Sprinkle cracked pepper
1 gallon soy sauce
1 quart vinegar

Chili Peppah Watah, recipe follows
Sliced scallion greens, fried garlic and chicharrons, for garnish

Garlic salt and ground black pepper, for sprinkling
8 ounces kimchee base
3 ounces rice vinegar
1 ounce sesame seed oil

2 cucumbers, cut into bite-size pieces
1 gallon vinegar
12 ounces sweet chile sauce
12 ounces sriracha

Steps:

  • Combine vinegar, chile sauce, sriracha, rock salt and chile peppers, then whisk together. Chill for 1 hour.

WINE-BRAISED OXTAIL

Wine-Braised Oxtail image

Don't be scared off by oxtail just because you may never have cooked it before. It's as meaty and rich as short ribs, and just as straightforward to prepare. In this hearty braise, the meat is simmered in wine with carrots and celeriac. Feel free to substitute other vegetables for those roots. For example: mushrooms, celery stalks, turnips, rutabaga, winter squash chunks, and sweet potatoes would all be happy additions to the pot. Or leave the vegetables out and serve the whole thing over mashed potatoes, egg noodles or polenta. Like all braises, it can be made at least four days ahead, and gets better as it sits.

Time 4h

Yield 4 to 6 servings

Number Of Ingredients 17

2 1/2 teaspoons coarse kosher salt, more as needed
2 teaspoons black pepper
1/2 teaspoon ground allspice
5 pounds beef oxtails, patted dry
2 tablespoons extra-virgin olive oil
4 shallots, peeled, trimmed and sliced lengthwise 1/4-inch-thick
4 large carrots, peeled and cut into 3-inch lengths
2 small or 1 large celeriac, peeled and cut into 2-inch chunks
1 tablespoon tomato paste
6 large garlic cloves, finely chopped
1 bottle (750 milliliters) dry red wine
1 cup chicken stock
5 parsley sprigs, plus 1/4 cup chopped parsley leaves
2 rosemary branches
2 bay leaves
Grated zest of 1 lemon
Torn celery leaves, for garnish (optional)

Steps:

  • In a large bowl, combine salt, pepper and allspice. Add oxtail to bowl and rub the mixture all over the meat. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Heat an 8-quart Dutch oven, or a heavy soup pot with a lid, over medium-high heat. Add oil and warm through. Add as many oxtail pieces as you can fit in a single layer without overcrowding the pot. Sear, turning occasionally, until the meat is uniformly golden brown all over, including the sides. Transfer meat to a plate; repeat until you've browned all the oxtail.
  • Add shallot to the pan drippings and cook over medium heat until lightly caramelized, about 10 minutes. Add carrot and celery root and cook 5 minutes. Stir in tomato paste and two-thirds of the garlic (save the rest for garnish) and cook 1 minute.
  • Heat oven to 325 degrees. Pour wine and stock into pot. Bundle parsley sprigs, rosemary branches and bay leaves with kitchen twine and drop into pot. Bring mixture to a simmer and cook over medium heat until liquid has reduced by half, about 15 minutes.
  • Return oxtail to pot and bring to a simmer. Cover pot and transfer to oven. Cook, turning oxtails every 30 minutes, until meat is fork tender, 3 to 3 1/2 hours.
  • Transfer oxtails to a plate. Spoon off fat from surface of pan juices and discard (there will be a lot of it). Toss oxtails with remaining pan gravy. Taste and adjust seasonings if necessary. In a small bowl, toss together chopped parsley, garlic, lemon zest and a pinch of salt. Scatter mixture over oxtails and garnish with the celery leaves, if using, before serving.

CARIBBEAN FEAST'S OXTAIL DISH

Caribbean Feast's Oxtail Dish image

Provided by Food Network

Categories     main-dish

Time 6h50m

Yield 4 servings

Number Of Ingredients 13

1 cup browning or gravy master
2 tablespoons garlic powder
2 tablespoons ground black pepper
2 tablespoons seasoning salt
3 pounds oxtails, excess fat trimmed, washed with cool water and 2 tablespoons vinegar
4 cloves chopped garlic
1 large onion, chopped
1 bunch fresh thyme
2 tablespoons olive oil
2 cups butter beans
3 scallions, chopped
1 green bell pepper
2 teaspoons cornstarch

Steps:

  • Mix together the browning, garlic powder, black pepper and seasoning salt. Rub all over the oxtails. Add the garlic, onions and thyme, cover and marinate for 4 to 5 hours. This will ensure that all the flavor of the spices will be deeply embedded in your oxtails for a finger-licking flavor.
  • When ready to cook, heat a large pot and then add the olive oil and heat until hot. Add the oxtails and fry, stirring every 5 minutes, for 15 minutes. Add the butter beans, scallions and bell peppers, cover the pot and cook over medium heat for 1 hour 30 minutes, stirring every 10 to 15 minutes. Add desired small portions of water when needed (make sure that the water is barely above the oxtails at all times) throughout the cooking period.
  • Turn up the heat and bring to a boil. You may add additional seasoning salt or other spices, if desired. Mix in the cornstarch and let simmer over low heat for 30 to 45 more minutes. Let cool, then serve.

Time 2h20m

Yield 4 to 6 servings

Number Of Ingredients 17

2 tablespoons olive oil
3 pounds oxtails
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 cup small diced onion
1/2 cup small diced carrot
1/2 cup small diced celery
1/4 cup small diced leeks
1 tablespoon minced garlic
1 tablespoon minced green onion, white part only
2 teaspoons minced ginger
2 tablespoons tomato paste
2 1/2 tablespoons all-purpose flour
1 (12-ounce) bottle beer (recommended: Guinness)
1 1/2 cups veal stock or low-sodium canned beef broth
1/2 teaspoon ground allspice
1 tablespoon chopped fresh parsley leaves

Steps:

  • Add the olive oil to the One Pot (or any pressure cooker, or a Dutch oven) and heat over medium heat until hot. Season the oxtails with the salt and pepper. Add half of the oxtails to the One Pot and cook until well browned on both sides, about 3 to 4 minutes per side. Set the seared oxtails on a platter once browned and repeat with the remaining oxtails.
  • Once all the oxtails are browned, add the onions, carrots and celery to the pan. Saute the vegetables until softened, about 3 to 4 minutes. Add the leeks, garlic, green onions and ginger to the pan and saute for 1 minute, stirring often. Add the tomato paste and stir well to incorporate. Sprinkle the flour over the vegetables and stir to combine. Cook, stirring, for 3 minutes. Add the beer to the One Pot and increase the heat to medium-high. Bring the beer to a boil and cook for 5 minutes.
  • Add the stock and allspice, stir, and return the oxtails to the pan. Return the pan to a boil and place the lid over the pan. Once a steady stream of steam is emitted from the pan, lower the heat to a simmer, and cook the oxtails until tender, about 1 hour in a pressure cooker or 2 hours in a Dutch oven. Remove the lid, and stir the chopped parsley into the pan. Serve immediately.

CARIBBEAN STYLE BRAISED BEEF OXTAIL

Caribbean Style Braised Beef Oxtail image

Braised oxtail stew recipe - beef oxtail marinated overnight, then slow cooked in a complex Caribbean flavored broth for a great Sunday main dish.

Provided by Marwin Brown

Categories     Main Course

Number Of Ingredients 22

3 pounds beef oxtail
1/2 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon nutmeg
1 teaspoon allspice
1 tablespoon browning sauce
1/2 medium white onion (sliced)
6 cloves garlic (roughly chopped)
4 sprigs fresh thyme
2 half-inch thick slices of fresh ginger
1 tablespoon olive oil
1 medium red bell pepper (sliced)
1 medium red onion (sliced)
1 scotch bonnet chili
2 bay leaves
½ cup cooking wine (dry sherry)
2 tablespoons soy sauce
3 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1 1/2 cups water
Green onions for garnishing

Steps:

  • Mix dry spices together and set aside
  • Wash and clean the oxtail with water and lemon juice. Marinate oxtail in half the spice mix, half the garlic, browning sauce, half the thyme, and onions.
  • Heat oil in a large skillet over medium-high heat and brown them on all sides. Remove the oxtail and set aside on a plate.
  • Add the ginger, remaining garlic, scotch bonnet, red pepper, red onions, hald the remaining spices, remaining thyme and bay leaves. Cook on medium low 1-2 minutes.
  • Add the dry sherry cooking wine, soy sauce, Worcestershire sauce, brown sugar, remaining spices, and water. Mix in well.
  • Preheat oven to 325 degrees. Add the oxtail back to the pot, and bring to a boil. Bring to a boil, then cover and reduce the heat to low. Simmer for 2 to 3 hours. If you prefer "fall off the bone" oxtail use the full 3 hours cook time. For oxtail with more texture cook 2 to 2/1 hours. Oxtail will not be fully submerged so you'll want to rotate oxtails every 30 minutes or so. Check halfway through and add more water if needed.
  • Remove the lid and cook uncovered at a simmer for another 30 minutes until the meat is tender and most of the liquid has evaporated. Stir occasionally, and add additional water if necessary to avoid sticking. Top with green onions. Serve!

BRAISED OXTAIL

Braised Oxtail image

Provided by Food Network

Categories     main-dish

Time 1h50m

Yield 8 to 10 servings

Number Of Ingredients 15

6 pounds oxtails (1-inch cut)
2 tablespoons olive oil, not extra virgin
3 cups onions, medium dice
1 cup scallions, sliced
1/2 cup garlic, sliced
1/2 cup olive oil
2 teaspoons fresh ground pepper
8 sprigs thyme
Water
1 1/2 teaspoon cloves, whole
1 1/2 teaspoon allspice, whole
2 cups tomatoes, seeded and chopped
1 1/2 cups red peppers, chopped
Salt
1 Scotch Bonnet pepper, seeded and chopped

Steps:

  • Toss the ingredients together in a large bowl, cover, and refrigerate overnight.
  • Take oxtails out of marinade and reserve onion mixture. In a heavy-bottom braiser over medium-high heat, brown both sides of oxtail in batches in olive oil, drain excess oil leaving just enough to saute onion mixture and thyme. After the onions and thyme are sauteed return oxtails to braiser and add enough water to cover 1/4 of the oxtails. Allow the liquid to come to a simmer. Put cloves and allspice into a sachet or tie in a cheesecloth, and submerge in liquid. Season with salt, cover, and put into a preheated 350 degree oven for 1 hour. Then add tomatoes, red and Scotch Bonnet peppers. Stir well and return pot to the oven for half an hour or until oxtails are tender. Check to see if additional water is needed during braising process. Seasoning with more salt is recommended when finished.

  • Prepare your oxtail by rinsing and patting dry with paper towels. Place them into a medium sized mixing bowl, then sprinkle with Worcestershire sauce, soy sauce, brown sugar, salt, garlic powder, pepper, paprika, browning sauce and cayenne pepper. Toss to coat thoroughly.
  • Heat a large pan or Dutch oven over high heat with the vegetable oil. The oil should shimmer, and be just at the point of smoke. Sear the seasoned oxtail in the heated oil for about 3 minutes, or just until the meat gets a golden brown coloring. Transfer the browned oxtail to a plate and set aside.
  • Reduce the heat to medium high and saute the carrots, celery, onion, pepper and garlic until softened and fragrant, about 3-4 minutes. Once softened, add in the broth, thyme and bay leaf. Bring the broth and vegetables to a slow boil and return the oxtail.
  • Cover the pan, reduce your heat to low and simmer for about 3 hours. The oxtail should be tender when done, and pulled from the bone with a fork.
