I learned how to make this dish from a family friend's mother. It's a favorite hearty Lithuanian potato dish that's rich in tradition and taste. Make sure you have helpers while grating your potatoes so they will get done quickly and not turn brown! Sour cream is a traditional topping, but it's delicious as is. To re-heat, slice and fry in a pan with a little butter until golden brown on both sides.

1 pound bacon, chopped
1 onion, diced small
½ cup butter
5 pounds russet potatoes, finely grated
1 (12 ounce) can evaporated milk
6 large eggs
1 tablespoon farina (such as Cream of Wheat®)
1 teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
  • Cook and stir bacon, onion, and butter in a large skillet over medium heat until onions are translucent and bacon is cooked through but not crispy, 5 to 10 minutes; cool.
  • Place grated potatoes in a large bowl. Add bacon mixture, evaporated milk, eggs, farina, salt, and pepper to potatoes; stir to combine. Pour potato mixture into prepared baking dish.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake until top is golden brown, 1 hour.

1 large onion, grated
5 pounds Russet potatoes, finely grated, and soaked in water
½ cup flour
1 (12 ounce) can evaporated milk
6 eggs
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large skillet over medium heat, fry bacon pieces until crisp; remove to paper towels. Reserve half of bacon drippings, and set aside. Return skillet to stove; stir onions, and cook until soft and translucent.
  • In a large bowl, stir together reserved drippings, bacon, onion, and potatoes. Mix in flour, evaporated milk, and eggs. Season with salt and pepper to taste.
  • Pour into baking dish, and bake in a preheated oven until top is nicely brown, about 1 hour. Cut into squares, and serve with sour cream, if desired.

1 pound wide egg noodles
5 extra-large eggs
4 cups half-and-half
1/4 cup light brown sugar, packed
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
1 1/2 tablespoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup ricotta cheese
1 cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.
  • Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
  • In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.
  • Pour the noodle mixture into the baking dish. Place the filled dish in a larger pan and pour in enough hot water to come halfway up the sides. Cover the entire assembly with aluminum foil. Bake for 45 minutes, then remove the foil and bake for another 45 minutes, or until the custard is just set.

6 large idaho potatoes, peeled
2 large onions, 1 diced and one quartered
4 large eggs, lightly beaten
5 tablespoons oil
2 -3 teaspoons salt
fresh ground pepper
1/4 cup potato starch
1 cup boiling water
1/4 cup oil

Steps:

  • Preheat oven to 500 degrees.
  • Saute diced onion until nicely caramelized and golden.
  • While onion is caramelizing, grate potatoes using the fine (smallest holes) disc in the food processor.
  • Squeeze out liquid and place in a large mixing bowl.
  • Process onions (don't change the blade) and pour the onion pulp and juices into the bowl with the potatoes.
  • Stir in eggs, 5 tbsp. oil, salt, pepper and caramelized onions.
  • Sprinkle starch on top.
  • Pour boiling water over starch and stir thoroughly.
  • Pour 1/4 cup of oil into a 9x13 baking pan and heat in oven for about a minute. Do not allow oil to burn.
  • Carefully pour mixture into pan and bake for 20 minutes.
  • After 20 minutes, reduce heat to 400 degrees and bake for 40 minutes or until the top is a deep golden brown.

1 (16 ounce) package egg noodles
½ cup margarine
4 eggs, beaten
1 cup white sugar
1 ½ cups applesauce
1 teaspoon vanilla extract
ground cinnamon, for dusting

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, applesauce, and vanilla extract. Pour noodle mixture into a 9x13 inch baking pan, then sprinkle with cinnamon. Cover baking pan with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

¼ cup white sugar
⅓ cup graham cracker crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and stir in 6 tablespoons sliced butter.
