Steps:
- Peel and roughly chop 2 pounds carrots. Cook in boiling salted water until soft, about 20 minutes; drain. Puree with 3 tablespoons olive oil; season with salt and pepper. Warm 1 tablespoon olive oil with 1 teaspoon each grated ginger and orange zest; drizzle over the mash.
- Use a food processor or immersion blender to puree these veggies-they're too fibrous for a potato masher.

- Prepare potatoes: Peel, quarter lengthwise, and cut crosswise into 1/4-inch-thick slices; rinse well in 3 or 4 changes of cold water and drain.
- Melt butter in large saucepan over medium heat. When foaming subsides, add carrots and cook, stirring occasionally, until butter is browned and carrots are caramelized, 10 to 12 minutes. (If after 4 minutes vegetables have not started to brown, increase heat to medium-high.).
- Add potatoes, broth, and 3/4 teaspoon salt and stir to combine. Cook, covered, over low heat (broth should simmer gently; do not boil), stirring occasionally, until potatoes fall apart easily when poked with fork and all liquid has been absorbed, 25 to 30 minutes. This recipe is so simple but was not posted so I thought I would post it. I used left over cooked carrots and rather than reheat them I threw them in with the potatoes for the last 5 minutes cooking time. The amount of Carrot & potato should be about equal. You may add parsley, bacon, turnip or any other ingredient that you wish or have them plain like this recipe. Excellent way to use up left over veggies.

- Once water is boiling, cover the pot, reduce heat, and let the veggies steam for about 20-25 minutes, or until you can easily pierce them with a fork.
- When the veggies are cooked, drain the remaining liquid. Return the vegetables to the pot and add minced garlic, almond milk, butter, thyme, cinnamon, nutmeg, salt, and pepper.

- Rinse, peel, and chop potatoes and carrots into large bite-sized pieces (see photo) and add to a large pot or Dutch oven. Cover with water by about 1 inch to ensure they're submerged.

- Heat oil in a medium-sized pot with a tight fitting lid over medium high heat. Add onions and carrots and fry until onion is transparent, about 2 minutes.
- Add water, cover and bring to a boil. Reduce heat to low and simmer for about 5 minutes.

- You can leave the potato peels on if you like but we think this works better with red potatoes than with russets.

- Preheat your oven to 400 degrees. Cover a cookie sheet in aluminum foil. Cover the cut sides of the butternut squash in ½ Tbs olive oil, a hefty pinch of salt, a hefty pinch of black pepper, a hefty pinch dried thyme, and a hefty pinch of rubbed sage. Rub the spices into the squash. Place the squash cut sides down onto the cookie sheet. Roast the squash in the oven for 45 minutes, until soft and you can easily stab it with a knife. Set aside once done.
- While the butternut squash is roasting, boil water in a large pot. Put the sliced carrots and potatoes inside and cook until you can easily stab both the potatoes and carrots with a knife, about 25-28 minutes. Strain and set aside.
- In a frying pan, add a heaping ½ cup minced onion and 2 Tbs minced garlic. Add 1 Tbs butter or ghee and 1 Tbs olive oil to the pan, mix, and cook over medium heat for 4 minutes, mixing every so often. Add 1 Tbs dried parsley, mix and cook for another 1-2 minutes.
- Then, take the boiled carrots and potatoes, and the garlic onion mixture and put into a blender or food processor. Puree until smooth. Then pour the mixture into a large bowl.

- Put the potatoes and carrots in a pot cover with cold water. Add about a teaspoon of salt to the water.
- Put the pot in the stove and bring to the boil. Cook for approximately 15 - 20 minutes, until the carrots and potatoes are soft.
- Drain the water and add the spices, butter and cream. Mash roughly with a fork or potato masher.

- In a large pot, cover the carrots with water. (*Make sure you fill it with enough water so when you add the potatoes they will be covered too.) Bring to a boil and cook carrots until tender (about 15-20 minutes).
- Add potatoes to the same pan and continue boiling carrots and potatoes together until potatoes are fork tender (about another 15 to 18 minutes) .
- Drain potatoes and carrots in a colander and return to the large pot. Mash with a potato masher until mostly mashed (*see tips section). Add butter, pepper, salt and Lawry’s seasoning and continue mashing with the potato masher, adding milk a little at a time until desired consistency is reached. Use a hand mixer and continue mixing on medium speed for just about 30 seconds to get them light and fluffy. (*You may still have small pieces of carrots, that’s ok!).

- In a small sauce pan, combine the carrots, onion, and enough chicken broth to cover. Bring to a boil and cook until very tender. Drain.
- Prepare the mashed potatoes. Place chopped, peeled potatoes and cover with cold water. Add salt, pepper, and about a tablespoon of butter. Bring to a boil and cook until very tender but not falling apart, about 20 minutes.
- Combine the milk and half-and-half in a coffee mug and heat in the microwave for about 1 minute, until just warmed through.
- When the potatoes are tender, drain but reserve a little of the cooking liquid. Add about 3 tablespoons of the cooking liquid back into the potatoes, and mash by hand at first. Once the biggest chunks are broken down, turn on the the electric mixer and add the milk/half-and-half mixture until the desired consistency is reached. Note: you will not use all of the milk mixture.
