HOT PEPPER JELLY

This is my signature jelly. I make it for everyone and every occasion. I have even made some and tinted purple for Dreamgoddess' daughters wedding. It is very easy and can be made as hot or as mild as you want. For really hot I use 4 habarnero peppers, for milder, use in the amount called for in recipe using your preference in peppers. I just throw the peppers in the blender in large chunks with the vinegar and let the blender to the chopping for me.

Number Of Ingredients 6

2/3 cup hot pepper (this amount can vary according to what type of peppers used and how hot you want your jelly)
1 bell pepper
1 1/2 cups white vinegar
6 cups sugar
8 ounces liquid Certo (2 packets)
1 teaspoon food coloring (red or green I use red for hotter jelly-green for milder jelly)

Steps:

  • Chop peppers and put in blender with vinegar.
  • Blend well and pour into large boiler.
  • Add sugar and mix well.
  • Bring mixture to a rolling boil and boil for 1 minute.
  • Remove from heat, strain through sieve and return liquid back to a boil.
  • Boil for 5 minutes.
  • Remove from heat.
  • Add Certo and food coloring quickly.
  • Put into 6 (1/2 pint) jars and seal.
  • I use heated seal method, where I heat the lids in boiling water, place on jar, secure ring tightly and turn jar upside down for 5 minutes.
  • Turn jar up correctly and allow to cool completely before storing.
  • Newer studies show that it is safer to seal with the hot water bath method. To do this, put into a large boiler with rack on bottom, cover with 1-2 inches of water and boil for 5 minutes. Remove to rack to cool.

2 cups ground sweet red peppers (about 3 large peppers)
5 1/2 cups sugar
1 cup distilled vinegar
1/3 cup lemon juice
1 bottle liquid pectin

Steps:

  • Place red peppers, sugar and vinegar in kettle; heat rapidly to boiling, stirring continuously.
  • Remove from heat, let stand 15 minutes.
  • Reheat to boiling, add lemon juice.
  • Let it come to a boil, then add the pectin.
  • Boil for 5 minutes, stirring constantly.
  • Bottle as any jelly.

500 g red bell peppers ((2 medium / 1 pound))
850 ml cranberry juice ((red, sugar-free. 3 1/2 cups / 28 oz))
1 teaspoon chile flakes
4 tablespoons white balsamic vinegar
1 box Ball / Bernardin No-Sugar Needed Pectin ((49 g / 57 g / 1.75 oz) )
1/2 teaspoon butter ((or margarine. Optional, to reduce foaming.))
1/4 teaspoon cardamom ((ground. Optional, flavouring))
350 g sugar ((white. 1 1/2 cups / 12 oz))

Steps:

  • Line a sieve with cheese cloth, put over a large measuring jug or a saucepan, and set aside OR get a jelly bag ready.
  • Core and seed the red peppers, cut into large chunks, put into food processor along with 100 ml (1/2 cup / 4 oz ) of the cranberry juice and using the pulse button, whiz into fine chunks, but not into a paste or purée.
  • Empty the food processor contents into a medium-sized saucepan. Add the remaining juice (that's 775 ml / 3 cups / 24 oz, if you are tracking the math ) and the teaspoon of red pepper flakes. Bring to a rolling boil.
  • Remove from burner immediately.
  • Pour into jelly-bag or cheesecloth-lined sieve from step 1. Let stand for 1 to 2 hours.
  • Discard contents of the sieve.
  • From the jug or saucepan, measure out 1 litre (4 cups) of liquid.
  • Put liquid into another saucepan. Whisk in the cardamom (if using), the pectin, and the vinegar.
  • Return the saucepan to the burner. Add the margarine if using.
  • If using STEVIA: Bring to a full rolling boil over the heat and when it reaches that point, start timing 1 minute. Remove from heat. Add stevia to taste.
  • If using SPLENDA or SUGAR: Bring to a full rolling boil over the heat and when it reaches that point, start timing 1 minute. Add in Splenda, bring back to a boil that you can't stir down, and boil for 1 minute after that point. Remove from heat.
  • Add a few drops of red food colouring if desired for a deeper glowing colour (if you use red cranberry juice, you probably don't need it.)
  • Ladle into either 125 ml (1/2 cup) or quarter-litre (1/2 US pint) jars.
  • Leave 1 cm (1/4 inch) headspace.
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process either size jar for 10 minutes; increase time as needed for your altitude.

1 1/2 lb red bell peppers (about 3), cut into 1-inch pieces (6 cups)
2 teaspoons dried hot red-pepper flakes
3 tablespoons Sure-Jell less- or no-sugar-needed pectin (from a 1 3/4-oz box)
3 1/4 cups sugar
1 cup white-wine vinegar
1 tablespoon unsalted butter
3/4 teaspoon salt
Special Equipment
5 (1/2-pint) canning jars with screw bands and lids; an instant-read or candy thermometer; canning tongs

Steps:

  • Sterilize jars and lids:
  • Wash jars, lids, and screw bands in hot, soapy water, then rinse well. Dry screw bands. Put empty jars on a rack in a boiling-water canner or a deep 8- to 10-quart pot and add enough hot water to cover by 2 inches. Bring to a boil, covered, then boil 10 minutes. Remove canner from heat, leaving jars in water, covered. Heat lids in water to cover by 2 inches in a small saucepan until thermometer registers 180°F (do not let boil). Remove from heat. Keep jars and lids submerged in hot water, covered, until ready to use.
  • Make jelly:
  • Pulse bell peppers with red-pepper flakes in a food processor until finely chopped. (Mixture will measure about 2 1/2 cups.)
  • Whisk together pectin and 1/4 cup sugar in a small bowl.
  • Stir together pepper mixture, vinegar, butter, salt, and remaining 3 cups sugar in a 5- to 6-quart heavy pot. Bring to a vigorous boil over high heat, then continue to boil vigorously, stirring occasionally, 5 minutes. Gradually add pectin mixture, whisking constantly. Return jelly to a vigorous boil, stirring constantly, and boil, stirring constantly, 1 to 2 minutes (mixture will thicken slightly). Remove from heat.
  • Carefully remove jars and lids with canning tongs, then drain jars upside down on a clean kitchen towel and quickly dry lids. Invert jars and immediately ladle hot jelly into jars, leaving 1/4 inch of space at top. (Last jar may not be full.) Run a clean plastic spatula between jelly and sides of jars to eliminate air bubbles. Wipe off rims of filled jars with a damp clean kitchen towel, then firmly screw on lids with screw bands.
  • Seal and process jars:
  • Put sealed jars on rack in canner or pot and add enough hot water to cover by 2 inches. (If you have a jar that is partially full, do not process it. Cover it with a lid and screw band, then keep in refrigerator.) Bring to a full boil, covered, then boil jelly, covered, 15 minutes. Transfer jars with canning tongs to a towel-lined surface to cool. Jars will seal; if you hear a ping, that means that the vacuum formed above the cooling jelly has made the lid concave. Remember that you may or may not be around to hear the ping. The important thing is for the jars to eventually have concave lids. Jelly will thicken as it cools.
  • After jars have cooled, 12 to 24 hours, press center of each lid to check that it's concave, then remove screw band and try to lift lid with your fingertips. If you can't, the lid has a good seal. Replace screw band. Put any jars that haven't sealed properly in the refrigerator and use them first (along with jar that was only partially full).

3 cups prepared peppers (buy 2 large red bell peppers, 1 large green bell pepper and 4 large jalapeno or serrano peppers)
1/2 of a small onion, finely chopped
2 tsp. salt, divided
1-1/2 cups HEINZ Red Wine Vinegar
1/2 cup fresh lemon juice
1/2 tsp. chili powder
1/2 tsp. crushed red pepper
5 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine
2 pouches CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Stem and halve all peppers; discard seeds. Finely chop peppers. Measure exactly 3 cups chopped peppers into colander. Add onion and 1 tsp. of the salt; let stand in colander 3 hours, pressing occasionally with back of spoon to extract as much moisture as possible. Place pepper mixture in 6- or 8-qt. saucepot. Add vinegar, lemon juice, remaining 1 tsp. salt and the spices; mix well.
  • Stir sugar into prepared peppers in saucepot. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Reduce heat to medium low; simmer 10 min., stirring occasionally.
  • Stir in pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Stir in cumin seeds. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min.. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. No Fail Red Pepper Jelly Recipe image

This no-fail red pepper jelly is super easy and has the perfect consistency for glazes, sauces, and yes...thumbprint cookies (my favorite).

1 pound red jalapeño red peppers
1 1/2 cups cider vinegar
6 cups sugar
1 Tablespoon butter
3 ounces liquid pectin (one packet)
pinch of Kosher salt

Steps:

  • Remove stems from all the peppers. Cut half of the peppers in half and remove the seeds by scraping them out with a small spoon. Place the peppers into a food processor and pulse 7 to 8 times to roughly chop peppers.
  • Transfer peppers to a large pot and add the vinegar. Bring mixture to a boil then lower to a simmer for about 20 minutes.
  • Add sugar to the pepper mixture and bring to a boil. When it reaches a rolling boil, allow to continue boiling for 1 minute. Add butter to keep the mixture from foaming. Add liquid pectin and stir to mix. Allow mixture to boil for 3 minutes and remove from heat.
  • Ladle mixture into sterile jars leaving 1/4 inch headspace. Place hot lids on the jars and screw rims firmly. Proceed canning in a hot water bath for 10 minutes. Refrigerate after opening.

JALAPENO JELLY

1 large red bell pepper
1 large green bell pepper
10 jalapenos (see note)
1 1/2 cups white vinegar
1/2 teaspoon salt
5-6 cups granulated sugar (see note)
3- ounce pouch liquid fruit pectin (like Certo)

Steps:

  • Finely chop the bell peppers and jalapenos in a food processor fitted with a fine shredding blade (if you don't have a food processor, no worries, grab a knife and get started chopping up those peppers into little tiny pieces). Update: to minimize jelly potentially not setting up, drain any extra liquid from the peppers before step #2.
  • Add the peppers to a large pot (the jelly will foam when it first comes to a boil so use a pot at least 5-6 quarts for a single batch and larger if doubling the batch).
  • Stir in the vinegar, salt and sugar. Bring the mixture to a boil for 10 minutes, stirring often.
  • Add the liquid pectin and boil for 1 more minute.
  • Remove the pot from the heat. Pour the jelly to within 1/4-inch of the top of clean, warm canning jars. Wipe the rim of the jar with a damp rag. Place a lid and ring on each jar and process in a water bath canner for 10 minutes (you may need to add additional time if you live above sea level; the pectin box/info should give details).
  • Once removed from the water bath canner, let the jelly rest for 1-2 days to let it fully set up.

1 cup prepared green peppers and 1 cup prepared pepper juice (from 4 tor 5 large green bell peppers)
7 cups sugar, measured into separate bowl
1-1/4 cups HEINZ Apple Cider Vinegar, divided
1 tsp. butter or margarine, divided
2 pouches CERTO Fruit Pectin
2 drops green food coloring

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • To make the relish:
  • Cut peppers in half and discard seeds. Put through food chopper twice, using finest blade. Drain peppers, reserving exactly 1 cup of the prepared juice; pour juice into 6- or 8-qt. saucepot. Set aside to use when preparing the jelly. Measure exactly 1 cup of the drained prepared peppers into separate 6- or 8-qt. saucepot.
  • Stir 3-1/2 cups of the sugar and 3/4 cup vinegar into peppers in saucepot. Add 1/2 tsp. of the butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in 1 pouch of the pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. 3 cups finely chopped red bell pepper
1 cup finely chopped green bell pepper
1/4 cup finely chopped jalapeño pepper
1 cup apple cider vinegar
1 1/2 (1.75 ounce each) packages SURE-JELL powder pectin* ((This means one full package plus one half pacakge of pectin.) )
5 cups white sugar
8 ounces cream cheese
1 box crackers

Steps:

  • Begin by sterilizing six 8-ounce canning jars and lids according to the manufacturer's instructions. Begin heating your water in a hot water canner for processing.
  • Place the red bell peppers, green bell peppers, and jalapeño peppers into a large saucepan over high heat. Mix in the apple cider vinegar and Sure-Jell pectin. Bring the mixture to a rolling boil while stirring constantly. Then, quickly stir in the sugar. Return to a rolling boil and boil for 2-3 minutes. Remove from the heat and skim off any foam.
  • Then, quickly ladle the jelly into your prepared jars, filling each to 1/4 inch from the top. Cover with flat lids; then screw on the bands tightly.
  • Place the jars into the canning rack, and slowly lower the jars into the canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil and process for five minutes.
  • Remove the jars and allow them to cool completely.
  • To serve the Red Pepper Jelly Appetizer Simply, place the block of Cream Cheese on a plate. Then, spoon the red pepper jelly on top of the cream cheese. Serve with crackers.

3 large red bell peppers (stems and seeds removed, coarsely chopped (see note 1))
2 habañero chilies (stems removed, seeded and reserved, and coarsely chopped (see note 2))
5 cups granulated sugar
2 cups white vinegar ((distilled))
1 (3-ounce) envelope liquid pectin ((see note 3))

Steps:

  • In a food processor, pulse bell peppers, habañeros and habañero seeds (if desired) until finely minced, about 12 to 15 pulses. On a clean kitchen towel or cheesecloth over a bowl, transfer pepper mixture and squeeze to remove excess liquid.
  • In a dutch oven over medium heat, combine pepper mixture, sugar, and vinegar. Bring to a vigorous boil. Add pectin and return to vigorous boil and stir frequently until temperature reads 221 degrees, about 10 to 15 minutes. Skim foam from jelly using a large spoon (see note 5).
  • Transfer mixture to clean jars with tight-fitting lids. Allow to cool, uncovered, to room temperature then cover and refrigerate. Allow jelly to set, about 12 to 24 hours. Jelly can be refrigerated for up to 2 months (or see note 6 for canning instructions).

3 Red Peppers
5 cups Sugar
2 cups Vinegar
1 3 oz. Liquid Pectin
2-4 oz. Chili Peppers

Steps:

  • Wash off the three peppers. Cut the tops off of the peppers and remove the stems, seeds and ribs.
  • Slice the peppers into strips and then dice them. Place the diced peppers in a food processor and pulse for around a minute or until they are in small little pieces.
  • Transfer the peppers into a cheese cloth over a bowl. Add in the 2-4 oz. canned chili peppers. Remove the liquid from the peppers by squeezing the cheese cloth. Throw away the liquid and set the drained peppers aside.
  • Place 2 cups vinegar and 5 cups sugar in a large pot on medium heat. Add the drained peppers and stir.
  • Once the mixture is boiling add the liquid pectin. Continue to stir for about 10-15 until the mixture reaches 220 degrees.
  • Pour jelly into canning jars and let sit until they reach room temperature. Place in fridge and allow to cool for 24 hours. Serve over cream cheese with crackers. Jelly will last about 3 months in fridge.
