Steps:
- Peel potatoes and chop into medium sized chunks.
- Cover with water in large pot and boil until pieces are easily pierced with a fork.
- While sweet potatoes cook, toast pecans on rimmed cookie sheet.
- Remove sweet potatoes from water, add buttermilk, butter, and spices, and mash together.
- With hand mixer or immersion blender, whip potatoes until smooth.
- Transfer potatoes to serving dish and top with chopped pecans.
- Serve immediately, or keep warm, uncovered, in a 200° F oven.

- Preheat oven to 400 degrees.
- Combine potatoes, lemon juice, brown sugar and cloves.
- Drain peach halves and arrange in baking dish.
- Fill centers with sweet potatoes.
- Bake for 20 minutes.
CURRY-SPICED SWEET POTATOES
I found this in this month's Cooking Light, (March 2008). In the magazine picture it looked like yams instead of sweet potatoes, and since I had those on hand, that's what I used. Also, I replaced the half-and-half with about 1/3 cup of my Fat Free Coconut Milk (For Recipes), Recipe #187372. We enjoyed this recipe with chicken, but it will compliment other meats as well. Very tasty! (I couldn't get the amount through Zaar, so the sweet potatoes are about 2 pounds.)

- Place potato in a medium saucepan; cover with water. Bring to a boil. Reduce heat, and simmer 15 minutes or until tender. Drain well; return to pan. Keep warm.
- Melt butter in a small nonstick skillet over medium heat. Add shallots to pan; cook 6 minutes or until tender, stirring occasionally. Stir in brown sugar, salt, curry powder, cumin, cinnamon, and red pepper; cook 1 minute, stirring constantly. Add shallot mixture, half-and-half, and lemon juice to potato. Mash potato mixture with a potato masher to desired consistency.

- Bake sweet potatoes in a 400 degree oven until they can be pierced with a fork.
- Cool, peel, and cut into 1-inch pieces.
- Place cooked potatoes in a 2-qt covered baking dish.
- Combine orange juice concentr ate, butter, brown sugar, and spices in a small saucepan.
- Cook over medium-low heat until sugar and butter are melted; pour over potatoes.
- Bake covered at 350 F for about 30 minutes.
- Remove cover and bake another 10 minutes.

- Peel the sweet potatoes and cut crossways into slices 2.5cm thick. Lay each potato on a large sheet of foil, keeping the slices together.
- Drizzle each potato with the olive oil, sprinkle with the thyme leaves, about half of the chopped chilli and season with plenty of salt and pepper. With your hands, massage the flavourings into each slice. Replace the slices in their original positions. Lay a thyme sprig across the top of each potato and sprinkle with the remaining chilli. Wrap the foil securely round the potatoes to make two parcels. (You can prepare to this stage up to 24 hours ahead.)
- Put the foil parcels on the rack over the hottest part of the barbecue and cook for 45 minutes until the potatoes are buttery and softened. (Unwrap and test with the point of a knife to check if they're ready).
