CARNIVAL CRUISE CAKE
From our honeymoon cruise with Carnival. This chocolate pudding-centered cake was a staple on the menu in 2007, but after finding the recipe online, we can make it anytime we want. My husband and I are health conscious and this cake definitely isn't, but enjoying it about once a year just takes us back... and some things are just good for the soul. As a side note, varying times and temperatures varies in turn the center of the cake, which can be pudding-like, fudge thick or, my personal preference, molten sauce.

Steps:
- Melt chocolate and butter over low heat.
- In mixing bowl, mix eggs and sugar, then add flour. Slowly whisk into the melted chocolate mixture.
- Pour into greased 4-ounce ramekins.
- Bake at 400 F for 12-14 minutes.
- Makes one serving to share. Double or triple recipe for guests.

MELTING CHOCOLATE CAKE (FROM CARNIVAL CRUISE LINES)
Absolutely one of the FINEST chocolate desserts I've ever eaten. I even repeated our visit to the dining room just so I could have another go at this dessert before we got off the boat. Carnival passed this recipe out in the dining room the last night of the cruise and I'm SOOO happy they did!

Steps:
- Melt chocolate and butter together.
- Mix half of eggs and sugar and whisk for a few minutes. Add flour. Then add rest of the eggs.
- Add egg mix to the melted chocolate mix.
- Pour mixture in individual ramekin cups.
- Bake in oven at 390 degrees (200 celsius) for 15-20 minutes.
- To serve, sprinkle top with powdered sugar and serve with a scoop of vanilla ice cream on the side.

Steps:
- Preheat oven to 375.
- Grease a 9-inch springform pan, and dust with unsweetened cocoa powder.
- Melt chopped chocolate and butter in a heavy saucepan over low heat, stirring until smooth.
- Whisk together egg yolks and vanilla in a large bowl. Gradually stir in warm chocolate mixture, whisking until well blended.
- Beat egg whites at high speed with electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves and stiff peaks form. Fold one-third beaten egg white mixture into chocolate mixture; gently fold in remaining egg white mixture just until blended. Spoon batter into prepared pan, spreading evenly.
- Bake for 25 minutes. (Do not overbake!) Let stand in pan on a wire rack 10 minutes before removing sides of pan.

- RedFrog Rum Bar. As its name suggests, RedFrog Rum Bar has a variety of rum-based drinks to fit a cool Caribbean vibe. On Carnival Ecstasy, the RedFrog Rum Bar was much smaller than the images I saw online for other ships.
- Carnival Deli. One of Carnival’s signature food options is the Carnival Deli, which serves old-time favorite sandwiches. There was a large menu with both hot and cold sandwich options.
- Pizza Pirate. Located in the Lido Buffet next to Carnival Deli, Pizza Pirate serves up small, hand-tossed pizzas. This pizza parlor is open 24 hours, so it’s very popular at night when guests have late-night munchies.
- Piano Bar. The Piano Bar is another classic Carnival venue that contributes to the overall high-energy, nightclub vibes each night aboard the ship. I have never been to a piano bar at sea; it was certainly a fun place to stop by on our last night!
- Lido Marketplace. The Lido Marketplace is the large buffet that serves breakfast, lunch and dinner. In comparison to other ship buffets, it was smaller than I anticipated.
