DEVILED EGGS BENEDICT BURGER
Sounds confusing? Don't worry, it's not, despite the quantity of steps. This is a spicy burger on an English Muffin topped with a fried egg and covered in a spiced up hollandaise. If you're on a diet, replace the fried eggs with egg whites, mayonnaise with Greek yogurt and bacon with turkey bacon. It'll get you 99% of the way there for a fraction of the calories. Great with a side of sweet potato hash browns for a Sunday brunch.

Steps:
- In a large mixing bowl, combine all burger ingredients then separate into two 1/4 lb. patties and set aside.
- In a separate mixing bowl, combine all hollandaise ingredients, then whisk together until eggs are scrambled and evenly combined.
- Toast two English muffins, then set on plates.
- Cook two strips of bacon in a large frying pan over high heat, then wrap in a paper towel and set aside. Leave the bacon grease in the pan.
- Cook burgers in the grease, flipping once, for about 5 minutes per side. Place them on top of the English muffins.
- Add the two whole eggs to the hot pan, right on top of the browned bits from the burger, and fry them. Flip once. Cook them however you like, but I prefer to leave them under-done so the yolk is a bit runny. When done, add them to the top of the burgers.
- Give the pan a quick rinse under COLD water. Don't worry about getting it super clean, you're mostly just cooling the pan down for the sauce. This is a VERY important step.
- Put the pan back on LOW heat and add the hollandaise mixture. Stir it vigorously and continuously. If the pan is too hot or you don't stir quick enough, the eggs will scramble and ruin the sauce. Continue cooking for 2-3 minutes until the mixture thickens, then pour it over the burger.
- Top with bacon.

GRANDMA CADDELL'S HOT CAKES
This recipe came from my grandmother, who made us hotcakes every Sunday morning. These are very lite and sweet enough to eat without syrup. She made these grapefruit-size. You could also put fruit on these and serve with no syrup as a desert. This is the only recipe our family has ever used. I made them for a friend once, and she liked them, but said they were sweet and tasted more like a crepe. Anyhow, they are quick and easy to make.

Steps:
- Mix all dry ingredients in a med. size bowl.
- Then add enough milk and stir until smooth.
- Add eggs.
- Add vanilla.
- Stir again.
- If needed, add more milk. The batter should be a bit on the thin consistency side.
- Let these set for about 5 min, and they will thicken a little.
- Drop batter on either a ungreased griddle, or a non stick fry pan on medium heat. The first pancake is always the test to see if your pan is on the right heat. You can make these any size you want, but grapefruit size is the way grandma always made them.
- This recipe can also be halved. And, these freeze up great! I freeze them for my family for a quick breakfast, or after school snack.

CINNAMON HOT CAKES
These are the best pancakes that we've ever tried. It was originally just a pancake recipe passed down from my mother which we have enjoyed for a number of years. The only change we have made was adding cinnamon. We love to eat them hot with butter melting over them and smothered in Aunt Jamima's pancake syrup. Awesome for Saturday morning breakfast. And it only takes about 15 minutes! Fry up some bacon or Breakfast sausage to make it even better.
