CANTALOUPE AND CREAM SHERRY GRANITA

Cantaloupe and Cream Sherry Granita image

Time to dust off that bottle of cream Sherry lurking in the back of your liquor cabinet: Its nutty, plummy nature rounds out the flavor of the melon, and its alcohol content helps produce a granita that feels smoother, less icy, on the tongue.

Provided by Paul Grimes

Yield Makes 8 to 10 servings

Number Of Ingredients 5

1/2 cup water
1/3 cup sugar
2 medium cantaloupes, seeded and cut into 1-inch pieces (8 cups)
1/4 cup fresh lemon juice
6 tablespoons cream Sherry

Steps:

  • Bring water and sugar to a boil, stirring until sugar has dissolved, then cool syrup.
  • Purée cantaloupes with syrup, lemon juice, Sherry, and 1/8 teaspoon salt in a blender (in batches if necessary) until smooth. Pour into a 13- by 9-inch nonreactive baking dish and freeze until partially frozen, about 2 hours. Scrape and stir with a fork, crushing any lumps.
  • Continue to freeze, scraping once or twice, until evenly frozen, about 3 hours more.

CHERRY TOMATO FRA DIAVOLO SAUCE, SEAFOOD AND PASTA

Cherry Tomato Fra Diavolo Sauce, Seafood and Pasta image

The night you want to serve this dish, bring home 1 1/2 pounds of any seafood you like: shrimp, crabmeat and firm, white, sustainable fish is a nice mix.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 17

3 tablespoons EVOO
4 cloves garlic, chopped
2 Fresno chile peppers, thinly sliced
1 small red onion, finely chopped
Salt
1/2 cup dry sherry or dry vermouth
2 pints cherry tomatoes, large tomatoes halved and small tomatoes left whole
1 teaspoon dried oregano or marjoram
1 cup fresh basil leaves (about 20), torn
1/4 cup fresh flat-leaf parsley leaves, chopped
Salt
1 1/2 pounds mixed seafood, such as shrimp, crabmeat, lobster meat and firm white fish
Freshly ground pepper
Seafood seasoning, such as Old Bay
1 tablespoon EVOO
1/4 cup dry vermouth
1 pound linguine

Steps:

  • For the sauce: Heat the EVOO in a pot or skillet with a lid over medium to medium-high heat. Add the garlic, chiles and onions. Cook, stirring, for 5 minutes. Season with salt and stir in the sherry. Cook until reduced by half. Add the tomatoes and oregano, cover and cook until the whole tomatoes burst, 10 to 15 minutes. Stir in the basil and parsley. Remove from the heat.
  • For the pasta: Bring a pot of water to a boil for the pasta, and season with salt. Pat the seafood dry and sprinkle with salt, pepper and about 1 teaspoon seafood seasoning. Heat the EVOO in a skillet over medium-high heat. Add the seafood and cook until opaque and firm (or heated through for the crab or lobster). Deglaze the pan with the vermouth, scraping up the browned bits from the bottom.
  • Meanwhile, cook the linguine until al dente, then drain.
  • Toss the linguine with the sauce and fold in the seafood.
  • Cook's Notes: Serve the pasta with a green salad dressed with lemon juice and olive oil.
  • You can make the sauce ahead of time and store it in the refrigerator; reheat it over medium heat.

PIONEER WOMAN - TOMATO SOUP WITH SHERRY

Pioneer Woman - Tomato Soup With Sherry image

This is my favorite recipe adapted from the Pioneer Woman. A decadent lunch! I tweaked it a little from her original: I reduced the sodium and fat by reducing the chicken base and butter, and changing the heavy cream to half-n-half. And I thought way more fresh basil was needed to make it taste spectacular.

Provided by appleydapply

Categories     Vegetable

Time 25m

Yield 12 cups, 8 serving(s)

Number Of Ingredients 12

5 tablespoons melted butter
1 medium onion, diced
1 (46 ounce) can tomato juice
2 (14 ounce) cans diced tomatoes
1 tablespoon chicken base or 1 tablespoon chicken bouillon
3 tablespoons sugar
1 cup cooking sherry
1 1/2 cups half-and-half or 1 1/2 cups heavy cream
1/2 cup chopped fresh basil
2 teaspoons dried parsley flakes
pepper
crouton (optional)

Steps:

  • In a soup pot, saute diced onion in butter until translucent.
  • Decide how chunky you like your tomato soup. I like to process one of the cans of tomatoes briefly in the food processor to chop up the tomatoes more finely. You can process one or both or neither.
  • To the pot, add canned tomatoes, tomato juice, sugar, chicken base or bouillon, and pepper and stir.
  • Bring to a near boil, then turn off heat.
  • Add sherry and half-n-half or cream and stir.
  • Add parsley and basil. (or, you can save the basil to sprinkle on top of each bowl of soup). Add salt & pepper if needed to your taste.
  • Top with croutons if desired.

TOMATO GRANITA

Tomato Granita image

***Warning*** Only make this during the heat of summer when the tomatoes are like sweet, dripping, juicy manna from the heavens. It is lovely on its own, or scooped onto an herb salad of chives, fresh basil and tarragon. Use it as "dressing" for a grilled chicken salad, or shrimp cocktail.

Provided by TooAllergic

Categories     Vegetable

Time 4h5m

Yield 6 serving(s)

Number Of Ingredients 10

7 tomatoes (seeded, skins removed)
1/3 cup water
1/3 cup sugar
1 tablespoon lemon juice
1 1/2 tablespoons tomato paste
1/2 teaspoon minced garlic
3 dashes Tabasco sauce
salt
white pepper
1/8 teaspoon ground celery seed

Steps:

  • Simmer the water and dissolve the sugar to form a simple syrup. Pour over the tomatoes and let cool.
  • Using a blender, puree the tomatoes, syrup and remaining ingredients until perfectly smooth. Taste for seasoning. Remember: The flavors will be slightly muted when this is chilled.
  • Place in your icecream maker and follow manufacturers instructions OR.
  • Pour into a non-reactive, freezer-safe dish and place in the freezer. Stir this mixture every hour until firm. The texture will depend on the tomatoes. Higher sugar content produces softer granita and less produces harder-icier granita.
  • Pull out of the freezer a few minutes before serving, to soften. Shave the granita ice with a fork or icecream scoop.

TOMATO & BASIL GRANITA

Tomato & basil granita image

An unusual and delicious dinner party starter

Provided by Barney Desmazery

Categories     Dinner, Lunch, Snack, Starter, Supper

Time 25m

Yield Serves 8 as a starter

Number Of Ingredients 7

900g very ripe tomatoes
1 tsp salt
1 tbsp sugar
1 garlic clove , finely chopped
1 tsp ground black pepper
1 tbsp red wine vinegar
bunch basil leaves , removed from stalk

Steps:

  • Chop the tomatoes and place in a bowl with all the other ingredients except the basil leaves. If you have time, leave them to macerate at room temperature overnight. Blitz in a blender - in batches, then strain through a fine sieve. Shred the basil leaves and stir through.
  • Clear a shelf in the freezer and place a sided metal tray in to chill. Make up your mix and leave to cool, then pour into the tray and cover with cling film. Freeze the liquid until frozen around the edges and slushy in the middle. Use a fork to break up the ice into smaller crystals. Return the tray to the freezer. Repeat the breaking up process every half hour (at least three times) until it's completely frozen and the texture of snow. For a quicker method: freeze the mixture in an ice tray, then blitz the cubes in a food processor just before serving. The texture will be slightly slushier, but just as delicious.
