FISH WITH CHILLI, MANGO & LIME SALSA



Fish with chilli, mango & lime salsa image

Rub sea bream or mackerel with Cajun spice, bake whole and serve with a cool and fresh avocado sauce and rice

4 whole sea bream or mackerel , descaled and cleaned (ask your fishmonger to do this)
2 tbsp Cajun seasoning (we used Schwartz)
zest and juice 1 lime
1 tbsp oil
1 ripe mango , peeled, stoned and diced
1 red chilli , deseeded and finely chopped
1 ripe avocado , peeled, stoned and diced
2 spring onions , sliced
small bunch coriander , chopped
200g green bean
rice , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Make 3-4 slashes on each side of the fish. Rub in the seasoning, lime zest and oil, making sure you get it right into the slashes and the cavity. Place on a baking tray lined with foil and bake for 12-15 mins or until just cooked through.
  • Turn the grill to high and cook for 2-3 mins more to char the skin. Cover and rest for a few mins.
  • For the salsa, mix the mango, chilli, avocado, spring onions, coriander and lime juice, and season. Bring a small pan of water to the boil, add the beans and cook for 4 mins, then drain. Serve the fish with rice, beans and salsa.

1 small red onion, finely chopped
1 cup fresh cilantro, chopped
2 jalapeno peppers, seeded and minced
1/2 cup lime juice, freshly squeezed divided
4 tablespoons olive oil, divided
6 (6 ounce) sea bass fillets, 1-inch thick
chili powder
salt and pepper

Steps:

  • Combine mango, onion, cilantro, jalapeno, 1/4 cup lime juice, 2 T. olive oil. Season with salt and pepper and refrigerate for 2 hours.
  • Brush both sides of fish with remaining olive oil and lime juice. Sprinkle with chili powder, salt and pepper. Grill (or broil) for about 4 minutes on each side or until cooked through. Serve with salsa.

2 sea bass fillets (ideally 80 - 100g each )
1 lime, juiced
1 tsp olive oil
1 tsp soy sauce
1 tsp fresh chopped coriander
½ tsp chilli flakes
1 mango (peeled and cubed)
1 red onion (diced )
1 chilli (deseeded and diced )
1 red or orange pepper (diced )
1 tbsp fresh chopped coriander (cilantro)
1 lime, juiced
Salt to taste

Steps:

  • To make the mango salsa, peel and cube the mango. Add to a bowl with the red onion, pepper and chilli. Add the lime juice and coriander and stir to combine. Add salt to taste.
  • Mix the chilli lime marinade ingredients together in a small bowl.
  • Season both sides of the sea bass fillets lightly with salt then brush both sides generously with the marinade.
  • Heat a lightly oiled non-stick frying pan over a medium-high heat.
  • Add the sea bass fillets to the pan skin-side down and fry for 3-4 minutes. Flip and cook for a further minute - the fish should be opaque.
  • Serve the sea bass with mango salsa and some rice or green salad.

2 large Florida mangoes, starting to ripen, but still a bit firm
1 large firm red onion, sliced into 1/4- to 1/2-inch-thick slices
2 tablespoons olive oil
Sea salt
Freshly ground pepper
5 plum tomatoes, seeded and chopped into 1/2-inch pieces
1 small bunch cilantro, leaves finely chopped
1 bunch chives, finely chopped
1/2 red pepper, seeded and finely chopped
1 lime, juiced
1/2 Florida orange, juiced
1 red pepper
1/4 cup rice wine vinegar

Steps:

  • Preheat a grill to medium-high.
  • Lightly coat the mango slices and onion discs in olive oil and sprinkle with salt and pepper. Place mango slices on a medium high grill approximately 2 minutes on each side. Grill onions approximately 2 to 4 minutes on each side, being careful to turn only once (this will help keep them together and avoid pieces falling through the grill). When mangos have nice grill marks after a couple minutes on each side, remove from grill. Once onions have slightly charred, but still retain moderate firmness, remove from grill.
  • Chop the mango and onion and place in large mixing bowl. Combine all of the above ingredients including juice of lime and orange and add salt and pepper to taste. In the mixing process a large amount of juice will gather at the bottom of the bowl. I recommend draining the juice, and placing the salsa in a refrigerator, covered for approximately 20 minutes. Then, use the salsa on top of grilled fish or serve as a side dish.

Two 6-ounce pieces sea bass (white, black or striped)
Olive oil
Kosher salt and freshly ground black pepper
1 cup Jalapeno-Mango Salsa, recipe follows
1 lime, wedged
Cooked white rice, optional
2 tablespoons vegetable oil
2 whole jalapeno chiles
2 tablespoons chopped fresh cilantro
2 mangoes, peeled, pitted and diced
1 lime, juiced
1/4 large red onion, minced
Kosher salt and freshly ground black pepper

Steps:

  • Heat a grill pan on the stovetop over medium-high heat. Drizzle the fish on both sides with olive oil and sprinkle with salt and pepper. Place the fish onto the hot grill pan and cook until opaque in the center, about 5 minutes per side. Transfer to a plate. Top each piece of fish with 1/2 cup Jalapeno-Mango Salsa and serve with lime wedges. Accompany with white rice if desired.
  • Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.

1 lb Chilean sea bass
salt and pepper to taste
3 tbsp oil
2 mangos (ripe )
1 scallion
1/2 jalapeno (deseeded and diced )
1/2 red onion (finely diced )
1/2 lime (juiced)
1 bunch fresh cilantro
1/2 tsp cumin (optional)
1 tbsp olive oil
1/2 tsp vinegar
1 tsp honey (or to taste )
salt and pepper to taste

Steps:

  • Start by preparing the mango salsa. In a large bowl, combine the diced mangos, scallions, onions, jalapenos, cilantro, vinegar, honey, cumin, olive oil, and lime juice. Season with salt and pepper.
  • Pat dry the Chilean sea bass on both sides with a paper towel. Season generously on both sides with salt and pepper.
  • Heat about 3 tbsp of oil in a skillet over medium-high heat. Add the Chilean sea bass to the skillet skin side down. Reduce the heat to medium and cook for about 7 minutes on each side. Depending on the thickness of the sea bass. If the pieces are on the thinner side cook for 4-5 minutes or until it reaches an internal temperature of 145 degrees F.
  • Squeeze fresh lemon juice over the cooked fish if desired, top it off with mango salsa, and enjoy.

1 teaspoon extra virgin olive oil (optional)
1 large onion, chopped (1 1/2 cups)
3 garlic cloves, minced
1 -2 tablespoon fresh ginger, peeled, grated (or chopped)
1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)
1/2 teaspoon allspice
3 (15 ounce) cans black beans, drained and rinsed
1 cup orange juice
pepper, to taste
2 medium ripe mangoes, peeled, and chopped
1 small cucumber, peeled, seeded, and diced
1 ripe tomatoes, chopped (1 cup)
1 lime, juice and zest of
1/2-1 small fresh minced jalapeno pepper, to taste (or hot sauce)
1 tablespoon chopped cilantro (or more)

Steps:

  • In a non-stick saucepan, stir-fry onions and garlic in a small amount of oil (or use water or other liquid) for 5 minutes until onions begin to soften.
  • Add ginger, thyme, and allspice; stir-fry 5 minutes more until onions are very soft.
  • You can add fresh or frozen corn, water chestnuts, carrots, chopped red, yellow, or green peppers, cilantro.
  • Stir in black beans and orange juice. Cook over low heat for 15 minutes, stirring occasionally, until mixture thickens slightly.
  • Mash a few beans with a spoon for thicker consistency.
  • Add pepper, and serve over brown rice topped with mango salsa and it's really good with crisped whole-grain corn tortillas.

1 small red onion, chopped

  • Mix all marinade ingredients together in a bowl. Reserve half for grilling process. Place sea bass fillets in glass baking dish or container. Pour marinade over top. Let set for 10-15 min turning once. Cut top of filets to the middle to hold the juices of the marinade. Place fillets about 1/2 apart on grill pouring their marinade juices over top of them. Grill for 8 minutes then, pour reserved marinade over top of them and continue grilling for an additional 8 minutes or until easily flaked with a fork.
  • While fish is grilling break off tough ends of asparagus. Preheat non stick pan for 1 minute. Heat 1 teaspoon of unrefined virgin coconut oil for a minute over a medium heat. Add asparagus, cover with lead for 3-5 minutes until tender. Toss with Sherry vinegar and cook additional 2 minutes. Sprinkle a tablespoon of Balsamic vinegar, wrapped asparagus in the foil and reserved covered in the same pan.
  • Transfer to serving plate, top with salsa, top asparagus with fresh grated Romano cheese and enjoy!
