New Mexican Green Chile, of which I prefer Hatch chiles is amazing. Spicy and fresh roasted this chile can't be beat.

3 T vegetable oil
1 large onion chopped (At least 1 c)
3 garlic cloves minced
2 T flour
1 1/ 2 c chopped mild green chiles or use 2 c of your choice of chile
½ c chopped hot green chili
1/2 t ground cumin
Pinch of Mexican oregano
2 c chicken stock (I make this with Better Than Bouillon) Just mix a good spoonful into the hot water or directly into hot soup.
1 t salt - you may want to test as the bouillon does give it a nice degree of saltiness

Steps:

  • Heat oil and add onion. Cook about 5 minutes and add garlic.
  • Cook another minute and stir in flour. Cook for 1-2 minutes stirring so flour doesn't burn and also so that it cooks and you don't get a floury taste.
  • Add chilies. Pour in stock and seasonings. Taste for salt and adjust if necessary.
  • Bring to boil over medium heat and cook for about 15 to 30 minutes on a low simmer covered.
  • If you want it thicker add more broth or water. This can cook for longer if you want your chile a softer texture.

Every New Mexican cook has a green chile sauce, but it has to be very good sauce, or her reputation as a good cook suffers. They serve this sauce at any meal. At breakfast it is served over eggs or potatoes. It is used over burritos, in enchiladas, or over grilled meats and roasted potatoes for lunch or dinner. It is best when it is fresh or used within one day of being made. This recipe comes from Sandy Szwarc's "Real New Mexico Chile".

1 tablespoon canola oil
1/2 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons flour or 2 tablespoons whole wheat flour
1/4 teaspoon ground cumin
salt and pepper, to taste
1 1/2 cups pork stock or 1 1/2 cups chicken stock
1 cup chopped roasted and peeled new mexico pepper ("or" frozen "or" canned)
1/4 teaspoon dried oregano

Steps:

  • In a medium sauce pan, saute the onion and garlic in the oil over medium-high heat, until tender (about 3 minutes).
  • Stir in the flour, cumin, salt and pepper and cook over medium heat, stirring, for 2 minutes.
  • Stir in the stock and simmer until thick and smooth.
  • Stir in the chiles and oregano.
  • At this point you may cool, and store in refrigerator, covered, for up to one day.
  • To serve, heat thoroughly.

12 -15 hatch green chilies (if not available anaheim will work too)
2 lbs pork shoulder
2 tablespoons vegetable oil
1/2 cup onion, finely chopped
2 minced garlic cloves
1 -2 jalapeno, diced (only necessary if using anaheim chiles)
6 cups chicken broth
6 ounces beer (optional)
1/2 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
3 bay leaves
1/2 teaspoon cumin
1 (10 ounce) can diced tomatoes
3 large potatoes, diced 1/2-inch
2 tablespoons butter
2 tablespoons flour

Steps:

  • Broil green chiles in the oven turning often to evenly darken skin making sure they don't burn.
  • Remove from oven and cover with a dish cloth for 10 minutes to steam the skins off.
  • While the chiles are resting, cube the meat, sprinkle with salt & pepper and brown with onions & garlic in oil in a large pot for 5 minutes.
  • add jalepeno, broth, half a can of beer, spices.bring to a simmer.
  • let simmer for 1 hour.
  • Peel skin from chiles, chop and add to the pot (including the seeds).
  • Let simmer for 30 minutes then add the tomatoes & potatoes (add a cup of hot water if needed).
  • Simmer until potatoes are done.
  • melt butter in a small skillet & add flour, cook for 2 minutes stirring constantly -- add to the pot.

This is a versatile green Chile sauce that can be used for just about anything calling for a green sauce. I prefer using Hatch Big Jim Green Chile Peppers because of the flavor and medium heat. The heat index can be raised or lowered depending on the Chile peppers used. If you already have roasted and chopped green chilies skip the first 4 directions.

6 ounces chili peppers, halved and seeded
3 tablespoons corn oil
1 cup chopped onion
2 teaspoons minced garlic
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon salt

Steps:

  • Set oven rack 6 inches from the heat source and preheat oven's broiler.
  • Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil in the preheated oven until the skin is heavily blistered and turning black, about 4 minutes.
  • Transfer chile peppers to a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 15 minutes. Peel and chop the chile peppers.
  • Heat oil in saucepan over medium heat. Add onion; cook and stir until browned, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Stir in flour until mixture thickens. Stir in chopped chile peppers, beef broth, and salt. Bring to a boil; reduce heat and simmer until flavors combine, about 10 minutes.

1 pound boneless pork loin, cubed
¼ cup masa harina
1 tablespoon olive oil
1 red onion, chopped

1 large potato, cubed

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

1 ½ pounds hamburger
1 (14.5 ounce) can diced tomatoes
1 (6 ounce) can diced green chiles
¾ cup chopped onion
½ cup milk, or as needed
2 eggs
15 crushed crackers
½ teaspoon salt, or more to taste
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
  • Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Let cool in the pan for 10 minutes before transferring to a serving dish.

My husband grew up in New Mexico where they have the real, fresh from the farm, green chilies. I learned originally how to make these from my mother-in-law and then just added my own touches to it. My DH is very critical especially when it comes to Mexican food, really likes these. You can adjust the "heat" by adding more or less green chilies, and chili powder.

2 (10 1/2 ounce) cans cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups milk
1/2 cup chopped onion
2 minced garlic cloves
2 (7 ounce) cans chopped green chilies
2 tablespoons butter
1/2 teaspoon oregano
1/4-1/2 teaspoon cumin
1/4 cup salsa (mild, medium or hot, your preference)
1 cup sour cream
shredded cheese (whatever kind you like-I use the package of Kraft shredded medium cheddar cheese)
corn tortilla (allow 3-5 per person)
vegetable oil

Steps:

  • Saute the onions, garlic and green chilies in butter until the onions are translucent.
  • Add the soup, milk, salsa and spices.
  • Simmer over very low heat for 10 minutes, stirring often.
  • While the sauce is simmering, fry the tortillas in hot oil until soft.
  • (If the oil is hot enough, the tortillas only take a few seconds to get soft enough).
  • Place tortillas on paper towels to get rid of excess oil.
  • You can also soften the tortillas in the microwave for a few seconds wrapped in a dishtowel.
  • Add the sour cream to the enchilada sauce and stir well.
  • These enchiladas are served flat, stacked like pancakes on individual plates.
  • Place a tortilla on plate, cover with sauce and cheese. These are not rolled enchiladas but are flat like a stack of pancakes.
  • Repeat layers with as many tortillas as each person wants.
  • I like 3; my husband always has 5.
  • Pop the plate in the oven just long enough to melt the cheese.
  • You can also place cooked diced chicken in the layers.
  • This can also be prepared casserole style in a 9X13 dish.
