SWEET POTATO SAUSAGE FRITTATA (PALEO, WHOLE30)



Sweet Potato Sausage Frittata (Paleo, Whole30) image

This oven baked frittata recipe is so easy to make! Made with sweet potatoes, breakfast sausage, spinach and plenty of eggs this is the perfect healthy breakfast skillet for you and your family. Whole30 and Paleo too!

1 tablespoon avocado oil or ghee
3 garlic cloves, minced
1/2 large yellow onion, diced
1 pound grass-fed breakfast sausage
1 medium sweet potato, diced into 1/2″ cubes
12 eggs
1/4 cup coconut milk
1 teaspoon salt
1/2 teaspoon black pepper
2 oz spinach, roughly 2 handfuls
Parsley, to garnish

Steps:

  • Preheat oven to 350 degrees Fahrenheit. In a cast iron skillet (I used a 10 inch), cook breakfast sausage over medium-high heat, breaking up chunks with a spatula, until no longer pink. Once cooked, transfer to a plate.
  • Add oil to the same skillet and sauté garlic and onion for 2-3 minutes. Add sweet potatoes and cook on medium heat for 5 minutes, stirring frequently, until slightly golden brown. Add spinach and stir until wilted.
  • While sweet potatoes are cooking, whisk together coconut milk and eggs in a medium-large sized bowl.
  • Add breakfast sausage back to the cast iron skillet and stir in to sweet potato mixture. Pour whisked egg mixture evenly over sausage and sweet potatoes in cast iron. Press down sausage and sweet potato mixture into the eggs so that the mixture is completely covered.
  • Bake for 25 to 30 minutes until egg is golden brown and cooked thoroughly. The center of the frittata will no longer jiggle when fully cooked. Remove the skillet from the oven and place it on a rack to cool. Slice the frittata with a knife, garnish with parsley, and serve.

Steps:

  • Preheat oven to 350 F.
  • In a cast iron skillet, cook sausage over medium-high heat, stirring occasionally, until browned and crumbly, about 5 minutes. Transfer to a plate.
  • Heat 1 Tbsp olive oil over medium-high heat, and cook onion and bell peppers until soft. Add chopped sweet potatoes; season with salt, black pepper, oregano. Cover and cook, stirring occasionally, until tender, about 8 minutes.
  • Add cooked sausage, eggs, and stir everything. Cook until bottom is set, about 2 minutes.
  • Bake in a preheated oven for about 5 - 7 minutes, just until set. Garnish with chopped parsley and sliced avocado, if desired.

Steps:

  • Preheat an oven to 350 degrees.
  • Whisk together the eggs, coconut milk, salt, black pepper, garlic powder, and hot sauce until well combined.

1/2 pound bulk pork sausage
6 bacon strips, diced
1-1/2 cups finely chopped red potatoes
1 medium onion, finely chopped
8 large eggs
2 teaspoons dried parsley flakes

  • In a large cast-iron or other ovenproof skillet, cook sausage over medium heat until no longer pink. Remove and set aside. In the same skillet, cook bacon over medium heat until crisp. 2 cups cubed cooked red potatoes
8 eggs
¼ cup grated Parmesan cheese

  • Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.

5 slices thick-cut bacon, cut into 1/3-inch pieces (about 1 heaping cup)
8 large eggs
Kosher salt and freshly ground black pepper
Extra-virgin olive oil, if needed
1 small sweet potato, cut into 1/3-inch cubes (about 1 1/2 cups)
3 cups roughly chopped curly kale
1 cup grated white Cheddar

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the bacon to a 10-inch non-stick skillet and cook over medium-high heat, stirring regularly, until the bacon is crispy, about 10 minutes. Using a slotted spoon, remove the bacon to a paper towel-lined plate.
  • In a large bowl, add the eggs, 1/4 cup of water and 1/2 teaspoon each salt and pepper. Set aside.
  • Drain off all but 2 tablespoons of the bacon fat from the skillet. (If the bacon has not rendered enough fat, add 2 tablespoons of olive oil instead.) Return the skillet to medium-high and add the sweet potato, 1/4 teaspoon each salt and pepper and cook, stirring, until the potato is slightly browned and fork tender, 7 to 10 minutes. Add in the kale and a small pinch each of salt and pepper and cook, stirring, until wilted, about 4 minutes. Add the bacon back to the skillet. Turn the heat down to medium-low and add the egg mixture and half of the Cheddar. Using a rubber spatula, start lightly scrambling the eggs. When the edges begin to set, top with the remaining Cheddar and transfer the skillet to the oven. Bake until the egg is set and lightly puffed up, 5 to 7 minutes
  • Remove from the oven and let cool for 5 minutes. Slice into wedges and serve.

1 large brown onion, peeled and diced
1 red bell pepper, deseeded and diced (capsicum)
1 spicy sausage, chopped (Chorizo or spicy Italian works great!)
1 small sweet potato, peeled and diced
5 large eggs
1/2 cup skim milk
4 tablespoons parmesan cheese, grated

Steps:

  • Preheat a cast-iron skillet (or ovenproof frying pan) with the oil, then add the onion and bell pepper (capsicum) and fry till slightly softened over medium heat, then add the chopped sausage and fry till the sausage is cooked.
  • Meanwhile, either steam/boil/microwave the chopped sweet potato till it is almost completely cooked (i.e. soft enough to pierce all the way through but not mushy), then add this to the pan and stir it through for a few minutes to take on the other flavours of the dish.
  • Preheat your broiler.
  • Beat together the eggs and milk in a bowl, then carefully pour it over the top of the mixture, giving it a little stir to ensure the egg is getting right between all the chunks of sausage and vegetables.

1 1/2 ounces parmesan cheese

3 tablespoons extra virgin olive oil

1/2 lb turkey sausage
1 small onion, finely chopped
1 lb yukon gold potato, peeled and cut into 1/2-inch pieces
3 large kale leaves, stems and inner ribs discarded, leaves coarsely chopped

Steps:

  • Preheat the broiler and position the rack 8 inches from the heat. Crack the eggs into a large bowl. Add 2 tablespoons of grated Parmesan, season generously with salt and pepper and beat the eggs until blended.
  • In a large nonstick ovenproof skillet, heat 1 teaspoon of the olive oil. Add the sausage meat and onion and cook over moderately high heat, breaking the sausage up into small pieces, until browned and cooked through, about 5 minutes. Transfer to a plate. Add 2 tablespoons of the olive oil to the skillet and heat until shimmering.
