2 pounds skirt steak
1/2 cup cilantro leaves and stems, finely chopped
1/2 cup olive oil
1/3 cup freshly squeezed orange juice (1 large orange)
1/4 cup freshly squeezed lime juice (2 limes)
3 tablespoons honey
2 tablespoons Mexican oregano or other oregano
4 cloves garlic
1 serrano chile, seeds removed
Kosher salt and freshly ground black pepper
2 limes, cut into wedges, for serving

Steps:

  • Place the skirt steak in a large glass bowl or resealable plastic bag.
  • To make the marinade, add the cilantro, olive oil, orange juice, lime juice, honey, oregano, garlic and serrano chile to a blender. Season with a small pinch of salt and pepper. Blend for 35 to 40 seconds to combine.
  • Pour the marinade all over the steak, moving it around to make sure everything is covered. Cover or seal and transfer to the refrigerator and allow to marinate for at least 1 hour, but no more than 6 (too long in the marinade will cause the steak to begin breaking down).
  • Preheat a grill or grill pan over medium-high heat.
  • When ready, remove the steak from the marinade, letting the excess drip off. Sprinkle generously with salt and pepper and grill about 4 minutes per side for medium.
  • Remove to a cutting board and allow to rest for 5 to 7 minutes. Slice the steak against the grain and serve with the lime wedges.

3 whole dried ancho chiles, stems and seeds removed (see note)
3 whole dried guajillo chiles, stems and seeds removed (see note)
2 whole chipotle peppers, canned in adobo
3/4 cup (180ml) fresh juice from 2 to 3 oranges, preferably sour oranges
2 tablespoons (30ml) fresh juice from 2 to 3 limes
2 tablespoons (30ml) extra-virgin olive oil
2 tablespoons (30ml) soy sauce
2 tablespoons (30ml) Asian fish sauce, such as Red Boat
2 tablespoons (30g) dark brown sugar
1 small bunch cilantro, leaves and tender stems only, divided
6 medium cloves garlic
1 tablespoon whole cumin seed, toasted and ground
1 teaspoon whole coriander seed, toasted and ground
Kosher salt
2 pounds (900g) skirt steak (2 to 3 whole skirt steaks), trimmed and cut with the grain into 5- to 6-inch lengths (see note)
Warm corn or flour tortillas, lime wedges, diced onion, fresh cilantro, and avocado, for serving

Steps:

  • When ready to cook, remove the extra salsa from the fridge to allow it to warm up a little. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill, and preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate.

This traditional Mexican dish is made by marinating skirt steak in a spicy, citrusy puree, charring it on the grill and then thinly slicing the meat. We suggest serving carne asada as a main dish with rice and beans, but you could also add it to tacos, burritos, tostadas and more.

4 cloves garlic, roughly chopped
2 medium jalapeno chiles, stemmed and roughly chopped
Juice of 2 limes, plus extra wedges for serving
Juice of 1 orange
1 1/2 cups lightly packed fresh cilantro (leaves and tender stems)
1/4 cup olive oil, plus more for the grill
3 tablespoons sugar
2 tablespoons distilled white vinegar
Kosher salt and freshly ground black pepper
One 2-pound skirt steak

Steps:

  • Add the garlic, jalapenos, lime juice, orange juice, cilantro, olive oil, sugar, vinegar, 1 teaspoon salt and several grinds of pepper to a food processor and puree until very smooth.
  • Cut the steak crosswise into thirds (skirt steak is typically long and skinny, so this will make the pieces more manageable when grilling). Place in a large resealable plastic bag, then pour in the marinade, flipping and massaging the steak to make sure it's evenly coated. Remove as much air as possible, then seal the bag and refrigerate for 2 to 4 hours (any longer and the citrus juice will start to "cook" the steak).
  • Preheat a grill for medium-high heat and brush the hot grates with oil. Remove the steak from the marinade, letting excess drip off, and season both sides with a pinch each of salt and pepper. Grill until nicely charred on the outside, 3 to 4 minutes per side for medium-rare. Transfer to a cutting board to rest, about 10 minutes. Thinly slice the steak against the grain, then serve with lime wedges.

1/2 cup soy sauce
6 cloves garlic, minced
Juice of 2 limes
1 large handful fresh cilantro, leaves and stems, finely chopped
1 jalapeno, seeded and minced
2 tablespoons red wine vinegar
1 teaspoon freshly ground cumin, seeds lightly toasted
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Lay the skirt steak in a large nonreactive bowl or baking dish.
  • Combine the oil, soy sauce, garlic, lime juice, cilantro, jalapeno, red wine vinegar, cumin, sugar and 1 tablespoon each salt and pepper. Pour the marinade over the steak, making it's well coated. Cover and refrigerate for 4 to 6 hours, or overnight.
  • Preheat a grill or cast-iron skillet to high heat. Remove the steak from the marinade, sprinkle both sides with salt and pepper, and place it on the grill. (If cooking indoors, remove excess marinade, as the garlic may burn and smoke).
  • Grill the steak for just a few minutes per side, depending on thickness, until it is cooked to your preference. You may need to work in batches.
  • Transfer the steak to a cutting board and let rest for 5 minutes. Slice the steak thinly against the grain on a diagonal and serve.

I couldn't find quite the right burger for tonight so I made this one up and thought it turned out rather well -Hope you try it. I did not include possible garnishs' to the ingredient list because it is up to you what you enjoy on a burger. Avocado would go will on this one. I added 2 cheese slices, raw sweet onion sliced 1/4" thick, sliced tomatoes and my choice of Salsa was Habanero/ Mango Salsa. I used "El Mexicano" prepared Carne Asado powder however there are recipes on Zaar if you wish to make your own spice powder. For this burger I like a full 6 ozs of meat. Make as many burgers as you wish just keep repeating the recipe

6 ounces lean ground chuck or 6 ounces other lean ground beef
salt & pepper
1 teaspoon carne asada spice mix
3 teaspoons 2% fat cottage cheese
2 teaspoons salsa, your choice
1 cup sliced fresh mushrooms
1 large hamburger bun

Steps:

  • Make 2- 3 oz meat patties, sprinkle with salt& pepper Sprinkle with the Carne Asada, add the cottage cheese in the center of one patty, top with the other patty and carefully seal the edges.
  • Refrigerate for apprx 1 hour, covered Spray a fry pan with pam or olive oil& turn the heat to high.
  • Add the patty and brown on one side for 3 minutes, don't let it burn.
  • Turn the heat to medium, flip the patty and cover the pan, continue cooking for 3 minutes.
  • Add mushrooms, replace lid, turn heat to medium low.
  • Continue cooking until the mushrooms are golden and the burger is cooked through apprx 5 more minutes.
  • Meanwhile toast one side of each half of the bun, butter it if you wish.
  • Top the burger with the salsa. Serve the mushrooms on the burger or on the side, Add whatever garnish you want on the burger and enjoy.

1 tablespoon canola oil, plus more for grilling
Juice from 2 limes
Zest from 1 orange
Juice from 2 oranges
4 cloves garlic, rough chopped
1 small onion, finely chopped (about 3/4 cup)
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon kosher salt
2 pounds skirt steak (1 large steak, cut in half)
Six 10-inch flour tortillas, heated
Cilantro Pesto, recipe follows
4 small or 2 large ripe tomatoes, seeded and inner flesh removed, julienned
Charred Salsa, for dipping, recipe follows
1 cup toasted pumpkin seeds
4 cups fresh cilantro, leaves and tender stems
1 cup fresh parsley leaves
Juice from 2 limes
1/2 cup extra-virgin olive oil
2 jalapenos, seeds and ribs removed, chopped
Kosher salt and freshly ground black pepper
12 ounces large tomatillos (about 3), husks removed and cleaned
3 cloves garlic, skin intact
2 plum tomatoes
1 small yellow onion, skin and root intact, quartered
1 dried ancho chile
1 poblano chile
1/4 cup fresh cilantro leaves
1 teaspoon agave nectar
Juice of 1 lime
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Mix the oil, lime juice, orange zest and juice, garlic, onions, chili powder, cumin and salt in a bowl until combined. Adjust seasoning if necessary. Transfer the marinade into a large freezer bag. Add the steak and marinate in the fridge for at least 4 hours or maximum overnight.
  • Heat a grill or grill pan to medium-high heat and lightly coat with canola oil. Pull the steak out of the marinate and grill until charred and nice and crusty, 5 to 7 minutes a side. Remove and let rest for 10 minutes before slicing. Slice the meat thinly against the grain.
  • For the sandwich build: Place the tortilla flat and smear on even layer of Cilantro Pesto. Sprinkle with tomatoes and pile on the steak. Wrap it up tight and eat whole, or slice in half on the bias -- just don't forget to dunk it in plenty of Charred Salsa.
  • Place the pumpkin seeds into a dry skillet and toast on medium heat until lightly golden and fragrant, 5 to 6 minutes. Add the cilantro, parsley, olive oil, lime juice and jalapenos into a food processor, and then pulse until smooth but still slightly chunky. Adjust seasoning as you see fit.
  • Heat a large grill pan to medium-high heat. Add the tomatillos, garlic, tomatoes, onion, ancho and poblano chiles. Char on all sides until blackened in parts, removing the charred vegetables and chiles to a cutting board once blackened. Depending on their size, each vegetable will char at a different rate.
  • Place the charred ancho chile into a small bowl and pour enough hot water to cover it. Allow to sit until the chili is softened, 8 to 10 minutes. When softened, remove the stem and seeds.
  • Remove the stem and seeds from the charred poblano as well as the stem and skins from the charred garlic cloves and onion quarters.
  • Put the soaked ancho and poblano chiles, tomatillos, garlic, tomatoes, onion, cilantro, agave and lime juice into the bowl of a food processor and blend until mostly smooth. Season with salt and pepper to your heart's content.

I saw Bergy had a recipe for Carne Asada Burgers, and while they weren't quite what I wanted, they inspired me to make up my own. We thought they were delicious! I am very much a cheeseburger person, but I didn't miss the cheese at all. In fact, I think it would not be as good with cheese as it was without it, except maybe pepper jack. Prep time includes marinading time.

1/4 cup lime juice, plus
2 tablespoons lime juice
1/4 cup olive oil, plus
2 tablespoons olive oil

2 dashes cumin
2 dashes garlic powder
4 lean frozen beef burger patties, thawed
2 bunches green onions, trimmed to about 3-4-inch long
1/4 cup mayonnaise
1/4 cup thick salsa (I used Pace Chipotle Thick & Chunky Salsa)
1 avocado, peeled and thinly sliced
4 buns

Steps:

  • Combine 1/4 c lime juice, 1/4 c olive oil, salt, pepper, cumin, and garlic powder in a large ziplock bag. Add beef patties in a single layer and lay flat to marinade. Marinade 1-2 hours, turning to marinade both sides evenly.
  • Combine 2 tbsp lime juice, 2 tbsp olive oil, salt, pepper, cumin, and garlic powder in a small ziplock bag. Add green onions; marinade 1-2 hours, shaking now and then.
  • Combine salsa and mayonnaise and mix well; refrigerate sauce until needed.
  • Grill beef patties over gas or coals until cooked to desired doneness (about 12-15 minutes for 1/2 inch patties over hot coals for medium-well).
  • Grill green onions for a couple of minutes, until cooked and just charred around the edges. Toast buns if desired.
  • Assemble burgers by spreading salsa sauce on buns, topping with beef patties, grilled green onions, and avocado slices.
