Caramelized Onion Soup With Blue Cheese Croutons image

Classic onion soup gets even better with caramelized onions, silky cream and zesty croutons for the finishing touch. It's worth the time it takes to cook the onions for the wonderful depth of flavor.

2 tablespoons butter
4 onions, halved and thinly sliced
1/2 teaspoon dried thyme
salt and pepper
2 garlic cloves, minced
1/4 cup dry sherry or 1/4 cup red wine
4 cups reduced beef stock
1 cup water
1 cup 35% cream
thick slices baguette
1/4 cup crumbled canadian blue cheese, softened

Steps:

  • In pot, melt butter over medium heat; add onions, thyme and 1/4 teaspoons each salt and pepper and sauté for 2 minutes or until starting to soften. Reduce heat to medium-low, cover and cook, stirring often, for about 20 minutes or until onions are very soft. Uncover and cook, stirring often, for 15 to 20 minutes or until caramelized. Increase heat to medium-high; add garlic and sauté for 1 minute. Add sherry and bring to a boil, scraping up bits stuck to pot. Add beef stock and water and bring to a boil. Reduce heat and boil gently for about 10 minutes or until flavours are blended.
  • CROUTONS:.
  • Preheat broiler. On a baking sheet, lightly toast both sides of baguette slices. Spread one side with softened blue cheese.
  • To serve, stir cream into hot soup and season to taste with salt and pepper. Ladle soup into ovenproof soup bowls . Float one crouton in each bowl and broil for about 2 minutes, or until cheese is melted. Serve immediately.

1 1/2 lbs onions, halved, thinly sliced (about 5 cups)
4 fresh thyme sprigs
1 1/2 lbs portabella mushrooms, stemmed, caps halved and cut crosswise into 1/4 inch thick strips
3 tablespoons cognac (or brandy)
3 garlic cloves, minced
8 cups vegetable broth (canned)
1 cup dry white wine
18 slices French baguettes, toasted (1 inch thick slices)
8 ounces soft fresh goat cheese, room temperature

Steps:

  • Melt 1 tablespoons butter in heavy large pot over high heat. Add onions and thyme; saute until onions begin to soften, about 8 minutes. Reduce heat to low; cook until onions are caramelized, stirring occasionally, about 20 minutes. Transfer onion mixture to medium bowl.
  • Melt remaining 2 tablespoons butter in same pot over medium-high heat. Add mushrooms; saute until soft, about 12 minutes. Add Cognac and garlic; stir 20 seconds. Stir in onion mixture, then broth and wine. Bring to boil. Reduce heat to low; simmer until onions are very tender about 45 minutes. Discard thyme sprigs. Season soup with salt and pepper.
  • Preheat broiler. Place baguette slices on large baking sheet. Spread goat cheese on baguette slices, dividing equally. Broil goat cheese croutons until cheese begins to brown in spots, about 30 seconds. Divide soup among 6 bowls. Top with croutons and serve.

1 tablespoon olive oil
8 cups sliced yellow onions (about 2 lbs)
5 cups sliced shiitake mushroom caps (about 10 oz whole mushrooms)
4 garlic cloves, minced
2 fresh thyme sprigs
1/2 cup dry white wine
1 (14 ounce) can reduced-sodium fat-free chicken broth
1 (14 ounce) can fat-free less-sodium beef broth
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
12 slices French baguettes, cut 1/2 in thick toasted
1/4 cup grated gruyere cheese
1/4 cup crumbled gorgonzola
1/2 teaspoon finely chopped fresh thyme

Steps:

  • SOUP: Heat oil in a large Dutch oven over medium heat. Add onion and sauté 15 minutes or until almost tender, stirring frequently. Reduce heat and cook 40 minutes or until onions are a deep golden brown. Stir occasionally.
  • Increase heat to medium, add mushrooms, and cook 10 minutes or until they are tender. Stir frequently. Stir in garlic and thyme sprigs and cook for 2 minutes. Increase heat to medium-high and add wine to pan. Cook 2 minutes or until most of the liquid has evaporated. Add both cans of broth to pan and bring to a simmer. Reduce heat and simmer 45 minutes. Stir in salt & pepper and discard thyme sprigs.
  • TOASTS: Preheat broiler. Arrange bread in a single layer on a baking sheet. Top each piece with 1 tsp Gruyère and 1 tsp Gorgonzola. Broil 2 minutes or until cheese has melted. Sprinkle a little chopped thyme over each piece of toast.
  • TO SERVE: Ladle about 1 cup of soup into each of 6 bowls and top each serving with 2 pieces of toast.

I love caramelized onions. I love cream soups. Why not combine the two? As a side note, caramelizing the onions takes a while. You don't want to burn them, you want to caramelize them. Be patient! :]

2 medium white onions, chopped
6 tablespoons butter
1 tablespoon garlic, minced
1/4 cup flour
2 cups milk, warm
4 cups vegetable broth
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 teaspoon salt
1 teaspoon pepper
1 large parsnip, chopped
4 ounces portabella mushrooms, chopped
3 red potatoes, chopped

Steps:

  • In a medium pot, melt the butter over medium heat. Add onion and garlic. Stir continuously until onions are caramelized (brown, but not burned), about 30 minutes or more.
  • Whisk in flour, cook for 2 minutes.
  • Add milk or half-and-half, whisk until smooth.
  • Add balsamic vinegar, Worcestershire sauce, salt, pepper, and broth. Let simmer for 20 minutes.
  • Add vegetables, mix thoroughly, and let simmer for 20 minutes, or until vegetables are tender.
  • Turn off heat and let it cool for a few minutes.
  • Puree soup in batches until at least half of the soup is blended. Mix thoroughly.
  • Cook over medium heat until hot.

This delish recipe comes from Southern Living. The original recipe said it serves 8, but I think it serves 4-6. It's just DH and I, so I cut the recipe in half and use 2 large oven-safe soup mugs. The amount is perfect for dinner plus seconds! Enjoy!

6 medium onions, thinly sliced
4 garlic cloves, minced
1/4 cup extra virgin olive oil
1 tablespoon butter
1 teaspoon cracked black pepper
1 tablespoon fresh thyme or 1 teaspoon dried thyme
1/2 cup dry red wine
8 cups water
3 tablespoons beef bouillon granules (or to taste)
1 cup swiss cheese, shredded
2 tablespoons fresh basil or 1 teaspoon dried basil
2 tablespoons mayonnaise
1/2 teaspoon cracked black pepper (to taste)
1 sourdough baguette, sliced on the bias

Steps:

  • Sauté onions and garlic in oil and butter in a large soup pot over medium heat until soft and golden brown, about 20-25 minutes.
  • Add black pepper and thyme to onions. Cook 1 minute. Then add red wine, cook about 1 minute while stirring and scraping any bits off the bottom of the pan.
  • Add water and bouillon to pot. Bring soup to a boil. Reduce heat to low. Cover and simmer, stirring occasionally for 20 minutes. (Double check to see if it needs any salt and pepper added to taste).
  • In a bowl, combine cheese, basil, pepper and mayo. Spread over one side of each bread slice.
  • Ladle soup into oven-safe bowls. Top each soup bowl with bread, cheese side up, making sure to cover entire soup surface with a layer of bread. (My soup mugs are quite large, so I use 2-3 baguette slices per serving).
  • Broil 2-3 minutes until the cheese begins to melt and brown a bit.

  • Combine onions, oil, and butter in a stockpot over medium-high; toss together. (Tongs are a great tool to use for tossing this many onions.)   • Preheat oven to broil with oven rack 6 inches from heat. Remove and discard thyme sprigs. Divide hot soup evenly among 6 ovenproof crocks or bowls, and place on a rimmed baking sheet. Place 2 bread pieces on each bowl, and gently push them down until half- submerged but still at top of soup. Add cheese slices (or a handful of crumbles) to each bowl. Broil until melted, bubbly, and browned in spots, 2 to 3 minutes.
