Nonstick cooking spray
2 1/2 cups all-purpose flour, plus more for dusting
Kosher salt
2 sticks (1 cup) cold unsalted butter, cubed
Up to 1/2 cup ice water
4 ounces thick-cut bacon, diced
3 large eggs
1/2 cup whole milk
1 cup crème fraîche
Ground white pepper
1/2 cup grated fontina cheese
2 tablespoons chopped fresh chives, plus more for garnish
1/2 cup cream cheese, at room temperature

Steps:

  • Preheat the oven to 375 degrees F. Place twenty-four 2 1/2-inch mini tart pans on a wire rack set in a rimmed baking sheet and spray with nonstick cooking spray.
  • In a food processor, combine the flour and a good pinch of salt and pulse to combine. Add the butter and pulse until the mixture resembles sand. Transfer to a medium bowl then slowly drizzle in enough of the ice water, folding with a wooden spoon, until the water is incorporated and a shaggy dough forms-all the water may not be needed; be careful not to overwork the dough. Turn the dough out onto a lightly floured work surface and form into a disc. Roll the dough to 1/4 inch thick and use a 3-inch round cutter to cut out 24 discs. Lay 1 disc in each prepared tart pan, pressing the dough firmly into the bottom and up the sides. Transfer to the freezer to firm up, about 30 minutes.
  • Meanwhile, heat a medium nonstick skillet over medium heat and add the bacon. Cook, stirring frequently, until browned and crispy, 3 to 5 minutes. Transfer the bacon to a paper towel-lined tray to cool for 5 minutes.
  • In another medium bowl, whisk together the eggs, milk, 1/2 cup of the crème fraîche and a pinch each of salt and white pepper. Transfer to a liquid measuring cup for easy pouring.
  • To assemble: Put a teaspoon of the bacon bits and a teaspoon of the fontina in the bottom of each tart shell. Top with a sprinkle of chives. You will have some bacon leftover to use as garnish. Pour the custard evenly into the tart shells and bake until the quiches are puffed and the crust is golden brown, about 35 minutes. Rotate the pan 180 degrees halfway through baking. Remove from the oven and immediately remove the quiches from the tart pans to cool on a wire rack. This will ensure a crisp crust.
  • Meanwhile, in a third medium bowl, combine the cream cheese, the remaining 1/2 cup crème fraîche and a pinch each of salt and white pepper. Whip with a hand mixer until light and airy, about 2 minutes. Dollop onto the cooled quiches and sprinkle with the remaining bacon bits and chives.

1 (12 ounce) package regular flavor Jimmy Dean sausage, cooked, crumbled and drained
8 eggs, lightly beaten
1/4 cup milk or 1/4 cup water
1/2-1 cup shredded cheddar cheese, mozzarella or 1/2-1 cup provolone cheese
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil or 1 tablespoon butter
1/2 cup thinly sliced onion
1/2 cup diced sweet red pepper (optional)
1 cup thinly sliced mushroom (optional)
1 cup frozen southern style hash brown potatoes, pre-baked red potatoes (optional) or 1 cup diced pre-baked red potatoes (optional)
1/4 cup parmesan cheese (optional)

Steps:

  • Preheat oven to 350°F.
  • In a large mixing bowl, combine eggs, milk or water, cheese, salt and pepper; set aside.
  • Heat olive oil or butter in a large skillet; sauté onions and any optional vegetables desired until vegetables are tender.
  • Add vegetables and sausage to egg mixture; stir well. Place 12 foil baking cups into cupcake pan.
  • Distribute sausage and egg mixture evenly into baking cups.
  • Bake for 22 minutes or until eggs are set.
  • Remove from oven.
  • Sprinkle with Parmesan if desired.

For ease you may use purchased miniature frozen tart shells, spicy Italian sausage works the best for this, if using mild sausage I recommend to add in the cayenne pepper --- these are very good!

1 cup butter, softened (can use margarine)
2 (3 ounce) packages cream cheese, softened
2 cups all-purpose flour
6 ounces bulk Italian sausage (such as Jimmy Dean's, use mild or spicy)
1 pinch cayenne pepper (use only if using milk sausage)
1/2-3/4 cup finely shredded swiss cheese (or as needed)
1 large green onion, minced (or use 2 tablespoons minced chives)
2 eggs
1 cup half-and-half cream
fresh ground black pepper (to taste)
1/2 cup grated parmesan cheese (or as needed)

Steps:

  • Lightly grease 36 miniature muffin tins.
  • In a bowl beat butter with cream cheese and flour until smooth.
  • Shape tablespoons of dough into balls.
  • Press 1 ball into the bottom and up the sides of each greased muffin cup.
  • Cover lightly with plastic wrap and refrigerate the tins until ready to fill.
  • In a skillet cook the sausage meat until no longer pink; drain fat and cool slightly.
  • Divide the sausage meat into each prepared dough/muffin tin.
  • Sprinkle a small amount of Swiss cheese over the top of the sausage meat then some green onions over the cheese.
  • In a bowl whisk the eggs with cream and black pepper.
  • Pour the egg mixture into each shell then sprinkle Parmesan cheese on top.
  • Bake at 375 degrees F for about 20-25 minutes or until browned.

Use spicy or mild sausages for this, I made this using small breakfast sausages with casings removed in place of the Italian sausages and added in some cayenne pepper to the sausage mixture.

8 ounces Italian sausages (casings removed)
cayenne pepper (optional)
2 tablespoons oil
2 -3 tablespoons butter
8 ounces fresh sliced mushrooms
1 green onion, minced
1/3 cup shredded swiss cheese
2 -3 tablespoons grated parmesan cheese
1 teaspoon seasoning salt (or to taste)
1 teaspoon black pepper
5 eggs
3 egg whites
1 cup half-and-half

Steps:

  • Set oven to 325 degrees (oven rack set to second-lowest position).
  • Generously spray 12 regular-size muffin tins with cooking spray.
  • Heat oil in a large skillet over medium heat.
  • Add in the sausage meat and cayenne pepper (if using) and cook breaking up meat with a spoon into very small pieces; cook for about 10 minutes or until the meat is browned, transfer to a large bowl.
  • Add in butter to the skillet; add in sliced mushrooms and cook for about 7-10 minutes or until browned; remove the mushrooms to the bowl; cool then chop into small pieces and add to the bowl with the cooked sausage meat.
  • Add in the Swiss cheese and Parmesan cheese, finely chopped green onion, black pepper and seasoned salt to the sausage/cheese mixture; mix to combine.
  • In a bowl whisk eggs, egg whites and half and half cream together until blended.
  • Divide the egg mixture between each muffin tin.
  • Sprinkle about 2 tablespoons sausage mixture on top of the egg mixture.
  • Bake for about 25 minutes or until the tops are just beginning to brown.
  • Let cool for 5 minutes in the tins.
  • Place a rack on top of the pan, then flip it over and turn the quiches out onto the rack.
  • Turn upright and let cool.
