For an elegant main course, serve Ina Garten's Salmon Cakes, made with a mix of fresh veggies, capers and Old Bay, from Barefoot Contessa on Food Network.

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

1 1/4 lbs skinless salmon
1 cup panko bread crumbs, (divided)
2 1/2 Tbsp minced fresh parsley
2 green onions, (chopped (1/3 cup))
1 garlic clove, (minced (1 tsp))
3 Tbsp mayonnaise
1 1/2 tsp lemon zest, (plus lemon wedges for serving)
1 tsp dijon mustard
3/4 tsp old bay seasoning
1 egg yolk
Salt and freshly ground black pepper
6 Tbsp olive oil, (divided)

Steps:

  • Using a sharp knife coarsely chop salmon to a sausage like texture (approx. 1/4-inch pieces). This can also be done in a 3 batches in quick bursts in a food processor.
  • In a large mixing bowl stir together 1/4 cup panko bread crumbs, parsley, green onions, garlic, mayonnaise, lemon zest, dijon mustard, old bay seasoning, egg yolk, 1/2 tsp salt (or to taste) and 1/4 tsp pepper.
  • Add salmon then toss well to evenly coat with mixture. Scoop mixture 1/3 cup at a time creating 8 equal portions.
  • Pour remaining 3/4 cup panko into a shallow dish. Press and shape portions into 3-inch patties then coat and gently press into panko, coating both sides.
  • Pour 3 Tbsp oil into a large non-stick skillet and heat to medium-high heat.
  • Add four salmon patties (if needed carefully tilt pan for oil to run under salmon if it isn't already). Let fry until golden brown on bottom, about 2 minutes.
  • Carefully flip and continue to cook until second side is golden brown and patties are just cooked through, about 2 minutes longer.
  • Let drain on paper towels then repeat with repeat process with remaining four salmon patties. Serve warm with lemon wedges for spritzing over.

1 1/4 pounds center-cut salmon fillet, skin and pin bones removed
2 tablespoons dijon mustard
1 tablespoon mayonnaise
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
Pinch of cayenne pepper
2 scallions, chopped
1 cup plus 2 tablespoons panko (Japanese breadcrumbs)
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil, plus more for brushing
4 brioche buns, split
Tartar sauce and arugula, for topping

Steps:

  • Cut three-quarters of the salmon into 1/4-inch pieces. Put in a large bowl. Cut the rest of the salmon into chunks; transfer the chunks to a food processor along with the mustard, mayonnaise, lemon juice, lemon zest and cayenne. Pulse to make a paste. Add the pureed salmon mixture to the bowl with the diced salmon. Add the scallions, 2 tablespoons panko, 1/2 teaspoon salt, and black pepper to taste. Gently mix until just combined.
  • Line a baking sheet with parchment paper and brush with olive oil. Divide the salmon mixture into 4 mounds on the parchment paper. With damp hands, pat into 4-inch-wide, 3/4-inch-thick patties. Cover loosely with plastic wrap and refrigerate at least 30 minutes.
  • Preheat the broiler. Spread the remaining 1 cup panko on a plate. Press both sides of the salmon patties in the panko. Heat the olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add the patties (in batches if necessary) and cook until browned on the bottom, 3 to 4 minutes, adjusting the heat if necessary. Turn and cook until the other side is browned and the patties feel springy in the center, 3 to 4 more minutes. Transfer to a paper towel-lined plate to drain; season with salt.
  • Meanwhile, arrange the buns, cut-side up, on a broiler pan and broil until toasted, 1 to 2 minutes. Serve the patties on the buns; top with tartar sauce and arugula.

Steps:

PANKO PARMESAN SALMON

Of all the recipes I make, this one is my husband's favorite for salmon. It's made with panko, or Japanese bread crumbs, which are very light and crunchy, mixed with Parmesan cheese. It's baked in the oven until the panko is nice and toasted.

Two 6-ounce cans pink salmon in oil or spring water, drained
4 scallions, sliced thin
1/2 cup panko breadcrumbs
1/4 cup olive oil
1/2 cup mayonnaise
1/2 lemon, juiced
2 teaspoons chopped capers
Hot sauce, to taste
Kosher salt and freshly ground black pepper
4 whole-wheat buns, toasted
1/4 head green leaf lettuce
4 slices tomato
1/2 cup pickle slices

Steps:

  • For the patties: Mix together the egg, mayonnaise, mustard, seafood seasoning, lemon juice and hot sauce in a bowl until thoroughly combined. Fold in the salmon, scallions and panko until the mixture is combined again. Form into 4 patties, then set aside.
  • Place a large skillet over a medium-high heat and add the oil. When the oil is hot, add the patties and cook until golden and crisp, 4 to 5 minutes per side. Drain on a paper towel.
  • For the caper mayo: Mix together the mayonnaise, lemon juice, capers, hot sauce, salt and pepper.
  • To assemble: Spread some of the caper mayo on the bottom of a toasted bun. Top with a salmon patty, lettuce, tomato and pickle. Spread the other half of the bun with a bit more of the mayo and place on top. Repeat with the remaining ingredients. Serve.

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

1 medium red onion chopped
1 medium yellow onion chopped
1 medium green bell pepper, chopped
5-6 medium mini red peppers, chopped
1 Tbsp lemon pepper (no salt added)
1 Tbsp granulated garlic
2 c all purpose flour seperated
5 large eggs slightly beaten, divided (3 plus 2)
2-3 Tbsp coconut oil or canola (start with 2, add more if needed)
PANKO BREAD CRUMB MIXTURE
2 1/2-3 c panko bread crumbs
1 1/2-2 Tbsp old bay seafood seasoning
2 tsp paprika

Steps:

  • 1. Drain canned salmon and add to a large bowl, remove bones, and skin and any undesirable pieces, then flake into pieces.
  • 2. Chop bell peppers, mini peppers, & onions and add to bowl along with 1 CUP of flour and slightly beaten eggs. Mix together to combine and shape into desired patties.
  • 3. Add the Panko breading ingredients into a large gallon size closable bag and shake together to blend, set aside till needed.
  • 4. Add the remaining cup of flour to a plate or platter, and coat each patty on both side with flour, add more when & if needed. With the remaining eggs, add 2 tablespoons of water beat till blended, in a small pan or bowl, and carefully place each patty in egg wash coating each side then coat with Panko bread crumbs on both sides. Allow patties to sit at least 10 to 15 minutes so crumbs will adhere to surface.
  • 5. Melt oil in large skillet over medium high heat, when hot, add the patties,& brown on one side then flip to other side about 5 to 7 minutes per side.
  • 6. Serve with lemon wedges and other condiments as desired.

PANKO SALMON PATTIES

Easy and delicious, this recipe is an updated version of my mom's. She used cracker crumbs, I use panko. She used Wonder bread, I use hearty white or challah. I use fish sauce, she used a little of the juice from the can. Instead of margarine or oil, I use real butter. I think she would approve. (Recipe may be halved, but we really enjoy making enough for a second meal and sandwiches!)

1/4 teaspoon(s) salt
1 1/2 teaspoon(s) fish sauce
2 1/2 to 3 slice(s) hearty white bread, torn into tiny pieces (dime-size)

Steps:

  • Drain and discard liquid from salmon; discard bones and skin, if desired.
  • Place salmon in mixing bowl; mix salt and fish sauce into beaten eggs; pour over salmon.
  • Using well-washed hands (food service gloves recommended,) mix lightly, add torn white bread crumbs and mix well, but try to preserve some larger pieces of salmon.
  • Line a baking sheet with parchment or wax paper.
  • Pat the salmon down into the bowl evenly; use a knife to score and cut into 8 equal pieces (or you may just "eyeball" it, if you prefer.)
  • Form each piece into a ball and place on baking sheet.
  • Place panko in a shallow bowl or pie pan.
  • Form a ball of the salmon into a patty, about an inch thick; place patty in panko, press it lightly and cover all sides with the panko.
  • Return patty to baking sheet; repeat until all patties are coated with panko.
  • Place baking sheet with patties in refrigerator and allow to chill for 20 to 30 minutes.
  • In large skillet, melt 2 tablespoons butter over medium heat; add salmon patties and fry, checking for browning, for approximately 7 minutes per side. Adjust heat as necessary to prevent over-browning. Add more of the butter as needed, especially as they are turned.
  • Press the patties lightly as they fry. They will be firm and browned when finished. Remove from heat and serve immediately.
  • Cover and refrigerate leftovers. Makes a great sandwich, also.

1/3 cup chopped fresh cilantro

  • Process the first 9 ingredients in a food processor until the vegetables are minced.
  • Combine the salmon with the vegetable mixture, then form it into 8 cakes on a parchment-lined baking sheet using a 1/3-cup measure. Lightly press into 1-inch thick patties, cover, and chill for 30 minutes. Preheat oven to 400°.
  • Heat the oil in an ovenproof sauté pan over medium-high. Add cakes and fry for 2 minutes per side, or until browned. Transfer pan to the oven and cook cakes through, 2-4 minutes.

  • Drain salmon and remove skin and bones.
  • Mix all salmon pattie ingredients except for panko crumbs and add those to get a moldable texture.
  • Spray a nonstick muffin pan with vegetable spray - about 7 out of 12 muffin cups.
  • Add mixture to fill each cup, just short of full and top with panko crumbs.

1 slice white bread, such as Pepperidge Farm, crusts removed and white part chopped very fine (about 5 tablespoons)
2 tablespoons mayonnaise

3/4 teaspoon table salt
1 1/2 tablespoons fresh lemon juice
1/2 cup unbleached all-purpose flour
2 large eggs, lightly beaten
1/2 cup vegetable oil, plus

3/4 cup Japanese-style bread crumbs (Panko)

Steps:

  • 1. Locate and remove any pin bones from salmon flesh, (see related Quick Tip). Using sharp knife, cut flesh off skin, then discard skin. Chop salmon flesh into 1/4- to 1/3-inch pieces and mix with chopped bread, mayonnaise, onion, parsley, salt, and lemon juice in medium bowl. Scoop a generous 1/4-cup portion salmon mixture from bowl and use hands to form into a patty measuring roughly 2 1/2-inches in diameter and 3/4-inch thick; place on parchment-lined baking sheet and repeat with remaining salmon mixture until you have 8 patties. Place patties in freezer until surface moisture has evaporated, about 15 minutes.
  • 2. Meanwhile, spread flour in pie plate or shallow baking dish. Beat eggs with 1 1/2 teaspoons vegetable oil and 1 1/2 teaspoons water in second pie plate or shallow baking dish, and spread bread crumbs in a third. Dip chilled salmon patties in flour to cover; shake off excess. Transfer to beaten egg and, using slotted spatula, turn to coat; let excess drip off. Transfer to bread crumbs; shake pan to coat patties completely. Return now-breaded patties to baking sheet.
  • 3. Heat remaining 1/2 cup vegetable oil in large, heavy-bottomed skillet over medium-high heat until shimmering but not smoking, about 3 minutes; add salmon patties and cook until medium golden brown, about 2 minutes.   • Preheat your oven to 200C and then lay out the salmon on a large backing tray coated with foil or greaseproof paper.
  • Mix together the finely chopped herbs and the lemon and lime juices in a bowl.
  • With a brush, spatula or spoon, evenly apply a thin layer of the mixture to the bare fish, making sure the ends are coated.
  • To make the panko breadcrumb seasoning, put the panko breadcrumbs into a mixing bowl.
  • Sprinkle a small amount of oil on to them so that the other ingredients stick to them well.
  • Put in the Basil and Mint and begin mixing the breadcrumbs with a spoon, making sure the herbs are spread across the mixture.
  • Add the fresh Dill, Tarragon and Lemon Juice and continue to mix.
  • After mixing, dice the garlic and add it to the breadcrumb mixture. Then mix it again until you start smelling a slight fragrance of garlic from the bowl.
  • Dice the onion into small to medium chunks and add them to the mixture. Mix the breadcrumbed mixture until onions are evenly mixed in.
  • Apply your breadcrumbs to the garnished fish, making sure it is mostly covered and the mix is evenly applied to the fish.
  • Place the breaded fish into the oven for 15-20 minutes until the edges are slightly browning.
  • Serve with minted roast potatoes and boiled carrots.

OVEN BAKED SALMON PATTIES

A healthier version of the usual pan fried salmon patties, the recipe is for 2 people, but can be doubled for larger amounts. My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! I combined an oven fried eggplant method into this and he loved it!

1 large egg, beaten
1 1/2 tablespoons mayonnaise
1/4 cup green onion
1/4 cup dried parsley
1/2 teaspoon garlic salt
1/2 teaspoon lemon pepper
1/8 teaspoon pepper
mayonnaise, as needed
1/2 cup panko breadcrumbs
1/4 cup parmesan cheese
1 tablespoon italian seasoning, Tony's seasoning, etc mixed-as desired
cooking spray

Steps:

  • Mix Salmon, and first 8 ingredients together, use large egg, if seems dry, add mayo untill it seems moist enough form into 4 patties and refrigerate for at least 1 hour, to firm. Mix rest of dry ingredients in a bowl. When oven is hot, spread patties with mayonaise, one side at a time, place in panko mixture, to absorb as much as possible, repeat with other side, place on cookie sheet sprayed with cooking spray and bake in 425 degree oven for 10 min., turn patties over and cook for 10 minutes more, checking to see if they are done to your likeness. Oven fries or sweet potato fries can be done at the same time and go great with this!

1 tsp seafood seasoning, preferably Old Bay seasoning
½ lemon, juiced
Hot sauce, to taste
2 6-ounce cans of pink salmon in oil or spring water, drained
4 scallions, thinly sliced
½ cup panko breadcrumbs
¼ cup olive oil
½ cup mayonnaise
½ lemon, juiced
2 tsp chopped capers
Hot sauce, to taste
Kosher salt and freshly ground black pepper
Whole-wheat buns, toasted
¼ head green leaf lettuce
4 slices tomato
½ cup pickle slices

Steps:

  • Stir the egg with the mayonnaise, mustard, seafood seasoning, lemon juice, and hot sauce in a bowl.
  • Fold in the salmon, scallions, and panko.
  • Shape into 4 patties and set them aside.
  • Heat the oil in a large skillet set over medium heat.
  • Cook the salmon patties in the hot oil for 4 to 5 minutes on each side, or until golden and crisp.
  • Drain on paper towels and set them aside.
  • In a bowl, whisk the mayonnaise with the lemon juice, capers, hot sauce, salt, and pepper.
  • Feel free to add mustard or dry herbs if you wish.
  • Spread some of the caper mayo sauce on the bottom of a toasted bun.
  • Top with a salmon patty, fresh lettuce, a tomato slice, and a quarter of the pickles.
  • Top with more caper mayo sauce and sandwich with the other half of the bun.
  • Repeat this process to make another four burgers. You can also make double burger salmon patties if you like.
  • Serve the salmon patties on buns with fries and roasted veggies.

Ready, Set, Cook! Special Edition Contest Entry. Easy make-ahead salmon patties are perfect for busy weeknights. I like to make several and freeze them. Last weekend we went to Yosemite and cooked them up on a camp stove. I served them on whole wheat buns with a home made tarter sauce. Simple, lots of flavor and nutritious.

1 lb fresh salmon fillet, chopped small
3 tablespoons olive oil
3 green onions, sliced
1 small red bell pepper, chopped small
2 garlic cloves, minced (1 teaspoon)
1 cup Simply Potatoes Traditional Mashed Potatoes
1/4 cup sun-dried tomato, snip with kitchen scissors into small pieces
1 egg
1/2 teaspoon salt
1/2 teaspoon lemon pepper
1 cup panko breadcrumbs

Steps:

  • Heat 1 tablespoon olive oil in saute pan, add red bell pepper, garlic and green onion. Cook on medium-low heat for 5 minutes to soften. Cool slightly then add to a bowl with the chopped salmon, mashed potatoes, egg, sun-dried tomatoes, salt and lemon pepper. Mix thoroughly then form into patties (about 6-8). Place patties in a dish with the panko bread crumbs, turn patties to coat with crumbs. Refrigerate or freeze for later. To serve, heat 2 tablespoons olive oil in pan, add thawed patties and cook on medium-low heat until golden brown -- approx 6 minutes each side until salmon is cooked through. Serve with a dab of good tarter sauce and lemon wedges.
