CARAMELISED RED ONION CHUTNEY RECIPE
This one is a really lovely chutney. Use it on or in quiches, pizzas, plain biscuits, sandwiches or just with a cheese platter, I am sure you will love it. I do keep this in the fridge, and it never lasts long, so I am not sure as to its time of keeping, but would say at least 5-6 months.

Steps:
- Cut the onions and chilli into thin slices, then cut onion slices in half again and put them into a pan with bay leaves, chilli and oil. Cook gently over a low heat for about 20 minutes.
- When the onions are dark and sticky, add the sugar, the vinegars and mustard seeds, simmer for about 30 minutes, until the chutney is thick and dark. (Stirring at intervals so the chutney does not stick to the pan).
- Pour the chutney into hot, sterilised jars seal and let chutney cool.
- You must have a taste but really (before you eat it) this should left for a month or maybe even more for the flavours to blend and mature. .
SWEET PEPPER AND ONION RELISH (HARRY AND DAVID COPYCAT)
Steps:
- Place all the ingredients, except for the pectin, in a large stock pot. Bring the mixture to a boil, reduce the heat to low, and simmer for 1 1/2 hours, uncovered, stirring occasionally. Add more cayenne to taste if desired. Add the pectin and quickly bring to a boil for 1 minute. ***See NOTE below.Remove from heat and ladle the hot mixture into hot, sterilized canning jars.
- Process the jars in a water bath canner with the water at least three inches above the jars, for 20 minutes. Remove the jars and let them sit undisturbed for 24 hours. Store in a dark, cool place. This relish will keep for up to a year.Makes about 6 pints or 12 half pint jars.
CARAMELIZED ONION RELISH

Steps:
- Melt butter in a large pot and add the onions and sugar.
- Cook, uncovered,over medium high heat for 30-45 minutes, stirring occasionally - the onions will be beginning to caramelize.
- Stir in the garlic, wine, cognac and vinegar.
- Bring to a boil, then reduce heat and cook for 15 minutes, stirring often.
- Add salt and pepper, then spoon into jars and process in a waterbath for 30 minutes.

I can't believe that this super simple recipe has such depth of flavor.

Steps:
- Slice onions into very thin slices. Combine onions and sugar in a heavy non-stick skillet. Cook, uncovered, over medium-high heat for about 25 minutes or until onions turn golden and start to caramelize, stirring frequently.
- Stir in wine and vinegar. Bring to a boil over high heat, reduce heat to low and cook for about 15 minutes or until most of the liquid has evaporated, stirring frequently. Season to taste with salt and pepper.
- Remove jars from canner and ladle relish into jars leaving a 1/2 headspace. Process in water bath canner for 10 minutes for half-pint jars.
- Makes 2 cups
CARAMELIZED ONION AND APPLE RELISH
I love this relish. It is great with fish, chicken, pork, cheese and crackers. Sometimes I throw some into a stew for extra flavor or anything else you want to put it in. Good apples for this recipe are Idared, Northern Spy, Spartan, Cortland and Empire or heirloom varieties, such as Red Astrachan and (Chenango) Strawberry. A sweeter apple would lend more of a dessert quality to the relish. I use any old apple I have on hand.

- In a large saucepan, heat oil and butter over medium high heat. Add onions and cook about 40 minutes or until caramelized.
- In a bowl toss together apples and lemon juice until well coated. Add to saucepan; increase heat to high and cook for 10 minutes or until apples are brown.
- Add cayenne pepper and honey; mix thoroughly. Add wine and REDUCE for 20 minutes. Season with salt and pepper to taste. Makes 2 ½ cups.

CARAMELIZED RED ONION RELISH (CANNING)
A great use for balsamic's sweet and tart flavor. An inexpensive balsamic is just fine for this recipe. The wine is the ingredient that acidifies the conserve and sets the tone, so it is necessary. Use an inexpensive but drinkable wine for this, the variety you prefer doesn't matter, as long as it's dry (so-called "cooking wine" is not an option, EVER, for ANYTHING). Serve alongside meats or sparingly as a pizza topping with a tangy cheese and some bits of prosciutto for a salty element. From "The Complete Book of Small-Batch Preservation".

SWEET ONION RELISH
Steps:
- Saute the onions in a skillet over medium-low heat until translucent and caramelized, about 10 minutes. Add the brown sugar and stir until dissolved. Deglaze the pan with both vinegars and the wine. Simmer on medium-low heat until all the liquid has been evaporated, about 15 minutes.

- Clean and slice the onions. Melt the butter on medium-high heat and add the sliced onions. Sautée for about 10 minutes, stirring constantly to prevent the onion from frying; it should just sweat and get soft. Set the water to boil.
- After 10 minutes, add the sugar and stir for a couple of minutes. Then pour in the Balsamico and stir until it has evaporated (another couple minutes). Pour in the boiling water, close the lid, lower the heat to medium and let simmer for 15 minutes, checking from time to time.
- Remove the lid and simmer uncovered for a couple of minutes to evaporate any excess water that has not been absorbed by the onions. This is ready to serve.
