SWEET CORN ICE CREAM

1 14.75-ounce can cream-style corn
1 1/2 cups half-and-half
1/2 cup sour cream
2/3 cup sugar
1/2 teaspoon vanilla extract
5 large egg yolks
Caramel corn or bourbon, for topping (optional)

Steps:

  • Make the custard: Whisk the corn, half-and-half, sour cream, sugar and vanilla in a medium saucepan and bring to a simmer over medium heat. Lightly beat the egg yolks in a medium bowl. Slowly whisk about 1/4 cup of the warm corn mixture into the beaten egg yolks, then pour into the saucepan and return to medium heat. Cook, stirring constantly with a wooden spoon, until the mixture thickens and coats the spoon, about 5 minutes.
  • Transfer the hot custard to a blender and pulse until smooth (keep the filler cap slightly open to let steam escape). Strain the custard through a fine-mesh sieve into a large bowl; discard the solids. Stir often until the mixture cools to room temperature. Lightly press plastic wrap directly against the surface of the custard to prevent a skin from forming. Chill until cold, about 3 hours. (For faster chilling, set the bowl of custard in a bowl of ice water and stir until cold.)
  • Freeze the cold custard in an ice cream maker according to the manufacturer's directions. Transfer to an airtight container and freeze until firm, 2 to 3 hours.
  • Scoop the ice cream into bowls. Top with caramel corn or a splash of bourbon, if desired.

8 ounces (8 to 9 slices), applewood-smoked bacon, cut crosswise into 1-inch pieces
1 large egg white
1/4 teaspoon kosher salt
1/3 cup sugar
1 cup raw almonds (about 5 ounces)
1 cup walnuts, coarsely chopped (about 4 ounces)
1/4 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 325 degrees F. Cook the bacon over medium heat in a large skillet until brown and crisp, 8 to 9 minutes. Remove the bacon using a slotted spoon and drain on paper towels. Pour 1/4 cup of the bacon fat on a heavy rimmed baking sheet and spread evenly.
  • Beat the egg white and salt until just foamy using a whisk in a medium bowl. Gradually add the sugar and beat until just blended. Add the almonds, walnuts and cayenne pepper. Toss until the nuts are coated.
  • Spread the nut mixture in a single layer on the baking sheet. Bake until the nuts are crisp and brown, about 35 minutes, turning and stirring the nut mixture with a metal spatula every 10 to 15 minutes. Cool for 2 hours.
  • Transfer the nut mixture to a bowl; add the bacon pieces and toss to blend. This recipe can be prepared 1 day ahead and stored in an airtight container in the refrigerator.

6 ears corn
1 tablespoon butter
3 tablespoons diced shallots, diced
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoons brown sugar
1 tablespoon honey
1/4 teaspoon cayenne pepper

Steps:

  • Cut the corn off of the cob. Put 1 tablespoon of butter in a saute pan on medium-high heat and cook the shallots until they are translucent with salt and pepper; about 2 to 3 minutes. Add the corn and cook until tender
  • In a bowl add brown sugar, honey and cayenne pepper. Mix well to combine and stir into corn mixture to cook for a few minutes, stirring constantly.

1 pound bacon
1 cup packed light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
  • Separate the bacon into strips and blot each dry. Spread the sugar on a large plate. Press both sides of each bacon strip in the sugar. Arrange the coated bacon on the prepared baking sheets. Sprinkle with any remaining sugar.
  • Bake the bacon for 15 minutes, turn the strips over and continue to bake until golden and glazed, 15 to 20 minutes more (it will still be pliable). Remove to a rack and let cool; the bacon will harden but it won't be super crispy.

12 slices bacon, about 1/4-inch thick
Finely ground black pepper
1/3 cup light brown sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
  • Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

  • Heat a large saucepan over medium heat. Add 1 cup of the heavy cream, milk, corn cobs and kernels, and a pinch of salt. Scrape the seeds from the vanilla beans into the milk mixture and add the bean as well. Bring mixture to a scald (just under when it starts to bubble), being careful to not curdle the cream. Remove pan from heat, cover, and let mixture steep for about 30 minutes.
  • Towards the end of that 30 minutes, in a separate medium bowl, whisk together the egg yolks with the sugar, until it reaches a creamy, golden consistency.
  • Strain the corn mixture and discard the kernels, cobs, and vanilla bean. Return corn milk mixture to saucepan and warm slightly over medium/medium low heat. Whisking constantly to avoid eggs from scrambling, slowly add half of the mixture to the egg yolks, until fully incorporated. Return egg yolk mixture to the saucepan.
  • Cook custard over medium/medium low heat, stirring constantly, until it thickens to a consistency that coats the back of a spoon. When you run your finger across the spoon, it should leave a definite trail. If using a thermometer (which I always do), aim for 170°F-175°F.
