This chai spiced apple cider calls for nothing more than apple cider, your favorite chai tea, and a cinnamon stick. Quick liquid comfort.

1 cup apple cider
1/2 to 3/4 cup water (depending on how sweet or spicy you like your apple cider )
1 chai tea tea bag (regular or decaf if sipping at night)
1/2 cinnamon stick (about 2 inches/50 mm long)

Steps:

  • Dump all the ingredients in a small saucepan and bring to a gentle boil. As soon as the cider starts to boil, reduce the heat to low and let everything warm for 5 minutes.
  • Remove the pan from the heat, discard the cinnamon stick and tea bag, and pour the chai apple cider into a mug. Sigh deeply.

6 slices (each 1/8 inch thick) unpeeled fresh ginger

Steps:

  • Combine all ingredients in a saucepan; bring to a boil, then reduce to a simmer and cook 10 minutes. Remove from heat. Let stand, covered, 1 hour, or for more flavor, refrigerate up to overnight. Strain. Reheat before serving.

1 whole star anise
2 cinnamon sticks
3 whole cloves
10 cardamom pods
1 piece (about 2 inches) fresh ginger, washed and thinly sliced, plus 8 paper-thin slices for garnish
3/4 cup pure maple syrup
1 quart apple cider
1 to 2 cups seltzer

Steps:

  • Bring spices, ginger, syrup, and 1/2 cup water to a boil in a small saucepan. Reduce heat to medium-low, and simmer 2 minutes. Let stand at room temperature 1 hour. Strain, and discard solids.
  • Stir together spiced syrup and apple cider in a pitcher, and refrigerate until cold. Pour 1/2 cup spiced cider into each of eight glasses, and top with seltzer. Garnish each glass with ginger.

  • Preheat oven to 400°. Combine milk, eggs, 6 tbsp butter, vanilla, flour, 2 tsp sugar, and salt in a small bowl and whisk until smooth.
  • Melt 4 tbsp butter in a large skillet. Add apples, 1⁄2 cup sugar, RawSpiceBar's Peppercorn Chai and brandy. Cook until apples are glazed, about 5 minutes.

1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter
3/4 cup chopped white onion
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon ground ginger
1/8 teaspoon ground cardamom
3 cups butternut squash, cut in 1-inch cubes
3/4 cup chopped fennel
3 1/2 cups chicken broth
1 cup apple cider
1/2 cup whole milk
1/2 teaspoon salt

Steps:

  • First, make the apple cream: combine the crème fraiche, apple cider and cinnamon in a small bowl.
  • Cover and refrigerate to allow the flavors to combine.
  • Melt the butter in a large soup pot over medium-high heat.
  • Add the onions and cook, stirring frequently, until translucent, about 6 minutes. Stir in cloves, nutmeg, cinnamon, allspice, ginger and cardamom.
  • Cook until fragrant, stirring constantly, about 1 minute. Stir in butternut squash, fennel, chicken stock and apple cider.
  • Cover, reduce heat to medium and cook until the butternut squash is tender, about 15 minutes. Take from heat and let cool.
  • Blend the soup in small batches until a smooth puree is obtained. Return to pot and stir in milk and salt.
  • Bring soup to a simmer. Taste and adjust seasoning, adding more spice if desired. Serve soup with a generous drizzle of apple cream.
