WALNUT BREAD

Walnut Bread image

The affinity of walnuts and whole wheat plays out well in this fairly simple loaf. I ramped up the walnut component by mixing in toasted pieces, including ground nuts along with the flour and even adding some walnut oil to the dough. Making this bread is straightforward enough for the home cook to master, and using a mere pinch of yeast will give the dough a nice rise. This dough would also welcome raisins, olives or pieces of figs along with the walnuts. I have found that the best way to introduce ingredients like these is to knead them in after the first rise.

Categories     project, appetizer, side dish

Time 3h30m

Yield 2 loaves

Number Of Ingredients 8

2 1/3 cups/225 grams chopped walnuts
2 teaspoons/7 grams active dry yeast (1 packet)
1 tablespoon/15 grams sea salt
3 tablespoons/45 milliliters maple syrup
4 tablespoons/60 milliliters walnut oil
2 cups/250 grams whole-wheat flour
3 cups/375 grams bread flour
Coarse cornmeal, for dusting baking sheet

Steps:

  • Toast walnuts in an oven or under the broiler. Set aside to cool.
  • Place yeast in a large mixing bowl. Mix salt into 2 cups (473 milliliters) lukewarm water. Stir into yeast. Stir in maple syrup and 2 tablespoons oil.
  • Measure 1 cup of the toasted walnuts, place in a food processor with 2 tablespoons of the whole-wheat flour and process until finely ground. Add to bowl along with remaining whole-wheat flour. Stir with a wooden spoon.
  • Add bread flour 1/2 cup at a time until dough forms and leaves the sides of the bowl. (At this point you're better off mixing with your hands.) Turn dough out onto a floured work surface. Continue adding bread flour, kneading as you go, until you have a dough that's a bit on the soft side, only slightly sticky and easy to handle.
  • Clean out your bowl, coat it with 1 tablespoon oil, and place dough back into the bowl, turning it so it's oiled all over. Cover with a cloth and set aside to rise until doubled, about 1 1/2 hours.
  • Punch the dough down, add remaining toasted walnuts and lightly knead them into the dough. Dust a spacious baking sheet with cornmeal. Divide the dough in half, shape into 2 balls and place on the baking sheet. Cover loosely and let rise for an hour.
  • Place the oven rack in the lowest position and heat oven to 450 degrees. Slash the tops of the breads with a razor or a lame (a baker's blade). Do not be tentative about this step; your slashes should be a good half-inch deep, done with a firm, even hand.
  • Place the baking sheet in the oven. Throw a handful of ice cubes on the floor of the oven to create steam. Bake 20 minutes. By this time the breads should be a nice honey-brown. Brush them with remaining 1 tablespoon oil, reduce heat to 350 degrees, add more ice cubes and bake about 25 minutes longer, until the breads are well browned and sound hollow when tapped. Allow to cool at least 1 hour before cutting.

WHOLE WHEAT BREAD WITH RAISINS AND WALNUTS

Whole Wheat Bread with Raisins and Walnuts image

Categories     Bread     Nut     Bake     Dried Fruit     Raisin     Walnut     Winter     Whole Wheat     Bon Appétit

Yield Makes 1 loaf

Number Of Ingredients 14

1 1/4 cups lukewarm water (85°F to 95°F)
1 tablespoon active dry yeast (for do-ahead version) or quick-rising dry yeast (for same-day version)
1 cup warm whole milk (105°F to 115°F)
2 tablespoons honey
1 tablespoon salt
1/4 cup (1/2 stick) unsalted butter, melted, cooled slightly
1 1/2 cups whole wheat flour
1/2 cup rye flour
1/2 cup oat bran
1 tablespoon unsweetened cocoa powder
2 1/2 cups (about) bread flour
1/2 cup raisins
1/2 cup chopped walnuts
Nonstick vegetable oil spray

Steps:

  • Stir 1 1/4 cups water and yeast in large bowl to blend. Stir in warm milk, honey, and salt, then melted butter. Add 1 1/2 cups whole wheat flour and stir vigorously with wood spoon until well incorporated. Add 1/2 cup rye flour, oat bran and cocoa powder and stir until well blended. Add enough bread flour, 1/2 cup at a time, to form moist and sticky dough, stirring vigorously with wood spoon until well incorporated. Mix in raisins and walnuts. Cover bowl with plastic wrap. For do-ahead version: Refrigerate dough overnight. For same-day version: Let dough rise in warm draft-free area until doubled in volume, about 1 hour (do not punch down dough).
  • Spray 9x5x3-inch metal loaf pan with nonstick spray. Transfer dough to prepared pan, being careful not to deflate dough. Cover loaf pan loosely with plastic wrap. Let rise in warm draft-free area until dough is puffed and almost reaches top of pan, about 45 minutes for refrigerated dough and 20 minutes for room-temperature dough.
  • Meanwhile, position rack in center of oven and preheat to 500°F. Generously spray inside of oven with water (about 8 sprays); immediately place bread in oven. Lower oven temperature to 400°F and bake bread until top is deep brown and crusty and tester inserted into center comes out clean, about 45 minutes. Cool in pan on rack 10 minutes. Turn bread out onto rack and cool completely.

WALNUT WHOLE WHEAT BREAD

Walnut Whole Wheat Bread image

This 100% whole wheat bread, moist and tender, has the nutty taste of both the wheat itself, and walnuts. It's great for sandwiches, or try it toasted and spread with jam at breakfast -- delicious!. From King Arthur Flour, Prep time includes rising time.

Provided by Annacia

Categories     Yeast Breads

Time 3h5m

Yield 1 loaf

Number Of Ingredients 7

2 teaspoons instant yeast (or 1 packet active dry yeast)
1 1/4-1 1/3 cups water (start with the smaller amount)
1 tablespoon vegetable oil
2 tablespoons brown sugar or 2 tablespoons honey, firmly packed
3 cups whole wheat flour (or White Whole Wheat)
1 1/4 teaspoons salt
3/4 cup toasted walnuts (finely chopped or crushed)

Steps:

  • The recipe directions are written for instant yeast; to use active dry yeast, dissolve it in the water first. Also, be aware that your rising times will be longer.
  • Mixing In a large bowl, combine all of the ingredients and stir till the dough starts to leave the sides of the bowl. Transfer the dough to a lightly floured or lightly greased surface, and knead it for 6 to 8 minutes, or until it begins to become smooth and supple. (You may also knead this dough in an electric mixer or food processor, or in a bread machine set to the dough or manual cycle). Transfer the dough to a lightly greased bowl, cover the bowl, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 1 to 2 hours, depending on the warmth of your kitchen.
  • Shaping Transfer the dough to a lightly oiled work surface, and shape it into an 8-inch log. Place the log in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 90 minutes, until it's domed about 1 inch above the edge of the pan. A finger pressed into the dough should leave a mark that rebounds slowly.
  • Bake the bread in a preheated 350°F oven for about 35 to 40 minutes, until it's light golden brown. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or measuring its interior temperature with an instant-read thermometer (it should register 190°F at the center of the loaf.) Remove the bread from the oven, and cool it on a wire rack before slicing. Store bread in a plastic bag at room temperature.

WHOLE WHEAT ROLLS WITH CURRANTS AND TOASTED WALNUTS

Whole Wheat Rolls With Currants and Toasted Walnuts image

This recipe was in Ladie's Home Journal (1998) featuring "Daily Breads" (good enough to eat daily). The hearty rolls are dark colored with a nice glossy sheen and are great for breakfast, lunch, or dinner. Uses a food processor. Dough comes together in about 20 minutes but must allow time for two rises. These remind me of Bagel Energy Bars.

Categories     Breads

Time 40m

Yield 16 rolls

Number Of Ingredients 13

1 cup currants or 1 cup raisins
3/4 cup hot water
1/4 ounce instant yeast (one package)
3/4 cup warm water (110-115 degrees F)
3 tablespoons honey
2 tablespoons butter or 2 tablespoons margarine, melted and cooled
2 cups whole wheat flour
2 cups all-purpose flour
1/3 cup wheat germ
1 teaspoon salt
1 1/2 cups walnut pieces, toasted
1 tablespoon cornmeal
1 large egg white, lightly beaten

Steps:

  • Combine currants and hot water in glass measuring cup and let stand ten minutes, until currants are plump and water is a light caramel color.
  • Remove currants with slotted spoon and add enough water to return current liquid to 3/4 cup.
  • Meanwhile, sprinkle yeast over warm water (this is the other 3/4 cup water, not the reserved current water) in small bowl and let stand until creamy.
  • Add yeast to reserved currant liquid and stir in honey and butter.
  • Pulse flours, wheat germ, and salt in a large-capacity food processor.
  • With machine on, add yeast mixture through feed tube, processing just until mixture comes together.
  • Process 30 seconds more, until the dough forms a ball.
  • Add reserved currants and walnuts, pulsing a few times until the walnuts are chopped.
  • On lightly floured surface knead dough until currants and walnuts are evenly distributed.
  • Place dough in lightly greased large bowl, turning to grease top.
  • Cover bowel with plastic wrap and let rise in warm place until doubled in bulk, 1 hour.
  • Grease a large cookie sheet and sprinkle with cornmeal.
  • Divide dough into 16 equal pieces and shape each piece into a ball.
  • Arrange balls about 1 1/2 inches apart in four rows on prepared sheet.
  • Cover and let rise until almost doubled in bulk, 45 minutes to an hour.
  • Arrange oven rack to lower third of oven and heat oven to 425 degrees.
  • Brush roll tops with egg white.
  • Bake 18 to 20 minutes, until golden brown.
  • Cool on wire rack.
  • Serve warm or at room temperature.
  • These rolls freeze very well.

WHOLE WHEAT CINNAMON RUM ROLLS

Whole Wheat Cinnamon Rum Rolls image

Provided by Food Network

Categories     dessert

Time 2h50m

Yield 30 rolls

Number Of Ingredients 18

2 scant tablespoons or 2 (1/4-ounce) packages active dry yeast
1/2 cup warm water (about 110 degrees)
1 1/2 cups warm milk (about 110 degrees)
1/2 cup vegetable shortening
1/2 cup honey
3 large eggs
1 tablespoon lemon juice
2 teaspoons salt
3 tablespoons soy flour (optional)
5 1/2 to 6 1/2 cups whole wheat flour
1/4 cup melted butter
1 cup firmly packed brown sugar
3 tablespoons cinnamon
1/2 cup raisins (optional)
1/2 cup chopped nuts (optional)
2 cups powdered sugar
1 tablespoon rum extract
5 to 7 tablespoons heavy cream

Steps:

  • In a large bowl, stir yeast into water to soften. Add milk, shortening, honey, eggs, lemon juice, salt, soy flour, and 2 cups whole wheat flour. Beat vigorously for 2 minutes. Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the side of the bowl.
  • Turn dough onto a floured work surface. Knead, adding flour a little at a time, until you have a smooth, elastic dough. Place dough into an oiled bowl. Turn to coat the entire ball of dough with oil. Cover with a tightly woven towel and let rise until doubled, about 1 hour.
  • Turn dough onto a lightly oiled work surface and divide in half. Roll each half with a rolling pin into a 12 by 18-inch rectangle. Brush dough with melted butter, leaving a 1/2-inch border along one long side of the rectangle free of butter.
  • Combine brown sugar, cinnamon, raisins, and nuts. Sprinkle evenly over each portion of dough. Roll up into 2 (18-inch) cylinders and pinch the loose edge to the cylinder. Cut into 30 rolls (15 from each cylinder) and place cut-side up into 2 parchment-lined 9 by 13-inch pans. Cover with a tightly woven towel and let rise until almost doubled, about 45 minutes.
  • About 10 minutes before baking, preheat oven to 375 degrees (350 if using glass pans). Bake for 20 minutes or until the internal temperature of the rolls reaches 190 degrees. Leave the rolls in the pan to cool since they benefit from the steam -- it makes them softer. Allow the rolls to cool for 15 minutes.
  • Combine powdered sugar, rum extract, and milk. Mixture should be the consistency of honey (if it isn't, adjust by adding more cream to thin it or powdered sugar to thicken it). Drizzle over the top of the rolls.

  • In a large bowl, stir together 2 cups of the all-purpose flour and the yeast. In a medium saucepan, heat and stir milk, butter, sugar, and salt just until warm (120 degrees F to 130 degrees F) and butter almost melts. Add milk mixture and egg to flour mixture. Beat with an electric mixer on low to medium speed for 30 seconds, scraping side of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in whole wheat flour, cranberries, nuts, orange peel, and as much of the remaining all-purpose flour as you can.
  • Turn out dough onto a lightly floured surface. Knead in enough of the remaining all-purpose flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape the dough into a ball. Place in a lightly greased bowl; turn once. Cover; let rise in a warm place until double in size (about 1 hour).
  • Punch down dough. Turn out dough onto a lightly floured surface. Divide dough in half. Cover; let rest for 10 minutes. Meanwhile, lightly grease twenty-four 2-1/2-inch muffin cups.
  • Divide each portion of the dough into 36 pieces. Shape each piece into a ball, pulling edges underneath to make a smooth top. Place 3 of the balls into each prepared muffin cup, smooth sides up. Cover and let rise in a warm place until nearly double in size (about 30 minutes). Preheat oven to 375 degrees F.
