1 ½ cups all-purpose flour
⅔ cup flax-seed meal
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
½ teaspoon baking soda
¼ teaspoon salt
3 cups finely shredded carrot (about 6 medium carrots) (see Tip)
1 cup refrigerated or frozen egg product, thawed, or 4 eggs, lightly beaten
½ cup granulated sugar (see Tip)
½ cup packed brown sugar (see Tip)
½ cup canola oil
1 Coarsely shredded carrot
2 ounces softened reduced-fat cream cheese (Neufchâtel)
½ teaspoon vanilla
¼ cup powdered sugar
1 ½ cups frozen light-whipped dessert topping

Steps:

  • Preheat oven to 350 degrees F. Grease and lightly flour two 8x1-1/2- or 9x1-1/2-inch round cake pans; line bottom of pans with waxed paper or parchment paper. Grease and lightly flour the waxed paper or parchment paper and the sides of the pans. Set aside.
  • In a large bowl, stir together flour, flax seed meal, baking powder, pumpkin pie spice, baking soda and salt; set aside. In another large bowl, combine finely shredded carrot, eggs, granulated sugar, brown sugar and oil. Add egg mixture all at once to flour mixture. Stir until combined. Divide batter evenly among prepared pans, spreading evenly.
  • Bake for 25 to 30 minutes for 8-inch pans, 20 to 25 minutes for 9-inch pans, or until a toothpick inserted near centers of the cakes comes out clean. Cool cakes in pans on wire racks for 10 minutes. Invert cakes onto wire racks. Cool completely.
  • In a medium bowl, beat reduced-fat cream cheese (Neufchâtel) with an electric mixer on medium to high speed until smooth. Beat in vanilla. Gradually add powdered sugar, beating until smooth. Thaw 1-1/2 cups frozen light whipped dessert topping. Fold about 1/2 cup of the topping into the cream cheese mixture to lighten. Fold in the remaining whipped topping.
  • Place one cooled cake layer on a serving platter. Top with half of the Fluffy Cream Cheese Frosting. Place the second cake layer atop the frosting; spread with the remaining frosting. If desired, garnish with coarsely shredded carrot.

2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
3 eggs
1/4 cup mayonnaise
2 cups carrots, grated
1 (8 ounce) can crushed unsweetened pineapple (undrained)
1 teaspoon vanilla
1/2 cup walnuts, chopped
1 cup raisins
1 cup whipping cream
1 teaspoon vanilla
8 teaspoons artificial sweetener

Steps:

  • In a large bowl, combine flour, baking soda, cinnamon, ginger and salt. In another bowl beat eggs, mayonnaise.
  • Gradually beat in flour mixture.
  • Stir in remaining ingredients.
  • Pour into a grease, floured 8 inch square cake pan.
  • Bake 30 to 35 minutes. 350°F.
  • Cool 10 minutes.
  • Remove from Pan.
  • Cool completely.
  • Prepare topping by beating whipped cream til thick. Add vanilla and sweetener. Spread over cake.

refrigerated butter-flavored cooking spray
2 large egg whites, at room temperature
1/2 cup plain nonfat yogurt (114 g)
3 tablespoons canola oil
1/2 cup unsweetened applesauce (136 g)
1/3 cup dark brown sugar, packed (73 g)
2 teaspoons vanilla extract
2 1/2 cups unbleached all-purpose flour (313 g)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup shredded carrot (110 g)
4 ounces unsweetened crushed pineapple in juice
1/4 cup dark raisin (36 g)

Steps:

  • Preheat the oven to 400°F (200°C, Gas Mark 6).
  • Position the top rack in the center of the oven.
  • Lightly coat a 9 inch (22. 5 cm) bundt pan with cooking spray.
  • Dust with flour and tap out excess.
  • In a large bowl, whisk together the egg whites, yogurt, oil, applesauce, brown sugar, and vanilla.
  • On a piece of waxed paper, sift together the flour, baking powder, baking soda, salt (if using), cinnamon, and nutmeg.
  • Gradually add to egg-applesauce mixture, stirring until incorporated.
  • Stir in the carrots.
  • Drain and reserve the juice from the pineapple.
  • Stir the drained pineapple and raisins into the cake batter.
  • Spoon the batter into the prepared pan, smoothing the top with the back of a spoon.
  • Bake for 40 to 45 minutes, until a tester inserted in the center comes out clean.
  • Cool in the pan on a rack for 10 minutes.
  • Slide a thin knife around the edges and center of the cake to loosen it from the pan.
  • Invert onto a rack to cool.
  • When ready to serve, transfer cake to a serving platter.

Thanks to 1Steve for refering me to this as per my request for a diabetic-safe carrot cake to make my Baci (grandmother in Polish) for her birthday. She enjoyed it, but did note that she tasted allspice (she's not a fan). I didn't taste the cake, so I can't vouch for it. I did adapt this recipe to make it healthier and more diabetic friendly. Because of the lacking sugars, I suggest checking on the cake before 40 minutes are up. I frosted with my Mock cream Cheese Frosting. 1 teaspoon baking powder

Steps:

DIABETIC FRIENDLY CARROT BUNDT CAKE
1 box (18.75 oz) carrot cake mix*
1 box (4-serving) instant sugar-free french vanilla pudding/pie filling
1/2 c skim milk
1/4 c water
1/4 c canola oil
2 large eggs
2 egg whites
1 c vanilla nonfat yogurt (i use 'activia')
1/4 -1/3 c dust lightly with sifted powdered sugar (on top of cake after completely cooled)

Steps:

  • 1. Directions: 1.) Preheat oven to 325 degrees F. 2.) Coat Bundt pan with 'BAKERS JOY' cooking spray. 3.) In large mixing bowl, beat all ingredients together until well blended. (Mixture will be thick) 4.) Pour batter to prepared pan. 5.) Bake approx. 35 minutes or until inserted toothpick comes out clean. (DO NOT over-bake). 6.) Cool cake about 10-15 minutes on baking rack. Invert onto serving plate. Cool completely & dust lightly with powdered sugar.
  • 2. *NOTE: If you don't have the 18.25 size carrot cake mix just add 3/4 cup vanilla cake mix to the carrot cake mix you already have. It works out very well. You can also use a spice cake mix if you like it better than carrot cake mix.

2 cups self-rising flour
1 egg
1 teaspoon cinnamon
3/4 cup sour cream
1/4 cup Splenda brown sugar blend (see note at bottom)
1/2 cup butter, melted
3/4 cup pureed carrot (I use canned)
1/3 cup unsweetened crushed canned pineapple, drained
1 teaspoon vanilla
1/2 cup walnuts, chopped
1/2 cup unsweetened dried shredded coconut

Steps:

  • NOTE: When substituting real brown sugar for the Splenda, use 1/2 cup, as the Splenda is double strength.
  • Preheat the oven to 400 degrees. Line 12 muffin cups with paper liners.
  • Beat together the egg and brown sugar. Stir in the butter, sour cream, pureed carrots, pineapple, and vanilla.
  • Add the dry ingredients and stir just until blended.
  • Fold in the nuts and coconut.
  • Fill the muffin cups 3/4 full. Bake 20 minutes or until a toothpick comes out clean.
