This was my Dad's recipe and one of our family's all-time summer favorites.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

2 medium potatoes, peeled and cubed
1 tablespoon butter
4 tablespoons milk, divided
1/2 small cucumber, peeled and diced
2 tablespoons chopped sweet onion
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 teaspoons white vinegar
1 teaspoon sugar

Steps:

  • Place the potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. , Drain well; mash with butter and 2 tablespoons of milk. Stir in cucumber, onion, salt and pepper. In a small bowl, stir vinegar and sugar into the remaining milk. Stir into potato mixture. Serve immediately.

1/3 cup whipping cream
1 tablespoon parsley flakes

Steps:

  • Peel and rinse potatoes, then slice them and add them to a pot of boiling water. Once boiled until very tender, drain. I usually boil for aprox. 15 minutes, give or take a few. Add back to the pot beat with electric mixer adding butter and folding in sour cream. Once thoroughly mixed, add the rest of ingredients and mix again except paparika which I sprinkle just a bit on top for color. They are ready to be served. My husband loves these!

Edward loved the mashed potatoes so much he asked our waitress what the secret was and she said evaporated milk and a bit of the cooking water. Well, ever since then I have made my mashed potatoes with evaporated milk and the flavor cannot be beat.

2 lbs yukon gold potatoes
5 ounces evaporated milk
4 -6 tablespoons unsalted butter
kosher salt

Steps:

  • Peel potatoes and cut into 4-5 pieces.
  • Place in a large pot of cold water that is heavily salted.
  • Boil until very tender, about 15-20 minutes.
  • Drain almost all the water out (save about 1/4 cup of the water in the pot) and immediately put the potatoes back in the hot pot.
