500 g jerusalem artichokes, scrubbed, sliced
500 g carrots, sliced
500 g potatoes, sliced
1 medium onion, chopped
2 garlic cloves, crushed
75 g butter
1 dash olive oil
3 pints light stock
1/2 teaspoon chili powder
1/2 teaspoon paprika
1 teaspoon dried thyme
salt
fresh ground pepper

Steps:

  • Melt the butter with a dash of olive oil in a large pot and soften the onion for a few minutes, before adding the garlic.
  • After a few minutes add spices and herbs, the carrots, potatoes and artichokes, and let them sweat for 10 minutes on a low heat with the lid on.
  • Pour in the stock, stir well, put the lid back on and simmer for a further 20 minutes or until the vegetables are soft.
  • You can the blend all or half of the soup. I personally prefer to leave some veggie chunks in mine!
  • Taste to check the seasoning, re-heat and serve.

1 pound Jerusalem artichokes
Juice of 1/2 lemon
4 tablespoons butter
1 leek, white part only, sliced into 1/2inch pieces
1 carrot, sliced into 1/2inch rounds
3 cups chicken stock (preferably homemade) or water
Salt and freshly ground black pepper
1/2 cup heavy cream
Freshly grated nutmeg

Steps:

  • Brush and scrub Jerusalem artichokes under cold running water. Cut them into 1/4inch slices and toss with lemon juice. Melt butter in a 4quart nonreactive saucepan. Add leek, carrot and Jerusalem artichokes with the lemon juice. Cover and cook over gentle heat for 20 minutes. Add 2 1/2 cups stock or water, 1 teaspoon salt and 1/4 teaspoon pepper. Cover and simmer for another 25 minutes. When cooked, remove from the heat and puree the soup with an additional 1/2 cup stock, or water and cream. Pass puree through a drum sieve. Return soup to a clean saucepan and reheat.
  • Ladle soup into warm soup bowls and dust each portion with fresh grated nutmeg.

1 lemon, halved
1 pound Jerusalem artichokes
3 tablespoons unsalted butter, plus more, melted, for dish
1 1/2 pounds fingerling or other small potatoes, skins on, cut into thirds lengthwise
9 medium carrots, peeled and cut into 1/2-inch rounds
4 small cloves garlic, peeled and thinly sliced lengthwise
3 tablespoons coarsely chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper
1 cup heavy cream
2 ounces Gruyere cheese

Steps:

  • Preheat oven to 425 degrees with rack positioned in the center. Squeeze the juice from two lemon halves into a medium bowl of water. Peel and cut the Jerusalem artichokes lengthwise into thirds, and add to the acidulated water. Butter a shallow 7 1/2-by-11 1/2-inch ovenproof baking dish, and set aside.
  • Place the potatoes, carrots, garlic, and 2 tablespoons parsley in a large bowl. Remove the Jerusalem artichokes from the water, pat dry, and add to the bowl. Sprinkle generously with salt and pepper. Toss to combine, and arrange the vegetables in an even layer in the prepared dish. Dot with the butter.
  • Pour cream into a small saucepan; heat over medium-high heat just until it comes to a boil. Pour hot cream over vegetables; cover dish tightly with aluminum foil. Place the dish on a rimmed baking sheet to catch any cream that might bubble over. Transfer both baking sheet and dish to oven, and cook until potatoes begin to soften, about 30 minutes.
  • Reduce oven temperature to 400 degrees. Remove aluminum foil; stir vegetables so they are coated with cream. Continue cooking until the tip of a knife easily pierces potatoes and artichokes, about 30 minutes more.
  • Preheat the broiler. Using the large holes of a box grater, grate the cheese, and sprinkle over the gratin. Place dish under broiler, and cook just until the cheese is golden brown and crusty. Sprinkle with remaining tablespoon parsley, and serve hot.

2 medium onions, peeled and diced in 1/2-inch pieces
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1 1/2 pounds Jerusalem artichokes (also known as California sunchokes), peeled
4 cups chicken broth
Salt and freshly ground pepper to taste
10 to 12 blanched almonds
2 tablespoons water
Pinch saffron
Juice of 1/2 lemon
2 tablespoons flat parsley with stems, diced

Steps:

  • Using a heavy casserole, sweat the onions in the olive oil over low heat, covered, about 20 minutes. Uncover, add the garlic and artichokes and increase heat. Continue sauteeing for a few more minutes.
  • Add the chicken broth, and salt and pepper to taste. Bring to a boil, and cover. Simmer for 30 minutes.
  • Meanwhile, using a spice grinder, grind the almonds, and mix with water. Whisk mixture into the soup with the saffron strands and the lemon juice. Reheat, sprinkle with parsley and serve.

  • Combine Jerusalem artichokes and potatoes in large pot. Pour enough cold water over to cover; add 1 tablespoon coarse salt. Bring to boil; reduce heat and boil gently until all vegetables are tender when pierced with knife, about 18 minutes. Drain, reserving cooking liquid. Return vegetables to pot. 2 pounds (1 kilogram) russet potatoes, peeled and cut into quarters
12 ounces (375 grams) Jerusalem artichokes, peeled
1 medium celery root (celeriac), peeled, cut in half, then cut into thick slices
3 tablespoons unsalted butter, at room temperature
Sea salt and freshly ground black pepper

Steps:

  • 1. Fill a large bowl with water, squeeze the half lemon into it, and then add the lemon half as well, Peel the potatoes and the Jerusalem artichokes, placing them directly in the acidulated water.
  • 2. Bring plain water to a boil in the bottom of a vegetable steamer. Place the celery root in the top and cook until it begins to turn tender, 10 minutes. Add the potatoes and cook until the celery root is nearly tender through, 10 minutes. Then add the Jerusalem artichokes and cook until they are tender through, about 10 minutes.
  • 3. Transfer the vegetables to a large bowl, of to the bowl of an electric mixer fitted with the dough blade, and blend to a consistent but slightly chunky purée (do not puré them in a food processor or they will turn to glue). Add the butter and continue mixing until it is incorporated. Season to taste with salt and pepper, and serve piping hot.

  • Add lentils not drained into pot.
