ROASTED CAULIFLOWER STEAKS
Roasted cauliflower steaks served with cauliflower chips and sweet potatoes fries. Sounds like I am on MasterChef but I'll tell you, this is serving gourmet meal from the comfort of your home. It is healthy, light and super delicious.

- Preheat the oven at 200C/400F conventional oven and 180C/365F Fan oven
- Rinse the cauliflower head under running water to remove any dirt and carefully pat dry or leave to air dry. Remove the outer leaves of the cauliflower head and trim off the stems.
- Cut the cauliflower into two halves lengthwise. Then cut each half about 1-inch thick slab to the stem. You would have some cauliflower florets as excess, save them to use in another recipe roast along with the steaks.
- Place the cauliflower steaks in a roasting pan and season both sides with salt and pepper.
- In a small bowl, whisk together extra virgin olive oil, melted butter, garlic granules, smoked paprika and turmeric.
- Brush the seasoning mix generously on both sides of the cauliflower
- Place it in the preheated oven and roast for 10 minutes (based on the thickness of my steak), take it out of the oven, carefully flip it to the other side and continue to roast for another 10 to 15 minutes or until fork-tender and golden around the edges.
- Serve immediately with some sauce like chimichurri or green sauce and other sides of choice. It is also great with some toasted pine nuts, I didn't have any on hand when I made this recipe. Enjoy

- Preheat the oven to 425 degrees F. Cut off the cauliflower stems, then place the heads cut-side down and slice into 1/2-inch-thick steaks. Arrange on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt and pepper on both sides. Transfer to the oven and bake until golden brown, 20 to 25 minutes, flipping after the first 10 minutes.
- Meanwhile, add the pine nuts to a dry medium saute pan and toast over medium heat until golden brown, about 3 minutes. Add the raisins and butter and season with salt. Cook, tossing, until the butter has melted and coats the pine nuts and raisins. Off the heat, stir in the parsley.
- Transfer the roasted cauliflower to a serving platter. Pour the pine nut-raisin mixture over the top. Season with salt.

ROASTED CAULIFLOWER STEAKS
The recipe comes to us courtesy of Erin Wysocarski, of Redondo Beach, Calif., a 10-year vegan who has grown accustomed to bringing portable food to holiday gatherings. "Most folks who have never heard the term 'cauliflower steak' give a little chuckle," said Ms. Wysocarski, who writes the Olives for Dinner vegan food blog. "This cauliflower steak tastes good because of the way it's sliced - it gets a little crispy around the edges (especially if you use a cast iron pan) and stays succulent toward the middle." The dish has the added benefit of being portable and easy to reheat.

- Slice the cauliflower through the center, keeping as much intact as possible. Season the "steaks" with salt, freshly ground pepper and sage.
- Heat a cast-iron skillet over medium-high heat. Add olive oil and place cauliflower carefully in the pan. Sear the cauliflower for 3 to 4 minutes per side, until deeply golden. Serve with vegan gravy, if desired.
