- Preheat oven to 350F, spray a regular size muffin tin *note- this recipe makes 10 muffins
- In a bowl whisk together your eggs and sugar, stir in applesauce, yogurt and vanilla.
- Mix in the flour, baking powder and cinnamon, fold in diced apples.
- Divide batter into 10 regular muffin cups, make sure they are sprayed, do not use liners they will stick. Sprinkle with cinnamon sugar, optional
- Bake in oven for 25 minutes, let cool, makes 10 muffins, best stored in fridge and after 2-3 days best to freeze.

- In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. Combine the yogurt, egg, oil and milk; stir into dry ingredients just until moistened. Stir in apple and raisins if desired (batter will be thick). Fill greased or paper-lined muffin cups two-thirds full., For topping, in a small bowl, combine the flour, sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake at 400° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

- Preheat oven to 400°F. Place 12 paper or silicone liners in your muffin tin.
- In a large bowl, combine flour, baking powder, baking soda, salt and cinnamon.
- In a medium mixing bowl, whisk together eggs, Greek yogurt, oil, maple syrup, almond milk and vanilla extract.
- Pour the liquid mixture into the bowl with the dry ingredients and stir until mixture is just combined. Don't over-mix! It's okay if there are a few streaks of flour left.
- Fold in apple chunks.
- Evenly divide the batter into the prepared muffin tins.
- Bake for 16-18 minutes or until a toothpick inserted in the center of the muffin comes out clean.
- Let muffins cool in the tin for a few minutes, then remove so they don't continue to cook and let cool completely on a wire rack.
- Store at room temperature for 3-4 days or in the refrigerator for up to 1 week in an airtight container. You can also freeze for up to 3 months in a freezer-safe container.

- Preheat oven to 180c/350°F Line large size muffin tin with muffin liners.
- When you chop the apples, combine them immediately with the grated zest and juice of 1/2 lemon to keep them from turning brown.
- Add all the remaining ingredients. Mix to just combine. Spoon into muffin liner (the chunky batter should reach the top of the liner). Sprinkle tops with some oatmeal.
- Bake for 30-35 minutes, or until toothpick inserted comes out clean.
