SUGAR FREE OATMEAL COOKIES

Vegan and gluten free Sugar Free Oatmeal Cookies prove that it is possible to avoid sugar and still bake cookies! A healthy treat made with wholesome oats, flaxseed, bananas, coconut oil and dried fruit with no wheat flour or added sugar in sight.

3 tbsp flaxseed (ground)
9 tbsp water
2 large over ripen bananas
1/2 cup coconut oil (melted)
1 tsp pure vanilla extract
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 3/4 cups rolled oats
1/2 cup oat flour
1 cup mixed nuts & seeds (chopped, if too large)
10 Medjool pitted chopped dates or 1 cup raisins
Cooking spray (I use Misto)

Steps:

  • In a small bowl, whisk flaxseed and water. Let sit for about 10 minutes while you are getting other ingredients ready.
  • Preheat oven to 350 degrees F, line large baking sheet with unbleached parchment paper and spray with cooking spray.
  • In a large bowl, mash bananas. Add coconut oil, vanilla extract, cinnamon, baking soda and salt.
  • Add flaxseed mixture and whisk really well.
  • Add oats and oat flour; stir to combine. Add nuts and dried fruit; mix well. Dough will be very thick.
  • Using large ice cream scoop, place batter on previously prepared sheet and flatten with the back of a scoop into large size cookies. Cookies do not spread. I had about 6 cookies per sheet. Bake in batches for 20 minutes or until nuts start to brown a bit.
  • Remove from the oven and let cookies cool for a minute, then transfer onto a cooling rack to cool off completely. Enjoy for breakfast, snack or a healthy dessert!

Steps:

  • Stir oats, bananas, applesauce, raisins, almond milk, vanilla extract, and cinnamon together in a bowl until evenly mixed; drop by the spoonful onto a baking sheet.

1 tablespoon vanilla (Mix well, add)
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 tablespoons brown Sugar Twin
1/2 cup Splenda granular
1 1/2 cups whole wheat flour (Mix well, add)
1 cup craisins
2 cups walnut halves
5 cups old-fashioned oatmeal

Steps:

  • I use a 1/2 cup measuring cup (rounded) to measure Splenda, flour, Craisins, walnuts and oatmeal. Mix until dough is correct, medium consistency...... add more applesauce if necessary......... keep scraping dough from sides of bowl down into mixer...... scoop out onto oiled cookie sheets with cookie scoop ......... flatten with fork dipped in water......... bake at 350 degrees for 28 minutes or until golden brown..........

This is a recipe I created for a child who can't have dairy, eggs, gluten, corn or sugar. I modified another recipe on this site and it worked out great. I was going to just note my changes in my review of that recipe (Healthy Honey Oatmeal Cookies) but there were so many, I thought it would be easier for people searching for an allergy-free recipe to find it here. NOTE: These bake up soft n puffy, but if you want them flatter,crispier and chewier, melt the coconut oil first. Be sure to allow space between cookies to spread in that case. I've edited this from 1/2 c to 1 cup of flour from based on the helpful reviews.

5 tablespoons coconut oil (see cook's note)
1/2 cup honey or 1/2 cup agave nectar
1/4 cup peach butter or 1/4 cup pear butter
1 teaspoon molasses (optional)
3 tablespoons water
2 teaspoons gluten-free vanilla extract
1/4 teaspoon almond extract (optional)
1 cup of your favorite gluten-free flour
1 1/2 teaspoons egg substitute, powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 dashes nutmeg
1 1/2 cups gluten-free oats (quick-cooking or old-fashioned both work)
1/2 cup chocolate chips (optional) or 1/2 cup raisins (optional)

Steps:

  • Preheat oven to 350 degrees F. Grease cookie sheet or line with foil or parchment paper.
  • Using a mixer, mix together the coconut oil, apple butter, honey or agave nectar, molasses if using, vanilla, almond extract if using and water thoroughly. If you're using melted coconut oil, you can just mix everything up with a wooden spoon.
  • Sift together the dry ingredients (including the egg replacer) then stir in the oats. Add the dry ingredients to the wet and mix by hand. Add any optional add-ins if using.
  • Drop by heaping teaspoonfuls onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.

For the oatmeal, I personally used the 3-minute type. I like the cookies because I love cookies and since I am now diabetic I can't have any so of course I think these are great!

1/4 cup water

3 cups quick-cooking oatmeal

Steps:

  • Beat together: shortning, sugars, egg, water, and vanilla until creamy.

I modified this recipe and have come up with a cookie recipe that I have made once a week now for 6 months. If the cookie jar gets empty, it is a tragedy around our home. This is a very crispy cookie and reminds me of the granola bar. It's really great, give it a try. Don't deviate from the ingredients, however you may add raisins if desired.

1 cup Butter Flavor Crisco
1 cup Splenda sugar substitute
1/2 cup Splenda brown sugar blend
1 teaspoon vanilla
1 teaspoon salt
2 eggs
1 1/2 cups all-purpose flour
3 cups rolled oats (not instant)
1 teaspoon baking soda
1/2-1 cup chopped pecans (I use a cup)

Steps:

  • Thoroughly cream shortening and sugars: add eggs, vanilla and beat well. (until fluffy). Add flour, salt and soda to creamed mixture: add nuts and oats and mix well. Form dough in log rolls, 1 to 1 1/2 inches in diameter. Wrap logs in waxed paper, aluminum foil, or clear wrap, put in freezer until almost frozen.
  • With knife slice cookies about 1/4 inch thick. Bake on un-greased cookie sheet at 300°F until golden brown. (The slow baking makes a crispy cookie). Enjoy.
