MAMA'S POTATO SALAD



Mama's Potato Salad image

Serve this delicious potato salad at any family dinner, picnic, or special event.

24 small red potatoes cut into bite-size pieces
2 eggs
1/2 cup of mayonnaise (more if you want it extra creamy)
1 cup of chopped celery
3 tablespoons of sweet pickle relish
1 teaspoon of mustard
Paprika
6 pimento-stuffed green olives, each cut into 3 or 4 slices

Steps:

  • Boil the eggs. After they cool, peel them and chop them.
  • Boil the potatoes until they are fork tender. Rinse and set aside to cool.
  • Put cooked potatoes and chopped eggs in a medium-size mixing bowl.
  • Add the mayonnaise, celery, pickle relish, and mustard.
  • Mix all of the ingredients until everything is coated.
  • Scoop the mixture into a serving bowl. Sprinkle the paprika over the top.
  • Evenly place the olive slices over the top of the potato salad.
  • Cover with plastic wrap or a lid and refrigerate until time to serve it.

5 large red potatoes, peeled and cubed
2 ribs celery, chopped
1/2 large onion, chopped
3 hard-boiled eggs, 2 chopped and 1 sliced
2 heaping tablespoons sweet pickle relish, drained
1/2 cup salad dressing, (recommended: Miracle Whip)
3 tablespoons yellow mustard
1 tablespoon sugar
Paprika, for garnish
Salt

Steps:

  • Boil cubed potatoes until they are tender. Drain and cool. In a large bowl add celery, onion, 2 eggs and pickled relish. Add the salad dressing, yellow mustard and sugar. Stir well. Place the sliced egg on top of potatoes and sprinkle with paprika and salt. Let the potato salad chill in the refrigerator for 2 1/2 hours or overnight.

3 lbs idaho potatoes (peeled and diced)
1 cup sweet onion (finely diced)
1/2 cup celery (finely diced)
6 large eggs (boiled, dice only 4 eggs for the salad and slice and save 2 for the top.)
1/4 cup diced pimento (but adds color, it's not enough to add any flavor.) (optional)
1 cup sweet gherkins (diced) or 1 cup relish (diced)
1/4 cup yellow mustard (just for color, adds no flavor.)
1/4 cup sugar
1 tablespoon salt
1 tablespoon pepper
1 -1 1/2 cup Miracle Whip (depends on how thick you like it.)
1 teaspoon paprika (for the top.)

Steps:

  • Boil potatoes until they are tender but firm, do not over cook or the salad will be like mashed potatoes.
  • Drain potatoes immediately and let them cool completely.
  • Add (to the cooled potatoes) all other ingredients.
  • Toss lightly until thoroughly mixed making sure not to mash the potatoes.
  • Top the salad with the sliced eggs and sprinkle with Paprika.
  • We love it while it's still warm.
  • Refrigerate if you like it cold for 2 hours.
  • Enjoy!

4 hard-boiled eggs, chopped
1 to 2 celery stalks, finely diced
1 medium onion, diced
2 tablespoons chopped pimento
3 tablespoons sweet relish
4 to 5 tablespoons mayonnaise
1 tablespoon yellow mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon sugar

Steps:

  • Boil the potatoes for about 20 minutes, or until tender, and allow them to cool. In a large bowl, combine the remaining ingredients. Mix and chill before serving.

I love to try new potato salad recipes, and this is very traditional. I must confess, I've never put sugar in potato salad before, and it's not my favorite. I made this more savory with pickles and dill relish, but I think a lot of people prefer the sweet taste. I also doubled the eggs (personal preference), but I'll post as written. 6 hard-boiled eggs
1 medium onion, finely chopped
1/2 cup mayonnaise

  • Stir in mayonnaise, milk, mustard, sugar, salt, and pepper.
  • Pour over potatoes and toss well.
  • Adjust seasonings if necessary.
  • Spoon into a serving bowl.
  • Garnish with egg slices and paprika.
  • Chill until serving.

My momma is known for her salads and she makes them only on special occasions. When the holidays come around, we know our favorite potato salad will be made! The longer this potato salad sits, the better it gets. Make this one the day before so all the flavors marinate in the fridge overnight!

3 pounds Russet potatoes (about 3 large potatoes), peeled and cut into 1-inch dice
Kosher salt
6 large eggs
1 green bell pepper, seeded and roughly chopped
1/2 yellow onion, roughly chopped
2 ribs celery, roughly chopped
1 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon sweet relish or sweet salad cubes
2 teaspoons granulated sugar, plus more as needed
1 tablespoon Miss Brown's House Seasoning, plus more as needed, recipe follows
2 teaspoons roughly chopped flat-leaf parsley
Pinch sweet paprika, for garnish
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Put the potatoes to a large pot, add enough cold water to fully cover and season the water liberally with salt. Bring to a boil over high heat and cook until the potatoes are tender, about 15 minutes. Drain the potatoes, rinse with cool water and place in a large bowl to cool for at least 15 minutes.
  • Meanwhile, put the eggs in a medium saucepan and add enough cold water to fully cover. Bring to a boil over high heat and cook for 12 minutes. Transfer the eggs to an ice bath until cool enough to handle, about 3 minutes. Peel the eggs, roughly chop, transfer to a small bowl and set aside. Add the eggs to the potatoes.
  • Add the pepper, onion and celery to the bowl of a food processor and pulse until finely chopped. Transfer the mixture to the bowl with the potatoes. Add the eggs and set aside.
  • Whisk together the mayonnaise, mustard, sweet relish and sugar in a small bowl. Add the Miss Brown's House Seasoning and whisk to combine. Add the seasoned mayonnaise to the potatoes and gently toss with a wooden spoon until coated. Taste and adjust the seasoning as desired. Transfer to a large serving bowl if desired. Sprinkle with the parsley and paprika. Serve immediately or chill in the fridge overnight.
  • Stir everything together in a small bowl. Keep in an airtight container. Makes 5 teaspoons.

5 lb bag potatoes
4 eggs, hard boiled
1/2 cup salad olives, chopped
1/2 cup sweet pickle relish
2 tablespoons mustard
1 cup mayonnaise
Salt to taste

Steps:

  • Peel potatoes and put in large pot to boil until soft. Hard boil eggs, rinse in cold water and peel.
  • When potatoes are cooled enough to handle, cut into large bite size chunks, put in large bowl. Chop up eggs and put in bowl with potatoes. Add chopped olives and sweet pickle relish. Add mustard, mayo, and salt to taste.
  • Mix everything until well blended. If mixture seems dry add more mayo, consistency should be moist.
