Our Mediterranean-style vegetarian pizza jazzes up store-bought dough with caramelized onions, zucchini ribbons, feta, Kalamata olives, and fresh mint. Each slice strikes the perfect balance between sweet and salty.

5 tablespoons extra-virgin olive oil
2 medium onions, thinly sliced (3 cups)
2 cloves garlic, thinly sliced (1 tablespoon)
1 pound store-bought pizza dough, room temperature
1 medium zucchini, thinly shaved lengthwise with a vegetable peeler or mandoline (3 1/2 cups)
Kosher salt and freshly ground pepper
4 ounces feta, crumbled (1 cup)
1/2 cup pitted Kalamata olives, halved
1/2 cup fresh mint leaves, torn if large
Crushed red-pepper flakes, for serving

Steps:

  • Preheat oven to 450 degrees, with a rack in lower third. Heat 2 tablespoonsoil in a skillet over medium-high. Add onions and garlic;cook, stirring frequently, until onions are soft and golden, about10 minutes. Meanwhile, brush a 13-by-18-inch rimmed bakingsheet with 2 tablespoons oil. Place dough on center of sheet and,using your hands, stretch and fit it to edges.
  • Toss zucchini with remaining 1 tablespoon oil; season with saltand pepper. Spread onion mixture evenly over dough, leaving a1/2-inch border. Top with zucchini; sprinkle with feta.
  • Bake until crust is golden brown and zucchini is tender, about25 minutes. Top with olives and mint; sprinkle with red-pepperflakes. Cut into pieces and serve.

3 zucchini, thinly sliced lengthwise
4 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1 garlic clove, minced
1 tablespoon white-wine vinegar
2 tablespoons fresh mint leaves, torn

Steps:

  • Preheat oven to 475 degrees. On two large rimmed baking sheets, toss zucchini with 2 tablespoons extra-virgin olive oil; season with salt and pepper. Roast until zucchini are tender and undersides are browned, 10 to 15 minutes.
  • On a serving plate, sprinkle zucchini with minced garlic and drizzle with 2 tablespoons oil and white-wine vinegar. Let stand 1 hour (or refrigerate, up to overnight; bring to room temperature before serving). To serve, sprinkle with torn mint leaves.

1 tablespoon olive oil
2 garlic cloves, crushed
5 green zucchini, sliced
1/2 cup mint leaf, chopped

Steps:

  • Cook the pasta in a saucepan of salted boiling water for 10-12 minute3s or until al dente. Drain, return to saucepan and keep warm.
  • Heat a medium non-stick frying pan over high heat. Add the oil and the garlic and cook for 1 minute.
  • Reduce the heat to low, add the zucchini and cook for 10 minutews or until soft and caramelized.
  • Add to the pasta with the mint, parmesan and tomatoes and toss to combine.

This recipe transforms two pounds of grated fresh zucchini into one cup of caramelized zucchini that's rich, sweet and jammy enough to become a pasta sauce. Cooked over moderately high heat in a combination of olive oil and butter, the zucchini fries in its own juices and concentrates its flavor. Adding garlic and basil lends sweetness, but consider adding anchovy, preserved lemon or red-pepper flakes. As browned bits appear in the skillet, deglaze with a few tablespoons of water, chicken stock or vegetable stock to help prevent burning and to incorporate all of those tasty caramelized bits into the sauce. With time and patience, you'll have a not-so-pretty but delicious mixture, like caramelized onions made with zucchini. 2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 pounds zucchini, coarsely grated (about 3 large zucchini)
8 garlic cloves, peeled and smashed
1/2 cup basil leaves, stems reserved, plus more for serving
Kosher salt and black pepper
1 pound ridged or curly pasta (like medium shells or casarecce)
1/2 cup finely grated Parmesan or pecorino (about 1/2 ounce), plus more for serving
1 tablespoon lemon juice

Steps:

  • In a large (at least 12-inch) cast iron skillet over medium-high heat, melt the butter and oil. When it's foaming, add the zucchini, garlic, the basil stems and half the basil leaves. Season with 1 1/4 teaspoons salt and a few grinds of pepper. Cover and cook until pooling with liquid, 5 to 7 minutes. Uncover and cook until the liquid evaporates and the zucchini starts to sizzle, 7 to 10 minutes.
  • Continue to cook until the zucchini is very soft, dark green, and reduced to about 1 cup, another 20 to 25 minutes. When you see a build up of browned bits on the skillet, add a couple tablespoons of water and stir, scraping up the browned bits. Repeat anytime more browning occurs. If you see burning, deglaze with water and lower the heat. (Caramelized zucchini can be made ahead and refrigerated for up to a week; it also freezes well.)
  • Meanwhile, bring a large pot of salted water to a boil. When the zucchini is about done, add the pasta to the boiling water and cook until al dente. Reserve 2 cups of pasta water, then drain the pasta. If the zucchini is ready before the pasta, keep cooking it; the zucchini will only get better the longer it cooks.
  • When the pasta's drained, remove the herb stems from the zucchini. Reduce the heat on the zucchini to medium, then add the pasta, 1 cup pasta water, and the Parmesan. Stir until the pasta is glossed with sauce. Add more pasta water as needed to thin the sauce. Stir in the lemon juice and remaining basil, then season to taste with salt and pepper. Serve with more basil, Parmesan and black pepper.

1 teaspoon crushed red pepper flakes

  • Preheat the oven to 450 degrees F.
  • Heat 2 large roasting pans in the oven for 5 minutes.
  • Meanwhile, in a large bowl, toss the zucchini with the olive oil and crushed red pepper.
  • Season generously with salt and pepper.
  • Spread the zucchini on the hot pans and roast for 30 minutes without stirring, until the rounds are tender and their bottom are golden.

1 lb zucchini, narrow, medium sized
1/4 cup of fresh mint, packed then chopped
2 green onions, sliced thinly
3 tablespoons extra virgin olive oil
1 lemon, juice of
1 1/2 teaspoons honey
salt or pepper

Steps:

  • Preheat oven to BROIL setting.
  • Cut the zucchini in half crosswise, then cut into 1/2" slices, lengthwise.
  • In large serving bowl, place the mint and green onion.
  • In separate small glass bowl, combine the dressing ingredients and stir well.
  • On a baking sheet place the zucchini so that they do not overlap. Baste the zucchini slices with some of the dressing.
  • Broil for about 3-4 minutes or until golden.
  • Turn zucchini slices over, baste with more dressing and broil another 2-3 minutes or until brown and crispy.
  • Watch carefully to make sure the zucchini does not burn!
  • Toss the cooked zucchini slices gently with the mint and green onions. Season to taste with salt, pepper and additional dressing. Serve warm.
