CEDAR PLANKED SALMON
This is a dish my brother prepared for me in Seattle. It is by far the best salmon I've ever eaten. I like to serve it with an Asian-inspired rice and roasted asparagus.

- Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
- In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
- Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
- Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

CEDAR PLANK SPICY APPLE GRILLED SALMON
Now a days, you can buy cedar planks you can use on your grill or even in your oven. I get mine from a local BBQ store or hardware store, but be careful to get untreated natural cedar. You have to be careful of that. The plank offers a natural smoky flavor to the salmon. But if you don't have a cedar plank, this can easily be grilled without it or baked / broiled in the oven. The sweet spicy apple glaze is perfect with the smoky cedar flavor.

- Cedar Plank -- If using a cedar plank (grill or oven), make sure to soak the plank approximately 2-3 hours in water. I just use the sink, or a tupperware container works great. Just make sure the wood is submerged in the water. A couple of heavy cans or soda bottles work great.
- Apple Glaze -- Mix the jelly, horseradish, vinegar, and chives together and set to the side.
- Cedar Plank -- Remove the cedar plank from the water and dry it well. Brush the top of the plank where the salmon will be placed with 2 tablespoons of the olive oil and sprinkle with coarse salt, kosher salt works great.
- Salmon -- Have your guy behind the fish counter remove the skin for you, if they will. If not, run a sharp thin knife along the skin with the salmon sitting flat on the counter. It is very easy to remove. Brush the remaining 1 tablespoon of olive oil on the top of the salmon and season well with salt and pepper.
- Grilling -- If using a grill, medium high heat or charcoal works great as well. This can also be done in a 400 degree oven. With either method, I prefer to let the cedar plank heat up for a few minutes and get good and smoky before I add the salmon (about 5 minutes works great).
- Once the cedar plank is slightly smoking and hot. Add the salmon which has been brushed with olive oil, salt and pepper on the cedar plank. Then, immediately brush the apple glaze on the salmon and close the lid on the grill or continue cooking in the oven. After 5 minutes, brush more glaze on, and again after another 5 minutes. The salmon should take around 15 minutes depending on the thickness. It should be opaque, flaky, and firm to the touch. You don't want it raw in the middle but you don't want to over cook it either - you still want it moist and tender.
- Serve -- I like to serve mine right on the cedar plank. ENJOY!
- Note: Make sure to let the plank cool properly before disposing of it. Also, prep time doesn't include the time to soak the plank.
CANADIAN MAPLE CEDAR PLANK SALMON
This rich, mildly smoky Canadian Maple Cedar Plank Salmon is glazed with maple syrup, balsamic, grainy mustard, butter & garlic. Easy and mouthwatering!

- SOAK THE PLANK: Soak a plank in cold water for 10 minutes for a 1/4 inch plank (or 30-60 minutes for 1/2 inch plank). I use a thin plank and just toss it out when I'm done. Cedar planks are great for salmon as they provide a gentle smoky taste.
- HEAT THE GRILL TO HIGH.
- MAKE THE GLAZE: Place all glaze ingredients in a microwaveable bowl or measuring cup. Stir. Microwave for 1 minute on high. Glaze will be slightly thickened. Let cool for 5 minutes if using part as a marinade (Note 1). Alternatively, place ingredients in a small saucepan and simmer on medium heat for a few minutes until thickened.
- GRILL PLANKED SALMON: Note 2. Pat plank dry. Spray with oil. Place salmon on top of plank, skin side down. Brush salmon with 1/3 of glaze. Place plank on grate of barbecue, close cover and grill for 3 minutes for thinner plank (a little longer if using a thicker plank) until plank starts charring and smoking. Have a glass of water on hand in case of flare ups. Brush 1/3 more glaze on top of salmon. Turn off burner/heat under the salmon (salmon should now be on indirect heat) and close lid. The other burner(s) should still be left on high or med-high heat with the temperature of the BBQ at about 425F-450F/218-232C. Cook for another 7 minutes or until salmon just begins to turn opaque. Instant thermometer will show an internal core temperature of 130-135F/54.4-57C (temp will rise while resting). Salmon should be a warm pink in the thickest part. Drizzle with remaining glaze. Rest salmon for 5 minutes loosely covered with a foil.
- SERVE: Slide a spatula between the skin and the salmon. The salmon will lift right off leaving the skin on the charred wood plank. Transfer to a plate. Sprinkle with chopped parsley if desired and some good sea salt and/or lemon zest.

CEDAR PLANK BRAIDED SALMON WITH APPLE BUTTER SAUCE
The biggest challenge in preparation of this recipe is ensuring the braiding stays intact. Once braiding is complete and liquids poured and brushed generously over the fillets, transferring to a backing sheet, is quite simple; chilling overnight is essential. I love this recipe because of its unique flavour. Although originally developed for the barbeque, it can be successfully baked in your oven. This recipe was handed to me in preparation for a wedding reception in B.C. (August/2004); I had to adjust the ingredients, of course, to serve 150 people. Preparation was a fun exercise; the prepared salmon was cooked on a 5 ft. length, 2" X 10", water-soaked, cedar plank and placed on a large, propane-fired grill. The end result was a perfectly seasoned, delightfully flavoured, lightly smoked salmon that had the wedding guests returning to the buffet table, repeatedly, until all 24 salmon fillets had been devoured. When purchasing your salmon, have the fish-monger filet the fish, remove the skin and pin bones.... When you have purchased your cedar plank, soak the plank in cold water, overnight. Place the plank in a container of water, with a rock or brick on the plank to keep it submerged. Soaking the plank will keep it from burning during the cooking process. Not soaking it gives the salmon a stronger, smoky taste. Remember, this is not only a recipe, it is also a cooking lesson, so have patience and you will be pleased with the results. Follow the Instructions carefully, and you cannot fail. It is a wonderful recipe, the end result will amaze you and your guests praise you.

- To prepare Apple Butter Sauce: blend the mayo, butter and tarragon in a bowl and chill until serving time. Makes 2 cups Apple Butter Sauce.
- Fillet the salmon, removing all the bones.
- Remove the skin and pin bones.
- Oil the cedar planks and place the salmon on it.
- Slice through the salmon, from the wide end, lengthwise, to about 2 inches from the tail end.
- Repeat this motion to cut a total of seven strips that are each about 1/2" to 3/4" wide.
- Keep the tail end intact.
- Where the fish is intact at tail end, strips will be narrower.
- Measure out half of the maple syrup and reserve.
- Combine remaining maple syrup with whiskey, or liqueur.
- Brush whiskey mixture all over salmon strips to generously coat.
- Season with salt and pepper.
- To braid: Mentally label the strips starting from the left as numbers 1 through 7.
- Starting with strip number 4 lift it over strips 1 through 3, so that it is now on the outside left-hand side.
- Next, take strip number 3 and lift it over strips 5 through 7 (to the right side).
- Now, start again, renumbering the strips from 1 through 7.
- Again, lift (the new) strip number 4 to the far left and (the new) strip number 3 to the right.
- Continue in this manner until you have braided the whole length of fish.
- Repeat braiding steps for second fillet.
- Pat the braided fish into one compact length.
- Either skewer the loose ends together or simply press together to keep in place.
- At this point, the planked, braided salmon can be set on a backing sheet, covered and chilled overnight.
- To finish the salmon: pour the maple butter and reserved syrup generously over the salmon; use a pastry brush to force the liquid into nooks and crannies.
- Season with salt and pepper.
- Preheat BBQ to medium heat, or oven to 350°F.
- To Barbeque the Salmon: Place the plank on a grill, over medium heat, on the upper rack, if your bbq has one.
- Close lid (or cover salmon with foil roasting pan).
- Cook for 20 to 25 minutes, or until fish flakes easily when tested with a fork and internal temp for the fish reaches 120°F.
- Alternatively: Preheat oven to 350°F.
- To roast the salmon in the oven, place the plank on a foil lined, rimmed baking sheet and bake in a preheated oven for 30 to 35 minutes.
- Remove plank and salmon from heat.
- Dust salmon liberally with maple sugar.
- Salmon may be served hot or cold right from the plank.
- Garnish with fresh herbs if using.
- Serve with chilled Apple Butter Sauce.
GRILLED CEDAR PLANK SALMON WITH GARLIC BASIL BUTTER
This is by far my FAVORITE way of preparing salmon. I first tried it at McGraths Fish House, then duplicated it at home. You can normally find a cedar plank at your local grocery store in the seafood department.

- Soak your cedar plank in water for 20 minutes, flipping over halfway through soak time.
- While the plank is soaking, mix together butter, basil and minced garlic cloves, spread on salmon.
- Salt and pepper to taste.
- Heat your grill to low, or the right setting for your grill for fish.
- Take your cedar plank out of the water and place the salmon on top of the plank. Place it on the grill and cook for 20-40 minutes depending on how thick your salmon is.Grill with the lid closed.
- During the cooking time, if the plank catches on fire, spray it with water.
- Salmon is done cooking, when it flakes easily with a fork.
- *Note: Whenever I make this it normally takes around 30-45 minutes to cook on the grill. I constantly check it to make sure the plank doesn't burn & the salmon doesn't over cook.
- Make sure you have water on hand to spray the cedar plank with, so it doesn't catch on fire.
