Sometimes naughty food can inspire healthy dishes. This one is based on the flavors of the traditional reuben sandwich. The key ingredients are caraway seeds, for their distinctive flavor, cabbage and mustard, which stand in for the sauerkraut, and kidney beans for the reddish protein. The takeaway? You don't have to reinvent the wheel to create healthy food--you just have to point it in the right direction.

4 cups chopped savoy or green cabbage
2 cups chopped leeks ((white and light-green parts only))
4 cups unsalted cooked or canned kidney beans (drained)
2 cups vegetable broth ((Mushroom Free if needed))
¼ cup mustard ((choose your favorite kind))
¼ teaspoon whole caraway seeds (toasted)

Steps:

  • Dry sauté the cabbage and leeks in a large pot over medium-high heat, stirring frequently, for 3 minutes.
  • Add the kidney beans, broth, mustard, and caraway seeds and bring to a simmer.
  • Decrease the heat to low and cook until the liquid is almost gone, 8-10 minutes.
  • Serve hot.

6 slices rye bread (with seeds)
15 ounces dark red kidney beans (1 can)
1/2 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons butter

Steps:

  • Drain the kidney beans by partially opening one side of the can and fully opening the other side. Rinse the juice out.
  • Toast the bread slices.
  • While the bread is still hot, hold the bread with tongs or an oven mitt while rubbing the stick of butter on the bread until the desired amount is applied.
  • Place a handful of kidney beans on the bread.
  • Sprinkle enough salt and pepper to taste.

2 lbs yellow wax beans, cut in 1 inch lengths
4 cups boiling water
3 cups vinegar
1 cup brown sugar
1 1/4 cups white sugar
1/2 cup flour
2 tablespoons dry mustard
1 tablespoon turmeric
1 teaspoon celery seed
1/2 teaspoon mustard seeds
1 teaspoon salt
1 cup vinegar

Steps:

  • Cook beans in boiling water until just tender.
  • Drain well.
  • Heat first amount of vinegar in large pot until it boils.
  • Measure next 8 ingredients into bowl.
  • Stir well.
  • Gradually stir in remaining vinegar to make a smooth paste.
  • Stir into boiling vinegar until it returns to a boil & thickens.
  • Add beans stir gently, return to a boil.
  • Fill hot sterilized jars to within 1/2" of top.
  • Place sterilized metal lids on jars & screw metal bands on securely.
  • For added assurance against spoilage, you may choose to process in a boiling water bath for 10 minutes. Makes 4 pints this was taken from the company's coming preserves cookbook.

Another simple (and fast) yet tastey recipe from my husband's childhood. When I asked Curt the name of this particular recipe, he said, "Hamburger and Kidney Beans". When I asked again, he gave me the same answer. I wanted it to have some really cool name that I could use here on the site, but this is it: Hamburger and Kidney Beans. His mom would cook this and would just serve it plain. It was Curt that added the Mashed Potatoes later. I omitted the recipe for instant mashed potatoes, assuming that you all know how to make them to your own likeing. Of course you can always use real mashed potatoes, but in a time crunch you can use instant, or this would be great for left over mashed as well. You can adjust this recipe easily to fit your family size.

  • Brown and drain ground beef.
  • Add Kidney Beans (I always drain one can and use juice from other can) to beef and stir.
  • Season to taste.
  • Serve over Mashed Potatoes.
