Steps:

  • Combine all ingredients.

  • Stir and pour into lightly greased dish.
  • Let cool.
  • Cut, wrap in wax paper & store in air tight container.

1 packed cup brown sugar
1/2 cup half-and-half
4 tablespoons butter
Pinch salt
1 tablespoon vanilla extract

Steps:

  • Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

2 cups sugar
1/2 cup butter or margarine
2 cups whipping (heavy) cream
3/4 cup light corn syrup

Steps:

  • Grease bottom and sides of square baking dish, 8x8x2 or 9x9x2 inches, with butter.
  • Heat all ingredients to boiling in heavy 3-quart saucepan over medium heat, stirring constantly. Cook about 35 minutes, stirring frequently, to 245°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a firm ball that holds its shape until pressed. Immediately spread in baking dish. Cool completely, about 2 hours.
  • Cut into 8 rows by 8 rows, using kitchen scissors or sharp knife. Wrap individually in waxed paper or plastic wrap. Store wrapped candies in airtight container at room temperature.

1 pound pecan halves, toasted
1 can (14 ounces) sweetened condensed milk
3/4 cup light corn syrup
1/2 cup sugar
1/3 cup packed brown sugar
1/4 cup butter, cubed
1-1/2 teaspoons vanilla extract
1 pound milk chocolate candy coating, chopped

Steps:

  • On waxed paper-lined baking sheets, arrange pecans in small clusters of four to five pecans each. , For caramel, in a small saucepan, combine the milk, corn syrup and sugars. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage). Remove from the heat. Stir in butter and vanilla. Working quickly, spoon caramel onto pecan clusters. Let stand until set. , In a microwave, melt candy coating; stir until smooth. Spoon over caramel. Chill for 10 minutes or until set. Store in an airtight container.

I got this from a co-worker about 12 years ago. These are the best melt in your mouth caramels I have ever had, and I always have to make them for Christmas.

2 cups white sugar
1 ½ cups corn syrup
2 cups heavy cream
1 cup butter
1 teaspoon vanilla extract

Steps:

  • Butter a 9x13 inch dish.
  • In a heavy saucepan, combine sugar, corn syrup, 1 cup cream and butter. Bring to a boil, stirring often, then stir in remaining 1 cup cream. Heat, without stirring, to 242 degrees F (116 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat, stir in vanilla, and pour into prepared dish. Refrigerate.
  • When cool, return candies to room temperature then cut into 1 inch squares and wrap in waxed paper.

1 whole camel, medium size
1 whole lamb, large size
20 whole chicken, medium size
60 eggs
12 kg rice
2 kg pine nuts
2 kg almonds
1 kg pistachio nut
110 gallons water
5 lbs black pepper
salt

Steps:

  • Skin, trim and clean camel (once you get over the hump), lamb and chicken.
  • Boil until tender.
  • Cook rice until fluffy.
  • Fry nuts until brown and mix with rice.
  • Hard boil eggs and peel.
  • Stuff cooked chickens with hard boiled eggs and rice.
  • Stuff the cooked lamb with stuffed chickens.
  • Add more rice.
  • Stuff the camel with the stuffed lamb and add rest of rice.
  • Broil over large charcoal pit until brown.
  • Spread any remaining rice on large tray and place camel on top of rice.
  • Decorate with boiled eggs and nuts.
  • Serves a friendly crowd of 80-100.
