DAD'S CREAMY CUCUMBER SALAD
This was my Dad's recipe and one of our family's all-time summer favorites.

Steps:
- Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
- Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
- Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
- Cover bowl with plastic wrap and refrigerate at least 2 hours.

- Place the potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. , Drain well; mash with butter and 2 tablespoons of milk. Stir in cucumber, onion, salt and pepper. In a small bowl, stir vinegar and sugar into the remaining milk. Stir into potato mixture. Serve immediately.

- Peel and rinse potatoes, then slice them and add them to a pot of boiling water. Once boiled until very tender, drain. I usually boil for aprox. 15 minutes, give or take a few. Add back to the pot beat with electric mixer adding butter and folding in sour cream. Once thoroughly mixed, add the rest of ingredients and mix again except paparika which I sprinkle just a bit on top for color. They are ready to be served. My husband loves these!

CREAMY AND SIMPLE MASHED POTATOES
One summer our nephew, Edward, lived with us and worked on fences. He is an excellent home chef and has always been interested in cooking. One night that summer we took him to dinner at K-Paul's in New Orleans, Paul Prudhomme's restaurant. Edward loved the mashed potatoes so much he asked our waitress what the secret was and she said evaporated milk and a bit of the cooking water. Well, ever since then I have made my mashed potatoes with evaporated milk and the flavor cannot be beat.

- Peel potatoes and cut into 4-5 pieces.
- Place in a large pot of cold water that is heavily salted.
- Boil until very tender, about 15-20 minutes.
- Drain almost all the water out (save about 1/4 cup of the water in the pot) and immediately put the potatoes back in the hot pot.
- Smash the potatoes.
- Mix the potatoes with the 1/4 cup water and add the butter.
- Stir/Whisk until smooth and add the evaporated milk.
- Season with salt and pepper and serve.

- Preheat oven to 350°F.
- In a large saucepan, cover potatoes with cold, lightly salted water.
- Set heat to medium and bring potatoes to a boil.
- Cook uncovered, stirring occasionally until fork tender{approximately 20 minutes}.
- Drain and mash potatoes using potato masher.
- In a large bowl, beat the milk into the mashed potatoes.
- Stir in 3/4 cup of the cheese, Vegetable Soup Mix, green onions, and the beaten egg.
- Transfer mixture to a lightly buttered 1 1/2 quart baking dish.
- Bake at 350F for 50 to 55 minutes or until potatoes are firm and top is lightly browned.
- Sprinkle remaining 1/4 cup of cheese over casserole and bake for additional 5 minutes or until cheese is melted.
- Let stand for 5 minutes to set before serving.
