DELICIOUS CAULIFLOWER N CHEESE SANDWICH FILLING
This is a personal favourite of mine. I found this recipe in Anjali Vellody's Foodcourt column of the Weekend magazine. Hope you enjoy it!

Steps:
- Heat oil in a non-stick pan.
- Add onion and stir-fry until its transparent (about 5 to 7 minutes).
- Add cauliflower and stir-fry for 4 minuts.
- Add corriander, cumin, garam masala and red chilli powder.
- Mix in the grated Maggi cube powder.
- Add few tbsps.
- of water to cook the cauliflower.
- Cook until the mixture is dry.
- Add chopped corriander, mint and grated cheese.
- Mix well.
- Transfer this filling onto a plate and allow to cool.
- Divide it into 2 portions.
- Place each portion between 2 bread slices.
- Toast in a sandwich toaster.
- Serve hot.
- Enjoy!

- Preheat the oven to 425F degrees and line a large baking sheet with aluminum foil or parchment paper.
- Cauliflower on one side of the baking dish and the potatoes on the other side. Add the olive oil, ground cumin, paprika, coriander, garlic powder, salt and pepper, and toss both the potatoes and the cauliflower with the oil and seasoning separately.
- Make sure not to over crowd the baking dish, or you may want to use two separate ones. Bake for about 20-25 minutes until potatoes and cauliflower are crispy and golden.
- To make the Garlic Lemon Tahini Sauce, whisk all the ingredients together until you reach a creamy consistency. Taste and adjust as you desire.

- Preheat the oven to 400F and place a wire baking rack on top of a large baking sheet. Alternately you can use a parchment-lined baking sheet (it may just not be as crispy on the bottom this way).
- In a large frying pan heat the 2 tablespoons of olive oil on medium heat. Mix all of the remaining panko mixture ingredients together in a shallow bowl or pie plate and pour them into the pan. Stir constantly until the panko is lightly toasted and fragrant, about 3 minutes. Pour the mixture back into the original shallow bowl or pie plate.
