4 medium-sized whole squid, from sustainable sources, ask your fishmonger, cleaned and prepared, wings left on
1 tablespoon fennel seeds
sea salt
freshly ground black pepper
2 lemons, zest and juice of
extra virgin olive oil
2-3 red chillies, deseeded and sliced
1 handful of fresh mint, finely chopped
1 lemon, cut into wedges, to serve

Steps:

  • Turn the first squid upside down so that its wings are flat on your chopping board.
  • Push in a large knife and leave it inside flat on its side. With a sharp knife, slice the squid as if you were going to chop it into rings. The knife that is lying inside the body of the squid will prevent you from cutting right through it. You end up with a concertina effect with the squid sliced, but still holding together. Repeat with the other three.
  • In a pestle and mortar, bash the fennel seeds into a light powder with a good pinch of salt and pepper. Sprinkle this all over the squid, making sure it gets into all the cuts you've made.
  • Place immediately on the hottest part of the grill, and grill, turning every 30 seconds or so or every time it starts to char, until the squid firm up and turn from opaque to white inside. This shouldn't take more than a few minutes.
  • Add the lemon juice to a bowl with 3 times as much extra virgin olive oil and whisk together. Stir in the lemon zest, chilli, mint and a pinch of salt and pepper.
  • Drizzle this over the squid, then serve with lemon wedges on the side for squeezing over.

Sherry Marinade
1/4 cup olive oil
1/4 cup dry sherry
6 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon red pepper flakes
1 teaspoon paprika
1/2 teaspoon salt
1 1/2 to 2 pounds squid (or baby octopus), cleaned, long tentacles trimmed if desired
Extra-virgin olive oil
Chopped fresh flat-leaf parsley for garnish

Steps:

  • Method
  • 1. To make the marinade, whisk all the ingredients together in a large bowl. Add the squid, cover, and let marinate in the refrigerator for 3 to 4 hours.
  • 2. Prepare a hot fire in a grill. Oil a perforated grill rack or a cast-iron grill griddle and preheat on the grill.
  • 3. Remove the squid from the marinade. Place the squid on the prepared grill rack and grill for 4 minutes, turning once, or until the squid are almost opaque all the way through and have crisped around the ends and tentacles. Do not overcook or they will become rubbery.
  • 4. To serve, arrange on a platter, drizzle with olive oil, and scatter with parsley.

500 g cleaned squid
1 tablespoon salt
1/2 cup coriander leaves
7 tablespoons fish sauce, dip
1 pinch pepper
2 garlic cloves, crushed
2 tablespoons peanut oil
1 teaspoon five-spice powder
1 teaspoon curry powder
1 tablespoon finely chopped lemongrass
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon lime juice
1 teaspoon sugar

Steps:

  • Rub the squid with salt and rinse.
  • Slit and flatten the squid sac and make diagonal cuts on the inside surface.
  • Cut into bite-sized pieces.
  • Set aside in a bowl.
  • In another bowl, mix all the ingreduents, EXCEPT THE FIRST FOUR INGREDIENTS, making the marinade. Mix for thirty seconds.
  • Put the squid inside the bowl with the marinade and leave for 1 hour.
  • When one hour is finished, grill the squid over a charcoal grill until just tender (about three minutes each side).
  • Arrange on a serving platter and garnish with half-a-cup of coriander leaves.
  • Serve with fish sauce dip.

As if grilled squid that's tender in the middle and charred on the exterior weren't good enough, we're pairing it with smoky bell peppers and a lemony herb salad.

1/3 cup coarsely chopped blanched hazelnuts or almonds
2 Tbsp. plus 1/2 cup extra-virgin olive oil, divided
Kosher salt
4 large red bell peppers
2 Tbsp. sherry vinegar or red wine vinegar
1 tsp. hot smoked Spanish paprika
3 garlic cloves, divided
1 1/2 lb. cleaned squid, bodies and tentacles separated
1/2 small red onion, very thinly sliced
1 cup mint leaves, torn if large
1/2 lemon

Steps:

  • Preheat oven to 350°F. Toast hazelnuts on a rimmed baking sheet, tossing once, until golden brown, 7-10 minutes. Let cool, then crush nuts using the side of a chef's knife or coarsely chop. Transfer to a small bowl. Mix in 2 Tbsp. oil and season with salt. Set aside.
  • Prepare a grill for high heat and place a wire rack on one side, orienting it perpendicular to grill grate. Place bell peppers directly on grate (not on wire rack) and grill, turning occasionally, until charred all over and flesh is very soft, 8-10 minutes.
  • Transfer bell peppers to a medium bowl and cover tightly with plastic wrap. Let sit 10-20 minutes (doing this extends the cooking and softens the skins). Remove skins from peppers and scoop out seeds; discard. Tear or slice peppers into large pieces and place in a clean medium bowl. Add vinegar, paprika, and 1/4 cup oil and finely grate 1 garlic clove into bowl. Season with salt and toss well to coat peppers.
  • Return grill to high heat. Finely grate remaining 2 garlic cloves into a large bowl; stir in remaining 1/4 cup oil. Pat squid dry, then add to oil mixture; toss well to coat. Working in batches, grill squid on wire rack on grill until marks appear on bodies and tentacles begin to crisp around the edges, 45-60 seconds per side. Transfer to a clean large bowl and season with salt.
  • Place onion and mint in a small bowl. Finely grate zest from lemon half over, then squeeze in juice. Season with salt and toss to combine.
  • Divide marinated peppers and squid among plates. Spoon hazelnuts over and top with mint salad.

3/4 cup sliced onions
3 tablespoons sliced garlic
1/2 cup dry sherry
12 ounces squid, cut into thin rings
3 teaspoons chopped parsley leaves
1 1/2 teaspoons chopped fresh oregano leaves
1 1/2 teaspoons lemon juice
3/4 teaspoon salt
1/4 teaspoon plus a pinch black pepper
1/4 teaspoon pimento

Steps:

  • In a large saute pan over medium heat, add the olive oil and onions. Cook until the onions are beginning to caramelize, 3 to 4 minutes, then add the garlic and cook for 2 minutes longer. Add the sherry and reduce for 2 minutes. Add the squid, parsley, oregano, lemon juice, salt, pepper, and pimento. Cook until the squid is tender, 5 to 6 minutes.

Steps:

  • Preheat a grill to medium heat.
  • Pull away the squids head, using scissors, slice it open and carefully remove the ink sac, guts, and cartilage. Pat both sides dry with kitchen paper towel or tea towel and set aside.
  • Pound the chiles in a mortar and pestle.
  • Mix 2 teaspoons salt and the pounded chiles together, then coat both sides of the squid evenly with the mixture.
  • Place the squid on the grill or in a grilling basket and char grill the squid for 3 minutes on each side or until brown.
  • For the salt and pepper lemon sauce: In a dipping bowl, add the lemon juice, sea salt, and pepper and mix well. Cut the squid into bite-sized pieces and dip into the salt and pepper lemon sauce.

1 1/2 lbs mushrooms, wiped clean and trimmed

Steps:

  • Combine everything except the mushrooms in a large bowl.
  • Add mushrooms and toss to coat.
  • Cover and marinate at room temperature until most of the marinade has been absorbed (about 1 hour).
  • Prepare a medium-hot fire in grill with a lightly oiled vegetable grill rack in place.
  • Grill mushrooms, tossing frequently, until well browned, tender and still juicy (about 10 minutes).
  • Place mushrooms in a bowl and season with more salt and pepper to taste.
  • Serve immediately.
  • Variation:.
  • After marinating, thread mushrooms onto bamboo skewers that have been soaked in water for a minimum of 30 minutes and grill.
  • Makes a great appetizer.
