Prep Ina Garten's recipe for Cauliflower Gratin from Barefoot Contessa on Food Network ahead as a creamy, cheesy vegetable side for a no-stress dinner party.

Number Of Ingredients 10

1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
  • Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

I had leftovers of cauliflower with cheese sauce, and also had some leftover peas.And I wanted to do something creative with them and came up with this recipe. If you try this, I sure hope you enjoy it. I first posted this on RecipeZaar ( which is no longer a recipe site :( )Posted here on August 29th,2010.

1 1/2 c leftover cauliflower and cheese sauce
1/2 c sweet baby peas
1/8 c finely chopped sweet onion
1/4 tsp ground black pepper, or to your own taste
1/2 c crushed ritz type crackers
2 Tbsp melted margarine

Steps:

  • 1. Preheat oven to 350 degrees and lightly grease a 1 quart baking dish. ( I use a butter flavored cooking spray )
  • 2. Mix together first four ingredients,pour into prepared pan.
  • 3. Combine cracker crumbs and melted margarine, and sprinkle over casserole ingredients.
  • 4. Bake for 20 minutes or until topping is golden brown.

2 cups leftover cauliflower and cheese sauce
1/2 cup leftover baby peas
1/8 cup chopped sweet onion
1/2 teaspoon ground black pepper (to taste)
1/2 cup crushed butter type cracker (I used Ritz )
2 tablespoons melted margarine

Steps:

  • Preheat oven to 350 degrees.
  • Mix together all casserole ingredients, and pour into a 1 quart baking dish that has been sprayed with cooking spray.
  • Mix together topping ingredients, and sprinkle evenly over casserole.
  • Bake for 25 minutes or until topping is slightly browned.

  • Place 1 head cauliflower florets in a 2-quart baking dish. Whisk 1/2 cup heavy cream, 1/2 teaspoon dry mustard and 1 teaspoon salt, then pour over the cauliflower. Sprinkle 1 cup shredded gruyere and 1/3 cup breadcrumbs on top. Bake at 350 degrees F until tender, about 45 minutes.

1 large head cauliflower (about 2 pounds), broken into florets
1/3 cup butter, cubed
1/3 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon pepper
2-1/2 cups whole milk
1 cup frozen peas
1/2 cup sliced fresh mushrooms
1-1/2 cups shredded cheddar cheese, divided

Steps:

  • In a covered saucepan, cook cauliflower in a small amount of water until crisp-tender. Meanwhile, in another saucepan, melt butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Drain the cauliflower. Add peas, mushrooms, 1 cup of cheese and cauliflower to the milk mixture; stir gently. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with remaining cheese. Cover and bake at 350° for 15 minutes. Uncover; bake 10 minutes longer or until heated through.

I absolutely LOVE this recipe. It is the only way I can get my DSS to eat cauliflower. You can also use this recipe for Potatoes Au Gratin, just bake longer for the potatoes to become tender. From the Angels in the Kitchen Cookbook.

1 head cauliflower
1 cup butter (2 sticks)
3/4 cup flour
2 cups evaporated milk
2 cups water
1 teaspoon Worcestershire sauce
salt and pepper
16 ounces sharp cheddar cheese, shredded

Steps:

  • Rinse the cauliflower and remove the green stems. Cut into bite sized pieces.
  • Heat oven to 350ºF.
  • Cook in a large saucepan of boiling salted water for 15 min or until tender crisp and drain.
  • Place in a baking dish coated with nonstick cooking spray. (I use an 8x8 pan).
  • Melt the butter in a medium saucepan.
  • Stir in the flour. Cook for a few min, stirring constantly - DO NOT BROWN.
  • Mix the evaporated milk and water in a bowl.
  • Stir milk mixture into the flour mixture gradually, cook for 10 min or until thickened, stirring constantly.
  • Stir in the Worcestershire sauce and season with salt and pepper to taste.
  • Pour the white sauce over the cauliflower and cover with cheese.
  • Bake at for 20-25 min or until bubbly.

I am trying to eat less meat both for health and expense, but still keep my meal satisfying. I found this recipe in "Organic Gardening" magazine. They suggest the recipe is a good start and you can add cubed potatoes, diced chicken, or extra-firm tofu. Also they say try replacing the cauliflower with Brussels sprouts.

2 tablespoons vegetable oil
1 teaspoon cumin seed
1 teaspoon gingerroot, freshly grated
1/2 teaspoon garlic clove, minced
4 shallots, peeled and sliced
1 head cauliflower, broken into bite-sized florets (4 cups)
1 cup frozen peas
1/2 cup grape tomatoes, halved
1 teaspoon ground turmeric
1/2 teaspoon fresh ground black pepper
2 tablespoons ground coriander
1/4-1/2 teaspoon cayenne pepper (optional)
salt
fresh cilantro, for garnish (use either the leaves or chop leaves with stems)

Steps:

  • In a skillet, over medium heat, add the oil and heat until it begins to shimmer; add cumin seeds and saute until they too begin to sizzle, about 30 seconds.
  • Add in the ginger, garlic, and shallots and cook until they start to soften, about 2 minutes.
  • Add in the cauliflower, cover the skillet, and cook, stirring occasionally, until the cauliflower has begun to caramelize, 8 minutes.
  • Stir in the peas and tomatoes, turmeric, pepper, coriander, and cayenne, if using; season with salt to taste.
  • Cover and cook until the cauliflower is cooked through, about 5 to 7 minutes.
  • Transfer to a serving bowl and garnish with fresh cilantro.
