CARROT RAISIN SALAD

This colorful traditional salad is one of my mother-in-law's favorites. It's fun to eat because of its crunchy texture, and the raisins give it a slightly sweet flavor. Plus, the dish is easy to prepare. -Denise Baumert, Dalhart, Texas

TUNISIAN BEEF PINWHEELS

Tunisian Beef Pinwheels image

I recently purchased a cookbook for DH, Better Homes and Garden New Grilling Cookbook. He looked through it and found this recipe. It is really very good and quite easy. Makes a wonderful presentation served with recipe #113983 and a green vegetable.

Categories     Steak

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 small onion, chopped
6 garlic cloves, minced
3/4 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
1 tablespoon olive oil
2/3 cup golden raisin
1/3 cup vegetable broth
1/2 teaspoon salt
1 1/2 teaspoons of fresh mint, snipped or 3/4 teaspoon dried mint, crumbled
1 (1 1/4 lb) beef flank steak

Steps:

  • Soak 24 inches of 100 percent-cotton string in water for 30 minutes; drain.
  • While string is soaking, in a large skillet, over medium heat, cook and stir the onion, garlic, cumin and crushed red pepper in hot oil until onion is tender.
  • Stir in raisins, wine or broth and salt; bring to boiling, reduce heat and simmer, uncovered approximately 10 minutes or until most of the liquid has evaporated; stirring occasionally.
  • Remove from heat and stir in mint, set aside.
  • Trim any fat from steak, place the steak between 2 sheets of plastic wrap and working from center to the edge with the flat side of a meat mallet pound the steak to about 1/2 inch thickness; approximately 12x8 inch rectangle.
  • Lightly tenderize meat with other side of mallet, remove plastic wrap; spread the raisin mixture on steak to within 1-inch of edge.
  • Fold over about 1/2 to 1 inch of ends of meat and roll up lengthwise, tie with string in 2 to 3 places.
  • Prepare a gas grill by preheating as per manufacturers directions, reduce heat to medium and adjust for indirect cooking, placing a drip pan under the meat.
  • Cook steak for 40 to 45 minutes or until internal temperature registers 150 degrees F.; remove from grill and cover with foil.
  • Allow the meat to stand covered for 10 minutes before slicing into 1-inch slices.

CABBAGE-CARROT ROLLS/PINWHEELS/STRUDEL

Cabbage-Carrot Rolls/Pinwheels/Strudel image

This is an easy and delicious variation on a cabbage streudel, and I often serve it on the holidays as a lovely addition to the table. You can surely substitute other vegetables, but this combination is my favorite. If you add the optional caraway seeds it has a nice eastern European taste to it.

Provided by Sarah Chana

Categories     Vegetable

Time 50m

Yield 12 serving(s)

Number Of Ingredients 8

1 (17 ounce) package puff pastry sheets
1 large onion, sliced very thin
oil
1/2 head fresh cabbage, shredded (or packaged coleslaw mix)
3 carrots, julienned
salt
2 teaspoons dried dill (or more)
2 tablespoons caraway seeds (optional)

Steps:

  • Defrost puff pastry sheets in refrigerator.
  • In a large frying pan, saute onion in oil on medium-high heat until soft and just turning brown.
  • Add cabbage, carrots and mix well. Season with salt, dill, caraway seeds.
  • Continue to cook until all vegetables are soft, about 10 minutes.
  • Let vegetables cool.
  • Roll out pastry dough until pretty thin. Place veggies on the dough, leaving about a 1" margin around the edges.
  • Roll up, jelly-roll fashion, and seal the open ends.
  • Place on baking sheet, seam side down. (I like to line my sheets with parchment paper, esp since the filling might leak.).
  • Repeat with other sheet of puff pastry dough.
  • Bake at 400F for about 25 minutes, or until the tops are golden-brown.
  • Slice with a serated knife.
  • Enjoy!

CARROTS AND RAISINS (HEALTHY SNACK)

Carrots and Raisins (Healthy Snack) image

This came from my mother who managed to grow two kids taller(and I mean taller!) then herself. We ate these carrots all the time! Overall is a great snack that is tasty. I suggest to adjust to your taste, some like it soggy some not, just don't make it in advance, will lose the carotene ;) Make sure to exclude raisins if prepared for infants or toddlers under 5. Use your own judgment but raisins ARE choking hazard.

Provided by iwyc4118

Categories     Lunch/Snacks

Time 6m

Yield 2 serving(s)

Number Of Ingredients 4

2 large carrots
1/4 cup raisins
3 tablespoons sour cream
2 -3 teaspoons sugar

Steps:

  • Place raisins in a small amount of water, so they plump up a little. (this step is optional) Grate carrots on a smallest part of your grater.
  • Combine grated carrots, sour cream, raisins (take them out of water prior) and then add sugar (adjust to your taste).
  • We love it just the way it is and my l'il one gets his nutrition.
  • Beware, this combination may make your kids grow few inches taller. Carotene with sour cream and sugar is a dangerous mix for your kid's growth potential.
