CREAMY CAVATAPPI PASTA



Creamy Cavatappi Pasta image

Cavatappi pasta is corkscrew shaped and great with creamy sauces. Serve it with a creamy white sauce, spinach, and sundried tomatoes for an easy dinner! (For a vegan option, use 4 cups Vegan Alfredo Sauce instead of the cauliflower sauce.)

6 garlic cloves*
1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
4 tablespoons butter or olive oil
2 cups vegetable broth
1/8 teaspoon garlic powder
1/2 teaspoon dried oregano
1 teaspoon kosher salt
3/4 cup shredded Parmesan cheese, divided
1 pound Delallo cavatappi pasta
4 cups baby spinach
3 tablespoons Delallo sundried tomatoes, minced
Red pepper flakes (optional)
1 tablespoon finely minced parsley

Steps:

  • Mince the garlic. Chop the cauliflower.
  • Heat the butter in a large pot over medium heat. Add the cauliflower and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, garlic powder, oregano, and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  • Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). When the pasta is just about al dente, add spinach to pasta water in last 45 seconds (it only needs this long to cook). Then drain the pasta and spinach and return to the pot.
  • When the cauliflower is cooked (in Step 3), carefully transfer the hot cauliflower and broth mixture to a blender. Blend on high until a smooth sauce forms. Add 1/2 cup Parmesan cheese and an additional 1/2 teaspoon kosher salt, and blend again.
  • Once the pasta is done, pour in the cauliflower sauce. Add the chopped sundried tomatoes, the additional 1/4 cup Parmesan cheese, and red pepper flakes (if using). Taste and if desired add salt or fresh ground pepper. Top with parsley and serve. Store leftovers refrigerated (see reheating instructions above.

8 oz. cavatappi pasta
12 oz. Italian sausage
1 cup minced red bell pepper
½ cup minced red onions
1 cup halved cherry tomatoes
⅓ cup chopped basil ((or italian parsley))
½ cup balsamic vinegar
½ cup oil ((I used coconut, but most people will enjoy olive oil here))
1 tsp. Italian seasoning
¼ tsp. salt
½ tsp. ground black pepper
1 tsp. garlic powder
parmesan cheese (to taste)

Steps:

  • Fill a large pot with water. To the pot, add 1 tbsp. salt and set to boil. Cook the pasta to package directions using the salt water.While it cooks, you'll want to slice and sauté your sausages in a bit of oil.
  • Once the pasta is fully cooked (do not overcook!), strain it well and transfer to a large mixing bowl
  • To the pasta add the onions.
  • Add cooked and sliced sausages to the pasta.
  • Add the chopped fresh herbs next.
  • Now add the chopped bell peppers.
  • Lastly, the halved cherry or grape tomatoes.
  • For the dressing, combine the oil and vinegar.
  • Add garlic powder.
  • Stir in Italian seasoning.
  • Add salt.
  • Lastly, stir in ground black pepper.
  • Stir well to combine.
  • Pour the dressing over the pasta.
  • Toss to coat everything in the dressing.
  • Serve garnished with parmesan cheese if you so wish.

This is an approximate verision of Carrabba's. This is served in the restaurant as a side dish but would be just fine as a main dish when pancetta is added in. Cavatappi pasta is a short tubed corkscrew or S-shaped pasta. It can be hard to find but I was able to find it called "Twists" by the pasta brand DaVinci (blue bag).

1 1/2 cups onions, chopped
2 garlic cloves, minced
1/2 teaspoon red pepper flakes

Steps:

  • Cook cavatappi according to package directions; drain.
  • Saute onions, garlic, and red pepper flakes in olive oil over medium heat till onions are soft and translucent.
  • Add white wine and cook till nearly evaporated.
  • Stir in tomatoes with their juice till slightly thickened (3-5 minutes).
  • Taste, and add salt and pepper as desired.
  • Mix into cooked cavatappi.
  • Toss with cheese.
  • Add cooked pancetta (optional).

4 cups cooked (al-dente) Cavatappi pasta (cook al-dente according to package instructions)
3 tablespoons butter
3 tablespoons flour
2 cups milk (set on counter for about 5 minutes before using so it's room temperature)
1/4 teaspoon granulated garlic
1/4 teaspoon salt (or salt to taste)
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat a medium size pot on medium heat and add butter. Stir the butter around the pot until it's melted. Add flour and stir continuously.
  • When the butter and flour start to thicken (about 2 minutes), add milk and stir. Stir in garlic powder and salt. Remove the white sauce from the heat and set aside for a moment.
  • In a medium size casserole dish, add the cooked pasta. Pour the white sauce over the pasta and stir together to coat the pasta.
  • Add half of the cheese to the pasta and white sauce mixture. Stir so that the cheese is mixed in with the pasta and white sauce.
  • Top the pasta mixture with the remaining cheese. Bake in a preheated oven until the cheese melts (about 15 minutes).
  • Serve right away while warm.

12 ounces loose lean turkey sausage
1/4 cup extra-virgin olive oil
1 small onion, finely diced
1 large clove garlic, grated
2 teaspoons herbes de Provence
1 28-ounce can crushed tomatoes
Freshly ground pepper
1 cup part-skim ricotta cheese
1/2 cup shredded Italian cheese blend
1 teaspoon grated lemon zest, plus 1 tablespoon lemon juice
1 romaine lettuce heart, chopped

Steps:

  • Preheat the oven to 500˚ F. Bring a large pot of salted water to a boil. Add the pasta and cook 2 minutes less than the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, cook the sausage in 1 tablespoon olive oil in a large skillet over medium-high heat, breaking up the meat, until browned, 5 to 6 minutes. Remove to a plate using a slotted spoon.
  • Heat 1 more tablespoon olive oil in the skillet over medium-high heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and herbes de Provence and cook 30 seconds. Stir in the tomatoes, sausage and 1/4 cup of the reserved cooking water; season with salt and pepper. Bring to a gentle boil, then reduce the heat and simmer until thickened, 3 to 5 minutes. If the sauce is too thick, add a bit more cooking water. Stir the pasta into the sauce.
  • Whisk the ricotta, 1/4 cup cheese blend, the lemon zest, 1/2 teaspoon each salt and pepper and 3 tablespoons cooking water in a bowl. Layer half of the pasta and ricotta mixture in an 8-inch square baking dish, then top with the remaining pasta, ricotta mixture and cheese blend. Bake until bubbly, 8 to 10 minutes.
  • Toss the lettuce with the lemon juice and remaining 2 tablespoons olive oil; season with salt and pepper. Serve with the pasta.

  • Preheat oven to 400F.

  • Cook the pasta according to package directions.

Freshly ground black pepper
1 pound cavatappi pasta (or your favorite ribbed pasta)
6 tablespoons unsalted butter, cubed
15 fresh sage leaves, torn
1/2 cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Fill a large bowl with water and ice and set aside.
  • Add 1 tablespoon kosher salt and the broccolini to the boiling water and cook until crisp-tender, 2 to 3 minutes. Using a spider or slotted spoon, transfer the Broccolini to the ice water to stop the cooking and let cool. Keep the pot of water boiling for the pasta. Drain the broccolini in a colander, cut the stalks in half crosswise, and set aside.
  • In a large nonstick skillet over medium heat, heat the olive oil until shimmering. Add the garlic and red pepper flakes and cook, stirring frequently, for 1 minute. Add the blanched broccolini, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and sauté until tender, 3 to 5 minutes. Transfer the broccolini to a medium bowl and set aside.
  • Add the pasta to the boiling water and cook until al dente, about 2 minutes less than the directions on the package. Reserve 1/2 cup of the pasta water and drain the pasta in a colander.
  • Meanwhile, wipe out the skillet, return it to medium-low heat, and add the butter. When the butter has melted, add the sage leaves and cook until the butter turns amber brown and the sage shrivels, 4 to 6 minutes. Add 1/4 teaspoon salt and black pepper. Stir in the cooked pasta until incorporated, then fold in the broccolini and 2 to 3 tablespoons of the reserved pasta water.
  • Stir in the Parmesan cheese, adding more pasta water until you achieve desired creaminess. Season with salt and pepper and serve hot.
