Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
- Bring a large pot of salted water to a boil. Add carrots and cook until tender, 15 to 20 minutes. Drain and mash. Stir in margarine, vanilla extract and eggs; mix well. Sift together flour, baking powder, salt and sugar; stir into carrot mixture and blend until smooth. Transfer to prepared casserole dish.
- Bake for 45 minutes.

Steps:
- Boil carrots until they are very soft and can easily be mashed.
- Process carrots in food processor or blender with butter, eggs, and sugar.Blend well until smooth.
- Separate a small amount of this mixture in a bowl and add flour and baking powder. Stir this.
- Add this mixture to the carrot blend and mix well.
- Add spices and almond or vanilla extract.
- Pour into lightly greased casserole or souffle dish.
- Crush graham crackers or use graham cracker crumbs and chop walnuts. Mix together.
- Add brown sugar.
- Add small bits of butter, rolling it around with your fingers in the crumbly mix to make small lumps of crumble.
- Add crumble topping to the casserole dish.
- Bake in the oven at 350 degrees for 45 minutes.

- Pre-heat oven to 350 degrees Pre-cook carrots. Put carrots and eggs in a blender and blend well on puree setting. Add sugar, butter, flour, baking powder, nutmeg and cinnamon. Blend until smooth. Pour into a 1 1/2 quart souffle dish. Combine the topping ingredients in a separate bowl and sprinkle over the souffle. Bake for 1 hour.

- Bring a stockpot of salted water to a boil. Cook carrots until tender, 10 to 15 minutes. Remove from heat, and drain well.
- Place carrots in a food processor with the margarine, and pulse to puree. Add the eggs, brown sugar, flour, baking powder, and baking soda, and process until smooth.
- Pour carrot mixture into a 1quart, round baking dish. Place the dish inside a larger dish with 1 inch of water to prevent burning bottom of casserole.
- Bake, uncovered, in the preheated oven for 1 hour, or until firm.

- Remove tops from carrots and set aside in refrigerator until ready to serve. Peel carrots and cut into chunks. In 3-quart saucepan, place carrots and enough water to cover. Heat to boiling; reduce heat to medium. Cover; cook about 20 minutes or until soft. Drain; cool slightly.
- Preheat oven to 350°F. Line a 9" x 13" baking dish with a single piece of heavy-duty aluminum foil that is longer than the pan by 3-inches on both ends. Grease the foil with butter or cooking spray.
- In food processor, place carrots, butter, sugar, flour, baking powder, vanilla, salt, and eggs. Cover; process until pureed. Spoon mixture into the foil-lined pan. Carefully start to lift the sides of the foil to create the carrot shape, pinching to seal the pointed end of the carrot. Use thin strips of wood to square-up the sides of the carrot and hold in place with crumbled up pieces of foil.

- Pecan Topping:.
- In medium bowl, mix grated carrots, pecans, and brown sugar. Sprinkle evenly over carrot mixture.
- Bake uncovered 55 to 65 minutes or until center is set and a knife inserted comes out clean.
- Remove from oven and unmold soufflé onto serving platter. Insert reserved carrot tops in to the top of the carrot shape.
- Serve warm.

One of the most-often-requested recipes from Piccadilly Cafeterias. I found it in the online edition of the Baton Rouge Advocate. This is not exactly health-conscious, due to the large amount of sugar, but it is delicious and i guarantee kids will eat these carrots!

- Steam or boil carrots til extra soft& drain well.
- While carrots are warm, add sugar, baking powder and vanilla.
- Whip with mixer til smooth.
- Add flour and mix well.
- Whip eggs separately and add to mixture, blending well.

- Heat oven to 400 degrees.
- Spray four 5-oz souffle molds, custard cups or ovenproof bowls with nonstick cooking spray; place in 15x10x1 inch baking pan.
- In a small saucepan bring the milk and butter just to a boil.
- Gradually add oats while stirring constantly.
- Reduce the heat to medium-low; cook 1 to 2 minutes or until oats thickened, stirring often.
- Remove from heat; pour the oat mixture into a large bowl.
- Add sugar, salt, cinnamon, sour cream and 1 egg yolk; stir until smooth.
- Add dried fruit and set aside.
- In a medium bowl beat all 3 egg whites until stiff but not dry.
- Gently fold egg whites into oat mixture using a rubber scraper.
- Do not overmix; small lumps of egg white will remain.
- Gently spoon the mixture into molds.
- Sprinkle the tops with brown sugar.
- Place in preheated oven and bake for 15 to 20 minutes or until souffles are puffy and a knife inserted in center comes out with a few moist crumbs.
- Serve immediately.

- 1. Preheat oven to 350 degrees. Grease an 8-inch square baking dish.
- 2. Bring a large saucepan of salted water to a boil. Add the carrots and shallots. Cook for 15-20 minutes, until carrots are tender. Drain and cool for 5 minutes, then add to food processor.
- 3. To carrots in food processor, add yogurt, eggs, baking powder, salt, pepper, cumin, and nutmeg. Pulse until smooth. Pour into prepared baking dish and set dish inside a larger baking dish. Pour hot water around smaller dish to a depth of ¾". Bake for 40 minutes.
- 4. In a separate bowl, mix Hidden Valley Original Ranch seasoning packet, cheese, chives, bread crumbs, almonds, and melted butter. Mixture will be crumbly. After souffle has baked for 40 minutes, sprinkle seasoning mixture over the top and return to the oven for about 15 minutes. When cheese is melted and top is golden, remove from oven. Allow to rest for 10 minutes before serving.
