MAMAW'S CHICKEN AND RICE CASSEROLE
I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease sides and bottom of a casserole dish.
- Stir chicken, water, rice, cream of chicken soup, cream of celery soup, and cream of mushroom soup together in the prepared casserole dish; season with salt and pepper. Arrange butter evenly over the top of the chicken mixture.
- Bake in preheated oven until the rice is tender and the chicken is cooked through, 1 hour to 75 minutes. Cool 15 minutes before serving.

- Preheat oven to 350 degrees. Spray 9x13 pan with cooking spray. Layer rice, 1 cup cheese, salt ,and pepper in pan.
- Place chicken breasts on top. Dob rounded teaspoons of cream of chicken soup over the chicken breasts and rice. Pour water on top and sprinkle with onion soup mix.
- Bake uncovered for 1 hour.
- Remove from oven, and stir excess sauce into the rice. Sprinkle with remaining 1/2 cup cheese.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Bring rice and 1 1/4 cup chicken broth to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
- Heat olive oil in a saucepan over medium heat. Cook and stir mushrooms and onion in hot oil until mushrooms are soft and onion is translucent, 5 to 7 minutes. Stir chicken, chicken soup, sour cream, milk, 1/2 cup chicken broth, seasoned salt, and black pepper into the mushroom mixture. Reduce heat to low. GRANDMA'S CHICKEN AND RICE CASSEROLE
Steps:
- In a skillet over medium heat, cook onion and celery in the butter until tender; do not brown.
- Once the onion and celery are cooked, mix all ingredients together except cornflakes. Be sure to use cooked chicken and cooked rice!
- Pour into a 2-quart baking dish that has been sprayed with non-stick cooking spray.
- Sprinkle crushed cornflakes over top.
- Bake at 375 degrees F for 30 minutes.

My mom has made this casserole since I was a kid. It is simple,comfort food to me. Cooking for my kids, I often leave out the pimento and the almonds. For added favor I cook the rice is chicken broth. I always double the recipe and put one, uncooked, in a foil pan in the freezer. This is a nice casserole to take to someone that has just had a new baby.

Steps:
- Melt the butter in a large sauce pan, wisk in the flour, salt and pepper. Over low heat, whisk constantly until flour/butter mixture turns golden and bubbling.
- Add the milk and chicken broth. Whisk in well.
- Bring to a boil. Continue to whisk or stir until it has been at a bubbling, low boil for one minute or so.
- Remove from heat, add the other ingredients and mix well.
- Taste for seasoning, add salt and pepper as needed.
- Spoon into an ungreased, 8x11-inch or 2 quart Pyrex casserole dish. Do not cover.

CHICKEN & RICE CASSEROLE
I got this off a jar of Heinz Gravy. I wasn't too sure about making this at first as I always used creamed soups for a recipe like this but decided to give it a shot. Glad I did. It was really good and even better the next day. I used some left over frozen turkey I had and a jar of turkey gravy instead of what is called for. I also chopped the broccoli into smaller pieces after it was cooked as I don't like large pieces of broccoli. This is one of those "what can I have for supper tonight". A real comfort food.

- Set a large 7-8 quart dutch oven on the stovetop, over medium heat. Add the oil. Salt and pepper the chicken pieces liberally. Then place them skin-side-down in the pot. - Cover the pot with a heavy lid and bring to a boil. Once the water is boiling, turn the heat down to low and simmer for 15-20 minutes, until the rice is fully cooked. There should be pores at the top of the rice and no liquid is present.
