Chai Tea Cake with Ginger Cream Cheese Frosting image

A beautifully fragrant spice cake flavored with classic masala chai spices and topped with fresh ginger cream cheese frosting. This cake is sure to make your mouth water and is always a great crowd pleaser!

2 cups water
3 teabag (blank)s tea bags of strong black tea
1 (1/2 inch) piece fresh ginger root, peeled
3 whole cardamom pods, or more to taste
1 ¼ teaspoons ground cinnamon, divided
¾ teaspoon ground cloves, divided
½ cup white sugar
½ cup unsalted butter, at room temperature
1 cup molasses
1 large egg
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon ground cardamom
1 teaspoon ground ginger
½ teaspoon salt
1 cup water
1 cup white sugar
2 teabag (blank)s tea bags of strong black tea
1 (8 ounce) package cream cheese, at room temperature
6 tablespoons unsalted butter, at room temperature
3 teaspoons minced fresh ginger
2 cups confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Begin cake by combining water, 3 tea bags, ginger root, cardamom pods, 1/4 teaspoon cinnamon, and 1/4 teaspoon cloves in a saucepan; bring to a boil. Reduce heat to low and keep warm.
  • Combine sugar and butter in a large bowl; beat with an electric mixer until light and fluffy. Add molasses and egg; mix well.
  • Mix flour, baking soda, cardamom, and salt with remaining 1 teaspoon cinnamon and 1/2 teaspoon cloves in a separate bowl. Add dry ingredients to the wet ingredients, one half at a time; stir to combine. Strain hot tea and slowly pour into the batter and stir until smooth; batter will be thin. Pour into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • While the cakes are cooling, combine water, sugar, and tea bags for simple syrup in a small pot over medium-high heat. Cook until sugar has dissolved, 5 to 7 minutes. Remove from the heat and let cool slightly.
  • Brush simple syrup over cooled and leveled cakes until the majority of the cake has absorbed the syrup. Do not oversoak the cakes; you want enough syrup to soak in and keep cakes moist and flavorful without flooding them. Place cakes in the refrigerator for 1 hour or until ready to decorate.
  • Combine cream cheese, butter, and ginger for frosting in a large bowl; beat with an electric mixer until smooth. Add sugar and blend until smooth. Frost cake.

4 whole cloves
2 whole peppercorns
4 tea bags
4 teaspoons sugar
1/4 teaspoon ground ginger
1 cinnamon stick (3 inches)
2-1/2 cups boiling water
2 cups 2% milk

Steps:

  • Place cloves and peppercorns in a large bowl; with the end of a wooden spoon handle, crush spices until aromas are released., Add the tea bags, sugar, ginger, cinnamon stick and boiling water. Cover and steep for 6 minutes. Meanwhile, in a small saucepan, heat the milk., Strain tea, discarding spices and tea bags. Stir in hot milk. Pour into mugs.

SUGAR COOKIE DOUGH
3/4 c shortening
1 1/2 c sugar
2 eggs
1/2 tsp orange extract
3 c self-rising flour *** see note below
1 chai tea bag
2 Tbsp eggnog
1 Tbsp ground cinnamon
2 Tbsp sugar
EGGNOG FROSTING
1 c powdered sugar
2 Tbsp egg nog
1/2 tsp ground nutmeg
NOTE REGARDING SELF-RISING FLOUR - SUBSTITUTION
if you do not have self-rising flour for the cookie dough, for each cup needed, put 1 1/2 teaspoons baking powder into a 1 cup measuring cup and add all-purpose flour to make a total of 1 cup ingredient.

Steps:

  • 1. Preheat oven to 350. Make cookie dough by creaming shortening and sugar together. Add eggs. eggnog and extract, combining well. Cut tea bag and pour tea leaves into batter, mixing well. Combine in flour.
  • 2. Drop dough onto cookie sheet. Combine cinnamon and sugar; dip bottom of a glass into the cinnamon-sugar mix and then gently press down on the cookie ball to flaten slightly. Bake for 8 - 10 minutes or until lightly browned. Cool for about 2-3 minutes on cookie sheet and move to cooling rack to cool completely.
  • 3. Make glaze by whisking all glaze ingredients. Spread on cooled cookies.

30 mini cupcake liners
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup instant chai tea mix
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (1 stick)
3/4 cup sugar
2 large eggs
1/3 cup milk
1/2 teaspoon vanilla
3/4 cup softened cream cheese, from the tub
1/4 cup instant chai tea mix
1/4 cup powdered sugar
cocoa or powdered sugar, to garnish

Steps:

  • Preheat oven to 350 degrees.
  • Line mini muffin pans with liners.
  • Combine flour, chai mix, cocoa, baking powder and salt and whisk together.
  • In a large mixing bowl, combine butter and sugar and cream together (approx 3 minutes).
  • Add eggs one at a time and beat well.
  • Add vanilla.
  • On low speed, alternate adding flour and milk into the creamed butter mixture and beat.
  • Fill cupcake cups with batter 3/4 full.
  • Bake for approximately 15 minutes or until done.
  • Let cakes cool completely.
  • Combine all the ingredients and mix until smooth.
  • Refridgerate until cakes have cooled.
  • Frost cakes.
  • Sprinkle cocoa powder or powdered sugar on top frosting as a garnish.
  • *TIP--To make it easier to fill mini cupcakes holders, place batter in a large plastic ziplock bag, snip off a bit on the corner.
