POTLUCK CAULIFLOWER AND LETTUCE SALAD
There are many combinations for Cauliflower Salads, this particular version is the favorite in our area. A delicious make ahead, perfect for potlucks and family gatherings. Great salad to add to the holiday table. For those special occasions I serve this in a cut glass bowl ... making it look as good as it tastes. I have been known to add slivered almonds to make for extra crunch! This salad requires at least eight hours mellowing time ... best made the night before ... that is a big plus when you are cooking for a crowd!

Steps:
- In a small bowl: mix the mayonnaise, grated Parmesan cheese and sugar to make the dressing and set aside.
- In large bowl: break cauliflower into florets, tear lettuce into bite size pieces, red onion thinly sliced, add the bacon bits.
- Pour dressing over the salad, cover and refrigerate.
- Toss before serving.

- To crumble the bacon put it into a small ziplock bag and put in fridge after 10 minutes take it out and crush it still in bag, works well.
- Put lettuce onion and cauliflower into large salad bowl put bacon on top.
- Mix three ingredients for dressing.
- Pour over salad when ready to eat.

- Whisk lime zest, lime juice, mustard, and honey in a large bowl. Whisking constantly, gradually add oil; whisk until emulsified. Season with salt and pepper.
- Add cauliflower and 1 Tbsp. nutritional yeast to dressing; toss to combine. Add lettuce, frisée, and half of Parmesan and toss again; season with salt and pepper.
- Transfer salad to a platter and top with remaining Parmesan and remaining 1 tsp. nutritional yeast.

- 1. Tear up lettuce and put in the bottom of a large bowl. Break up cauliflower into bite size peices and add on top of lettuce, onion on cauliflower and bacon on onion. - Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Chop into small pieces.
- Layer iceberg lettuce, cauliflower, red onion, bacon, mayonnaise, sugar, and Parmesan cheese in a large bowl, in that order. Cover tightly with plastic wrap. Place a heavy pan on top of the salad to press it down.
- Refrigerate for 24 to 36 hours, checking occasionally that salad is still pressed down.
- Toss salad; season with black pepper.

LAYERED CAULIFLOWER SALAD
My Son-in-law loves this salad. I always double it when I know he's going to be at the dinner table. That way I know there will be some leftovers for him! This is one of those salads that tastes even better on the second day.

- 1. Layer lettuce*, cauliflower and onion in a 3 qt. bowl.
- 2. Mix the mayonaise, sugar, and milk together and spread evenlyh over top, sealing to the edge of the bowl.
- 3. Sprinkle bacon and parmesan cheese over the mayonaise mixture.
- 4. Garnish with a little more chopped lettuce and onion for additional color. Cover salad tightly and refrigerate for at least 12 hours
- 5. NOTE: After washing the lettuce make sure it is very dry.
