CECI BEAN SALAD
This Ceci Bean Salad made with chick peas and celery in a mayonnaise based dressing is simple to prepare and makes a tasty side picnic salad.

Steps:
- Rinse ceci beans under cold water; drain.
- Place the beans in a bowl, then add in the celery, mayonnaise, vinegar and salt; mix well.
- Keep refrigerated until ready to serve. (Will last up to 3 days in the refrigerator.)

- In a large bowl, stir the chickpeas, celery, onion, parsley, chiles, garlic, olive oil, and vinegar. Season, to taste, with salt. Serve immediately or let stand for 1 or 2 hours and re-season just before serving.
- Slice the bread into 1/2-inch thick slices. Toast on a preheated grill or in an oven for 4 to 5 minutes. Brush 1side with olive oil. Season with salt and pepper.
- Spoon some of the chickpea mixture over the bread slices and serve immediately.
MARINATED CECI CECI BEANS
Nice side dish. You can use any kind of bean you like. I have used white, kidney and black eye peas as well as ceci ceci beans they all work well. This is so simple yet so good.

- in a medium bowl whisk olive oil and balsamic vinegar [you can use any flavored vinegar you want].
- add salt and pepper [you can adjust to your taste up or down] whisk again.
- crush garlic and whisk into dressing.
- add beans and basil.
- stir and let set for at least 1 hour.

This salad is really delicious & comes from the book: Little Foods of the Mediterranean By Clifford A. Wright. The recipe doesn't state this, but I prefer to let the salad sit for 30 mins so the garlic flavour mellows a little.....

ROASTED CECI
a.k.a. roasted garbanzo beans/chickpeas. People always are looking for healthy snacks and unless you are on a low sodium diet, this fits. They also add nicely to homemade snack blends (e.g., chex mixes, Giada's Ceci, Pistachio and Almond mix and the like).EDITED 9-8-07 Given the comments about the beans remaining somewhat soft inside, and realizing people expect them to be crispy, yesterday I made a double batch, cooked as indicated and then turned the oven to 275 and left them in for another hour to hour and a half. They were perfectly crunchy.

Steps:
- Preheat oven to 375 degrees.
- Spread garbanzo beans on half sheet pan, dribble olive oil over them and use your (clean) hands to mix.
- Roast for 40 minutes, shaking the pan every 12 minutes or so, until quite brown and crisp.
- (May leave in oven for another hour or two at 250 to 275 for additional crisping.).
- Sprinkle with sea salt to taste.
- Cool. Serve.
- Can recrisp, if necessary, by heating for 5 minutes in a 375 degree oven.

Steps:
- Empty all the Beans. Add all the beans into a large bowl. Dice up the red onion chop. Then cut 3 stalks of celery into small pieces. Next, cut the red pepper into small pieces.
- Add all the above ingredients into the large bowl with beans. Add the cherry tomatoes to the beans. When finished mixing, add 9 Bean Salad Dressing Mix to the Bean Mix. (recipe for salad dressing is giving below) Double dressing mix if needed. Pour the bean salad into an air sealed container and refrigerate for at least 4 hours or over night. The longer it rest the better it will taste; yummy! It will last up to 1 week in the refrigerator.
- Salad Dressing Mix:.
- Finely chop Oregano, Rosemary, and Thyme. Take garlic cloves and chop until minced. In a large bowl combine all ingredients. Whisk in the olive oil. Mix all ingredients well. After all the dressing is well mixed, pour all of it over the Bean Salad. (Double dressing mix if needed.).
