I found this recipe in a friends magazine and had to share. I made this recipe and brought to a Ladies Meeting recently. Came home with an empty pot. LOL These have a jerk-seasoned pineapple glaze and a little heat added with hot pepper sauce. But well worth making and eating.

2 pkg (16-oz) cocktail wieners or small cooked smoked sausage links
1 jar(s) (12-oz) pineapple preserves
1/2 tsp finely shredded lime peel
1 Tbsp lime juice
1 tsp jamaican jerk seasoning
1 tsp ground ginger
2 clove garlic, minced
few dashes bottled hot pepper sauce
key lime wedges (optional)

Steps:

  • 1. In a 3.5 or 4 quart slow cooker combine cocktail weiners, preserves, lime peel, lime juice, jerk seasoning, ginger, garlic, and hot pepper sauce.
  • 2. Cover and cook on low-heat setting for 4 hours or on high-heat for 2 hours. Serve immediately or keep warm, covered, on warm setting or low-heat setting for up to 2 hours. Serve with decorative toothpicks. If desired, garnish with key lime wedges.

These are not just any cocktail sausages: the sesame oil, honey and soy give them a sweet-savoury stickiness that is pretty well impossible to resist.

2 1/4 pounds (75 in number) cocktail sausages
2 tablespoons sesame oil
1/2 cup honey
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 200C/400 degrees F.
  • Separate the sausages if they are linked and arrange them in a large, shallow-sided roasting tin.
  • Whisk together the oil, honey and soy sauce and pour over the sausages, then use your hands, or a couple of spatulas, to move everything about in the pan so that all the sausages are slicked.
  • Roast for 25 to 30 minutes; give them a shuffle about halfway through cooking if you happen to be near the oven.

1/4 fluid ounce bacardi rum
1/4 fluid ounce cream of coconut
3/4 fluid ounce pineapple juice

  • In a shaker filled with ice Mix the Bacardi and pineapple juice.
  • shake well until too cold to hold.
  • strain the content into a glass filled with ice.
  • rinse shaker and fill again with ice.
  • mix the Curacao and cream of coconut and shake until too cold to hold.
  • Stain the contents into the same glass and mix.
