover the filling with the egg and cream mixture. Place the muffin tins onto cookie sheets and put them into the oven. Bake until the egg mixture has set and the quiches are lightly browned, 10 to 15 minutes. Let cool for 10 minutes before turning them out onto a wire rack. Serve warm.

LEEK QUICHE

Leek Quiche image

We often have potluck breakfasts at my school. I came up with this leek quiche recipe so I could bring something different and filling to share. You can make it in the large pie version or in little tartlets. And if you want to make it vegetarian, just eliminate the sausage. —Kathryn Dampier, Quail Valley, California

BACON AND LEEK QUICHE

Bacon and Leek Quiche image

Make and share this Bacon and Leek Quiche recipe from Food.com.

Provided by Brookelynne26

Categories     Breakfast

Time 3h15m

Yield 2 10-inch tarts, 12 serving(s)

Number Of Ingredients 14

2 1/2 cups all purpose flour, plus more for dusting
1/2 teaspoon salt
3/4 cup cold unsalted butter, cubed
1 large egg yolk
1/4 cup ice water
3 tablespoons ice water
1 lb thickly sliced bacon, cut into 1/2-inch dice
3 large leeks, white and tender green parts only thinly sliced
1 teaspoon chopped thyme leaves
salt and freshly ground white pepper
8 ounces gruyere cheese, shredded
4 large eggs
2 large egg yolks
2 1/2 cups heavy cream (or half and half)

Steps:

  • Make the crust: In a food processor, pulse the 2 1/2 cups of flour with the salt. Add the butter and pulse until it is the size of small peas. Add the egg yolk and ice water and pulse until the pastry is moistened. Turn the pastry out onto a floured work surface and knead 2 or 3 times, just until smooth. Pat the pastry into 2 disks, wrap in plastic, and refrigerate until firm, about 20 minutes.
  • Preheat the oven to 375 degrees. On a floured surface, roll 1 disk of the pastry to a 12-inch round. Ease the pastry into a 10-inch fluted tart pan with a removable bottom without stretching. Trim the excess and use it to patch any holes. Refrigerate the tart shell for 10 minutes. Repeat with the remaining pastry.
  • Line the tart shells with foil and fill with pie weights or dried beans. Bake the tart shells for 30 minutes, just until dry. Remove the foil and pie weights and bake the crusts for about 15 minutes longer, until they are dry and golden. Transfer the tart pans to 2 sturdy baking sheets.
  • Meanwhile, make the filling: In a large skillet, cook the bacon over moderately high heat, stirring, until browned and crisp, about 7 minutes. Drain the bacon, leaving 1 tablespoon of the fat in the pan. Add the leeks and thyme to the skillet, season with salt and white pepper, and cook over moderate heat, stirring occasionally, until the leeks are softened but not browned, about 5 minutes. Transfer to a bowl and let cool. Stir in the bacon and cheese.
  • Divide the bacon and leek filling between the tart shells. In a bowl, whisk the eggs with the egg yolks and heavy cream. Season lightly with salt and white pepper. Pour the custard into the tart shells and bake for about 30 minutes, rotating the sheet halfway through for even baking, until puffed and lightly browned. Transfer the quiches to a rack and let cool for 15 minutes. Remove the rings, cut the quiches into wedges, and serve.
