Smoked Paprika Dry-Rubbed Pulled Pork Sandwiches image

3 tablespoons smoked paprika
2 tablespoons coarsely ground black pepper
2 tablespoons coarse salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon brown sugar
One 5- to 7-pound Boston pork butt
Two 12-ounce bottles wheat ale beer
1 cup store-bought barbeque sauce
1 1/4 cups mayonnaise
1/3 cup rice wine vinegar
2 teaspoons granulated sugar
2 1/2 pounds green cabbage, cored and finely shredded
1 large carrot, coarsely grated
Kosher salt and freshly ground black pepper
12 brioche buns, split

Steps:

  • For the pulled pork: Mix the paprika, pepper, salt, chili powder, garlic powder and brown sugar in a bowl. Rub all over the pork. Cover and refrigerate for 1 hour or up to overnight.
  • Preheat the oven to 300 degrees F. Pour the beer into a roasting pan. Place the pork in the pan, cover with foil and bake until an instant-read thermometer inserted into the thickest part registers 170 degrees F, about 6 hours. Remove the pork from the oven and let the meat rest for at least 20 minutes.
  • Heat the barbeque sauce in a saucepan over low heat. Keep warm. Shred the pork using two forks. In a large bowl, toss the pork with the warm barbeque sauce until well coated.
  • For the coleslaw: Whisk together the mayonnaise, vinegar and granulated sugar in a large bowl. Add the cabbage and carrots and toss to coat. Season with salt and pepper, cover and refrigerate for at least 1 hour. The coleslaw can be made up to 2 hours in advance.
  • To serve, spoon the pulled pork mixture onto the bottom half of a brioche bun, and top with some coleslaw and the other bun half.

1/2 cup kosher salt
1/4 cup sugar
1/4 cup toasted fennel seeds
2 heads garlic, sliced crosswise
1 small bunch fresh thyme sprigs
Bunch of fennel fronds
1 bone-in center-cut pork loin (about 5 pounds), chine bone removed
Canola oil, for brushing
Freshly ground black pepper
1/2 cup balsamic vinegar
1/4 cup honey
1 small fennel bulb, plus fronds
Finely grated zest and juice of 1 orange
Extra-virgin olive oil
Grape Mostarda, for serving, recipe follows
2 tablespoons canola oil
1 1/2 pounds seedless red grapes, washed, dried and halved
2 shallots, finely diced
1/2 cup sugar
1/2 cup red wine vinegar
1 tablespoon yellow mustard seeds
1 sprig fresh rosemary
1 tablespoon whole grain mustard
2 teaspoons finely grated orange zest

Steps:

  • For the brine: Bring 8 cups water to a boil in a large saucepan. Add the salt and sugar and cook until dissolved. Add the fennel seeds, garlic, thyme and fennel fronds and remove from the heat. Let cool completely (or reduce the amount of water in the brine by 2 cups and add 4 cups ice cubes to cool down immediately). Transfer the brine to a plastic container, add the pork, cover and refrigerate for at least 1 hour and up to 4 hours.
  • For the smoked pork: Remove the pork from the brine, rinse well with cold water and pat dry. Put on a rack set over a baking sheet and refrigerate (to allow a crust, or skin, to form on the outside) for at least 1 hour and up to 8 hours.
  • Remove the grill grate and ceramic plate from the cooker. Add the hot hardwood charcoal and scatter the soaked wood chips over the top. Put on the ceramic plate and the grill rack, close the cover, bring the temperature to between 300 and 325 degrees F and allow to smoke for 10 minutes.
  • Brush the entire loin with oil and sprinkle with pepper. Place on the rack, close the cover and smoke until an instant-read thermometer inserted into the center registers 140 degrees F, 1 to 1 hour 30 minutes.
  • While the pork smokes, combine the balsamic vinegar and honey. Start brushing it on the pork about 30 minutes before it is done. When done, remove, loosely tent and let rest 10 minutes before slicing.
  • For the fennel gremolata: Cut the fennel into small dice and coarsely chop the fronds; put in a bowl. Add the zest and juice and drizzle with a little olive oil; mix to combine. Let sit at room temperature.
  • Spoon the Grape Mostarda onto a platter, top with the pork and spoon the gremolata over the pork.
  • Heat the canola oil in a large saucepan over high heat. Add the grapes, shallots, sugar, vinegar, mustard seeds, rosemary and 1/2 cup cold water. Bring to a simmer and cook until the grapes soften slightly and the mixture thickens, about 20 minutes.
  • Remove from the heat. Stir in the mustard and orange zest. Transfer to a bowl and let come to room temperature. Remove the rosemary sprig. Serve at room temperature.

1 large head fennel, finely chopped (about 2 cups)
2 cups orange juice
1/4 cup firmly packed brown sugar
1/4 teaspoon ginger, ground
1 large orange
1 tablespoon fresh cilantro, finely chopped
1 teaspoon salt

Steps:

  • Mix fennel, orange juice, sugar and ginger in large saucepan. Bring to boil on medium heat. Reduce hear to low; simmer 45 minutes.
  • Meanwhile, finely grate orange peel. Remove orange sections and coarsely chop. Stir grated peel and chopped orange into fennel mixture.
  • Simmer 15 minutes longer or until mixture is reduced and somewhat thick, Stir in cilantro and salt. Cover.
  • Refrigerate until ready to serve.

1/3 cup light soy sauce
1/2 cup orange marmalade
1/3 cup honey
1 tablespoon red wine vinegar
1 tablespoon red pepper flakes, crushed (optional)
1 -2 lb pork roast or 1 -2 lb pork loin
3 green onions, thinly sliced

Steps:

  • In a saucepan, bring the first 5 ingredients to simmer. mix to combine and cook for about 3-4 minutes.
  • Remove and cool to room temperature.
  • Preheat oven to 350°F degrees.
  • Place pork in baking dish and spread 1/3 of marmalade mix over the.top. Bake until the internal temp reaches 140°F degrees, about 40-60 minutes .(depending on the size of the pork.).
  • Baste with remaining marmalade twice more during the cooking time.
  • DO NOT OVERCOOK; the pork will continue to cook even after removing from the oven.
  • Sprinkle with chopped onions, if desired.
  • Let rest for 20 minutes before slicing.

1/2 cup dry coleman's mustard (about a 2-oz. can)
1/2 cup granulated sugar
1 pinch kosher salt
1 tablespoon all-purpose flour
1/2 cup apple cider vinegar
9 ounces prepared yellow mustard
1 tablespoon unsalted butter, melted
1 cup pomegranate juice
1 cup balsamic vinegar (a good balsamic, but not your most expensive bottle)

Steps:

  • Mix together the dry mustard, sugar, salt and flour.
  • Stir the vinegar, yellow mustard and butter into the mixture until well combined.
  • Refrigerate the mustard for at least 24 hours, which intensifies the heat.
  • To make a glaze for turkey, combine ½ cup of the mustard with 1 cup of pomegranate balsamic reduction (recipe follows).
  • Pomegranate Balsamic Reduction.
  • Heat over medium-low heat for 15-20 minutes or until the reduction is syrupy, but not as thick as molasses.

1 whole chicken, cut into 8 pieces, legs, breast and thighs (2 1/2 to 3 pounds)
1 teaspoon ground cinnamon
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
2 tablespoons extra virgin olive oil
5 garlic cloves, peeled
1 large yellow onion, peeled and coarsely chopped
2 cups water or 2 cups chicken broth
1 (6 ounce) can tomato paste
1 tablespoon dried Italian herb seasoning
1/2 cup grated parmesan cheese

Steps:

  • Pat chicken dry with paper towels. Mix cinnamon, salt and pepper in a small bowl, then rub all over the chicken pieces.
  • Using a deep, 12" wide skillet, heat the oil until it shimmers (if you have a smaller pan, make 2 batches, using half the oil for each). Add the chicken pieces, being careful not to overcrowd, and cook until very brown, 4-5 min per side.
  • Mince 3 cloves of garlic. Reduce heat to medium-high and add minced garlic and onions. Saute until onions soften and begin to brown, about 5 minute Deglaze with 1/2 c water or broth, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
  • When the deglazing liquid has evaporated to nearly dry, add the remaining 1 1/2 c water or stock, the tomato paste, the Italian seasoning and the remaining 2 cloves of garlic, minced.
  • Return the chicken to the pan, nestling it down in the sauce. If the sauce does not come 3/4 of the way up the side of the chicken pieces, add more water or broth. Cover and simmer over medium-high heat until tender, about 30-40 minutes. Season the sauce with salt and pepper. Sprinkle with Parmesan cheese. Serve with cooked orzo or rice.
