Not-So-Classic Peach Melba image

A classic peach Melba is a dessert of poached peach halves and raspberry sauce with vanilla ice cream, invented by the French chef Auguste Escoffier, and named after the Australian soprano Nellie Melba. This not-so-classic version calls for sliced ripe peaches instead of cooked peach halves. Look for the best vanilla ice cream, with real vanilla, or make your own. Easy to assemble, it's a lovely, refreshing and elegant dessert, perfect for when peaches and raspberries are in season.

1 cup ripe red raspberries, plus more for garnish
2 tablespoons plus 2 teaspoons granulated sugar
6 ripe, sweet freestone peaches
A few drops of lemon juice
1 quart vanilla ice cream

Steps:

  • Make the raspberry sauce: Put 1 cup raspberries and 2 tablespoons sugar in a blender and whiz to liquify. Pour through a fine-meshed strainer and into a medium bowl. Keep cool.
  • Using a paring knife, peel and halve the peaches. Slice the halves into half-moon pieces about 3/8-inch thick. Transfer to a bowl. Add 2 teaspoons sugar and a few drops of lemon juice to taste. Toss to coat.
  • To serve, arrange peach slices in the bottom of 6 dessert bowls. Top each serving with a scoop or 2 of vanilla ice cream. Splash raspberry sauce over each portion. Garnish with a few raspberries if you wish.

Cooked peaches with sabayon and Warm Raspberry Sauce is a summer treat to savor.

3 large ripe peaches, (about 1 1/4 pounds)
2 tablespoons unsalted butter
1/2 cup sugar
4 large egg yolks
1/2 cup Moscato d’Asti, (sweet, sparkling white wine) or 3 tablespoons Madeira
1/2 cup heavy cream
Warm Raspberry Sauce

Steps:

  • Bring a large pot of water to a boil. Meanwhile, prepare an ice-water bath, and set aside. Place peaches in boiling water for 1 to 2 minutes; remove with a slotted spoon, and transfer to ice-water bath. Keep the pot of water on the stove. Peel peaches, and cut in half, discarding pits. Reserve ice-water bath.
  • In a large skillet, melt butter over medium-high heat. Sprinkle 1/4 cup sugar over butter; add peaches, cut side down. Cook until they start to brown, about 4 minutes. Reduce heat to medium; cook until sugar caramelizes, about 6 minutes more, spooning syrup over peaches occasionally. Reduce heat to low, turn peaches, and cook until caramel turns amber in color, about 2 minutes more. Remove pan from heat, and let cool.
  • Meanwhile, return the pot of water on the stove to a boil. Reduce heat; simmer.
  • Make sabayon: In the bowl of an electric mixer fitted with the whisk attachment, beat remaining 1/4 cup sugar and egg yolks until pale and thick, about 2 minutes, scraping down sides of the bowl once. Add moscato, and beat for 2 minutes more.
  • Transfer yolk mixture to a large clean metal bowl, and set over the simmering water. Whisk until the sabayon thickens and is fluffy and slightly stiff, about 3 minutes. Set bowl in ice-water bath. Continue whisking until chilled, about 3 minutes.
  • Whip cream to medium-stiff peaks; fold into chilled sabayon. At this point, sabayon may be refrigerated for up to 24 hours. To serve, divide among six goblets. Place a peach half on sabayon, and top with 3 generous tablespoons of warm raspberry sauce.

Deliciously caramelized and juicy peaches with a hint of cinnamon and bourbon (or rum) make the dreamiest ice cream topping. Martha made this recipe on Martha Bakes episode 505.

4 peaches, halved, pitted, and sliced into 1/2-inch-thick wedges
Juice of 1/2 lemon
1/4 teaspoon coarse salt
Pinch of ground cinnamon
4 tablespoons (1/2 stick) unsalted butter
1/4 cup packed light-brown sugar
2 tablespoons bourbon or dark rum (optional)
Vanilla ice cream (optional)

Steps:

  • In a medium bowl, toss together peaches, lemon juice, salt, and cinnamon; set aside.
  • Melt butter and sugar in a large skillet over medium-high heat. Add peach mixture and cook, stirring occasionally, until caramelized, about 5 minutes. If using bourbon or rum, add to skillet, and cook until reduced, about 1 minute.
  • Serve immediately over ice cream, if desired.

CARAMELISED PEACHES WITH FROZEN RASPBERRIES & MASCARPONE

30g caster sugar
1 peach or nectarine, stoned and halved
2 tbsp peach schnapps (optional)
100g mascarpone
20g icing sugar
pinch of lemon thyme leaves
30ml double cream
100g amaretti biscuits , crumbled
100g frozen raspberries (shop-bought, or freeze fresh berries), roughly crushed

Steps:

  • Scatter the sugar over a plate, then dip the cut sides of the peach halves into the sugar. Heat a frying pan over a medium-high heat and cook the sugared peach halves, cut-side down, until caramelised. Transfer the peach halves to a plate and carefully add the schnapps to the pan, if using, or a splash of water. Cook the liquid until reduced and syrupy, then return the peach halves to the pan and baste in the syrup. Remove the pan from the heat and leave to cool.
  • Beat the mascarpone and icing sugar together, then fold in the thyme leaves and double cream.
  • Divide the crumbled biscuits between two plates, then put one peach half on top of each bed of crumbs. Spoon the mascarpone cream onto the plates alongside the peach halves, then scatter over the frozen raspberries. Serve immediately while the raspberries are still frozen.

1/2 cup sugar
1/2 teaspoon coarse salt
1/8 teaspoon ground cinnamon
6 ripe peaches (about 2 1/2 pounds), halved, pitted, peeled, and cut into 2-inch-thick wedges
1/3 cup brandy or Cognac
4 tablespoons unsalted butter
1/3 cup heavy cream

Steps:

  • Combine sugar, salt, and cinnamon in a large bowl; add peaches, and toss to coat well. Heat a large skillet over medium-high heat. Add peaches, cut sides down, and sprinkle with remaining sugar-cinnamon mixture from bowl. Cook, turning peaches after 5 minutes, until sugar caramelizes and peaches are tender, 7 to 8 minutes.
  • Add brandy; cook until reduced, about 1 minute. Add butter and cream; swirl to melt butter and combine. Cook until thick, about 1 minute.

2 tablespoons melted unsalted butter
2 tablespoons light-brown sugar
1/2 pint raspberries
2 tablespoons sugar
Ice cream

Steps:

  • Heat grill to medium. Halve and pit peaches; prick skins with a fork. In a bowl, stir together butter and light-brown sugar; brush butter mixture over peach halves, coating entirely.
  • Make the raspberry sauce: In a bowl, toss raspberries with sugar; let sit 5 minutes. Pass through a sieve into another bowl, pressing with a spoon to extract as much liquid as possible; discard solids.
  • Grill peaches on both sides until fruit is tender, 5 to 10 minutes. Serve warm, topped with ice cream and drizzled with raspberry sauce.

For peaches
6 medium firm-ripe peaches (2 1/4 lb)
1 1/3 cups sugar
2 cups water
1 (1-inch) piece vanilla bean
For raspberry sauce
1 (12-oz) package frozen raspberries (not in syrup), thawed
1/2 cup sugar
1/3 cup water
2 teaspoons fresh lemon juice
Accompaniment: 2 pt superpremium vanilla ice cream

Steps:

  • Poach peaches:
  • Cut a shallow X in bottom of each peach with a sharp paring knife and immerse fruit in a 4-quart heavy pot (preferably wide) of boiling water 30 seconds, then transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Transfer peaches to a cutting board and peel, starting with cut end, then cut in half, discarding pits.
  • Combine sugar and water in cleaned pot. Halve vanilla bean lengthwise with a paring knife and scrape seeds into pot, then add pod and bring mixture to a boil, stirring until sugar is dissolved. Add peaches, pitted sides down, to sugar syrup, then reduce heat and poach, covered, at a bare simmer 6 minutes. Turn peaches over and continue to poach, covered, until tender, 5 to 6 minutes more.
  • Cool peaches in poaching liquid in pot, uncovered, 1 to 1 1/2 hours.
  • Make raspberry sauce while peaches cool:
  • Force raspberries through a fine-mesh sieve into a bowl, pressing hard on solids.
  • Combine sugar and water in a small heavy saucepan. Cover pan (so condensation will wash any sugar crystals down side of pan) and bring to a boil, then remove lid and boil 2 minutes.
  • Immediately stir sugar syrup into raspberry purée and cool to room temperature, about 1 hour. Stir in lemon juice. 3Serve peaches over ice cream and drizzled with sauce.
