PAN FRIED TROUT

Pan Fried Trout image

The Rocky Mountains are known as a prime fishing destination, and as such, rainbow trout is often on the menu in Colorado, whether that's at a restaurant, in homes, or at campsites. This easy, classic Pan Fried Trout recipe makes a delicious, quick dinner of store-bought or fresh caught rainbow trout by lightly dredging it in seasoned flour then quickly searing it in a hot skillet with a little butter.

Provided by Amy Nash

Categories     Dinner

Time 18m

Number Of Ingredients 7

4 butterflied trout (beheaded, scaled, and pinbones removed)
1/4 cup all-purpose flour
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
2 Tablespoons butter
2 Tablespoons olive oil
Lemon wedges (for serving)

Steps:

  • Pat the filleted fish dry with paper towels. In a shallow pan, combine the flour, salt and pepper. Dredge the trout in the flour by pressing it down on both sides and shaking off the excess flour.
  • Heat a large cast iron skillet or other nonstick pan over medium high heat and melt the butter in it. Add the olive oil, then when hot, lay the trout fillets skin side down in the pan and cook for 3-5 minutes. Carefully flip with a thin, wide spatula and cook on the other side for another 3-5 minutes until golden brown, nearly opaque and the fish flakes easily with a fork. Don't overcook the fish!
  • Serve with lemon wedges for squeezing over the top of the pan fried trout.

MEDITERRANEAN PAN SEARED TROUT RECIPE WITH TZATZIKI

Mediterranean Pan Seared Trout Recipe with Tzatziki image

One of the easiest and best trout recipes I've tried! Trout fillets, seasoned with a couple of warm spices, and quickly seared in extra virgin olive oil. Serve it with a dollop of Greek tzatziki and a big salad for an easy dinner. More ideas in the notes, and be sure to see the step-by-step photos and tips in the post.

Time 16m

Number Of Ingredients 8

1 1/2 tsp ground coriander
1 tsp sweet paprika
1 tsp all-natural garlic powder (or 1 to 2 tsp garlic paste)
1 1/2 lb trout fillet (or butterflied trout fillet as in the pictures)
Salt and Pepper
All-purpose flour for coating (no more than 1/2 cup)
Extra virgin olive oil (I used Private Reserve Greek EVOO)
Lime wedges, for serving

Steps:

  • Mix the coriander, paprika, and garlic powder in a small mixing bowl.
  • Pat the trout fillet dry. Sprinkle with salt and black pepper on both sides, then season with the spices on both sides.
  • Coat the seasoned fish with the flour, shake off any excess flour (you only want a very thin layer).
  • In a large cast iron skillet, heat about 3 to 4 tbsp olive oil over medium-high heat until shimmering but not smoking (see note). Sear the trout fillets for 3 minutes on each side (start with skin-side down, and use a spatula to very carefully flip the fish fillets over).
  • Remove the fish from the pan and place it on a tray lined with paper towel to absorb any excess oil.
  • Transfer to serving platter and finish with a squeeze of fresh lime juice.

CORN PONE

Corn Pone image

My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. I cook it until it's crisp almost all the way through. It's delicious hot, warm or cold. -Tina Quiggle, LaGrange, Georgia

Provided by Taste of Home

Time 40m

Yield 10 servings.

Number Of Ingredients 5

1/2 to 3/4 cup canola oil or bacon drippings
2 cups yellow or white cornmeal
1 teaspoon salt
1-1/4 cups water
Optional: Butter and honey

Steps:

  • Preheat oven to 375°. Add oil to a 12-in cast iron or oven-proof skillet; place in oven. In a large bowl, whisk together all cornmeal, salt and water. Mixture will be thick. Carefully spread mixture evenly in skillet, spooning some of the oil on top of batter. Bake until edges start to brown, about 35 minutes. To serve, break into pieces and serve with butter and honey if desired.

CAST-IRON-SKILLET FRESH TROUT WITH CORNMEAL

Cast-iron-skillet Fresh Trout with Cornmeal image

Not far from Joe's Mountain Gardens in Celo is Canton, a mill town that is home to Sunburst Trout Farm (see Sources, page 264), where Sally Eason raises delicate pink trout in the pure water that rushes down Cold Mountain. If a campfire is not in your immediate future but you have some sparkling fresh trout, this works well on the stovetop, too. Serve it with wilted ramps (page 27) or other greens.

Yield serves 4

Number Of Ingredients 4

4 whole trout, about 12 ounces each, cleaned and gills removed
Kosher salt and freshly ground black pepper
2 cups finely ground white cornmeal
Expeller-pressed vegetable oil, as needed

Steps:

  • Prepare a hot campfire. Generously season each fish, inside and out, with salt and pepper. Pour the cornmeal onto a large plate and season it generously with salt and pepper.
  • When the fire dies down, place a grill rack over the bed of embers and assemble everything you will need: your largest cast-iron skillet, the oil, a thick dry towel or sturdy pot holder, a metal spatula, a pair of long tongs to adjust the embers or grill rack if needed, and a serving platter for the fish. When the grill is very hot, the flame has completely died down, and the coals are covered with ash, put the skillet on the center of the grate and let it get hot.
  • In the meantime, thoroughly coat each fish with a light dusting of cornmeal.
  • Add 1/4 inch of oil to the hot skillet and test the oil: a sprinkling of cornmeal should immediately sizzle. Shake any excess cornmeal from the fish and slowly lay them in the skillet (you may need to work in batches if your skillet is not large enough to fit them all). Keep a close eye on the fish as they cook, and rotate the pan or gently adjust the fish with the spatula and tongs as needed. Cook the fish for 4 to 6 minutes, until crispy and golden brown. Flip them over and continue until cooked through, 2 to 3 minutes. If the pan becomes dry during cooking, add a small amount of additional oil to the skillet.
