CARAMELIZED ONION & THYME DIP
Creamy Parmesan dip with loads of sweet caramelized onions, Parmesan cheese, fresh thyme and a kick from a little red wine vinegar.

- Over high head in a large non-stick saute pan, heat olive oil and add thinly sliced onions to cook for 15 minutes or until golden. Reduce the heat to low and cover with a lid. Cook for an additional 35-45 minutes or until completely limp and caramelized, stirring every 5-10 minutes so they don't stick. There should be no crunch left in any of the onions and they will be nice and sweet.
- Spread the cooked onions thin over a cutting board and let cool. Dice into small pieces.
- Meanwhile, combine the cream cheese, sour cream, Parmesan, red wine vinegar and thyme. Add the cooled onions to the mix and season with salt and pepper. Stir well so everything is fully mixed and store refrigerated.
- Serve chilled with crackers, crostinis or fresh vegetables for a great snack!

CREAMY SAFFRON SHRIMP WITH GNOCCHI AND CARAMELIZED ONION
It sounds fancy, but this is a simple and delicious meal you can easily make for any occasion. Feel free to add any vegetables you like and make a meal out of it.

- Melt the butter in a large skillet over medium heat. Stir in the onion, mushrooms, and brown sugar. Cook and stir until the onion has cooked to a deep brown color, about 10 minutes. Remove the caramelized onions and set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the gnocchi and return to a boil. Cook until the gnocchi floats to the top, about 3 minutes; drain, and keep warm.
- Place the skillet over medium-high heat, and stir in the shrimp. Cook and stir until the shrimp have turned pink on the outside and are no longer translucent in the center, about 5 minutes. Add the caramelized onions, sour cream, paprika, and saffron. Cook and stir until the mixture begins to simmer, then gently fold in the cooked gnocchi, then season to taste with salt.
- Pour the gnocchi into a serving dish, and sprinkle with shredded basil and Parmesan cheese to serve.

CARAMELIZED ONION DIP

- Heat the oil in a large skillet over medium heat. Add the onions and thyme and cook, stirring occasionally, until the onions are very soft and brown, about 20 minutes, reducing the heat to medium-low if the onions brown too quickly. Set aside to cool to room temperature.
- Meanwhile, stir together the sour cream, mayonnaise and Worcestershire sauce and season with salt and pepper. Add the onion mixture and stir until well combined. Cover and chill for at least 1 hour or up to overnight. The dip can be made up to 3 days ahead and refrigerated in an airtight container. When ready to serve, scatter the chives over the top and serve with potato chips.
CARAMELIZED ONION DIP

- In a large skillet, heat the butter and olive oil over medium-low heat. Throw in the onions, garlic and thyme and cook, stirring occasionally, until the onions are golden brown and soft, 20 to 25 minutes. Stir in the brown sugar until melted. Continue cooking until very deep in color, 5 to 7 minutes more. Remove from the heat and let cool completely, about 20 minutes.
- In the bowl of a food processor, add the ricotta and sour cream and process until smooth. Season with salt and pepper, then add the chives, Worcestershire, 2 tablespoons of the parsley and three-quarters of the caramelized onions, reserving the rest for garnish. Pulse 5 or 6 times, until the onions are incorporated but still have some texture. Taste and adjust the seasoning as needed.
- Transfer the dip to a serving bowl. Top with the reserved caramelized onions and sprinkle over the remaining parsley. Serve with chips, carrots, radishes and sugar snap peas.

- In 1-quart saucepan, melt butter over medium-low heat. Add onion; cook 15 minutes, stirring frequently. CARAMELISED ONION AND MUSHROOM SPREAD
Spread this on crusty bread or savoury biscuits, use it as a topping for tartlets or as a delicious spread in sandwiches. Used as a sandwich spread, I simply add something like a slice of roasted red pepper and baby spinach leaves. Or slices of ham. I adapted this recipe from one I found online because I was not satisfied with the gourmet spreads I'd been buying. Well they classified themselves as gourmet but they were, in fact, rather ordinary and also quite expensive! I love the fact that this recipe also has mushrooms in it - and a few other goodies! The original recipe must have been a Birds Eye recipe as it specified using Birds Eye Frozen Sliced Onions. I've slightly increased the mushrooms and garlic as I generally do with recipes and I've added leeks as the combination of flavours from onions, leeks and garlic is just so delicious. And I've also added thyme. Vary the garlic - and any of the ingredients - to suit your taste preferences. I've suggested adding more balsamic vinegar if your onion mixture seems too dry. If like me, you are a bit inexact in the measurement of some of the ingredients - oh, I may as well use all of that! - ;) this would obviously be the easiest way to correct this. Have fun playing with this recipe - and I hope that you enjoy it. I keep meaning to add some chopped nuts, probably walnuts, and must try to remember to do so next time I make this.

- In a large non-stick pan, heat the butter and oil; add the frozen onions and leeks and cook over a medium-high for 5-6 minutes, stirring constantly. Add a bit more oil if needed.
- Add the mushrooms, garlic and thyme - and cook over a medium heat for 5 minutes.
- Stir in the brown sugar and reduce the heat; allow the mixture to caramelise for 15 minutes, stirring occasionally (liquid should slowly reduce and the onions turn a caramel colour); remove the pan from heat and set aside to cool.
- Place the onion mixture in a food processor, add the balsamic vinegar, salt and pepper and process until chopped but still a little chunky. Or you could leave a tablespoon of the mixture out and add back into the mixture once you've removed it from the food processor.
- To Serve: Spoon the Caramelised Onion and Mushroom Spread into serving bowl, drizzle with olive oil and serve with fresh crusty bread.
- TIP: This dip is also yummy when used to make little tarts, or to top any savoury biscuits. Simply place teaspoonfuls of the Caramelised Onion and Mushroom Spread mixture into the mini savoury tartlet cases or onto the biscuits, add crumbled feta cheese and half a Kalamata olive. Garnish with a parsley leaf and serve.

SHRIMP PIZZA WITH SPINACH AND CARAMELIZED ONIONS
I had some left over shrimp from last night's po' boys and decided to try them on a pizza. I used the Recipe #12365 from Chef #18650 for the alfredo sauce.

- Preheat oven to 450 degrees F.
- In a large skillet melt butter over medium heat and cook onion until caramelized, about 6 minutes.
- Remove onion onto separate plate, set aside.
- In same pan sauté shrimp until bright pink and cooked through.
- Remove shrimp to separate plate, set aside.
- In same skillet drizzle 1/2 tablespoon olive oil.
- Sauté spinach until wilted, remove pan from heat.
- Place pizza crust on stone or on baking sheet, spread alfredo sauce out evenly over crust, leaving 1/2 inch border around crust.
- Spread spinach, onions, shrimp and mozzarelly evenly.
- Season with salt and pepper to taste.
- Bake for 8-10 minutes or until cheese is melted and dark brown in spots.

- Heat 3 tablespoons oil in heavy large skillet over medium heat.
- Add onion and next 4 ingredients.
- Cover; cook until vegetables release their juices, stirring occasionally, about 12 minutes.
- Uncover; sauté until juices evaporate, about 10 minutes.
- Add garlic; cook until vegetables are very tender and just beginning to brown, about 12 minutes longer.
- Cool completely.
- Puree vegetable mixture and sour cream in processor until almost smooth.
- Season generously with salt and pepper.
- Transfer to bowl.
- Sprinkle with capers.
- Preheat broiler.
- Arrange bread slices on baking sheet.

- Heat the oil and butter in a large skillet. Add the onions, 1/2 teaspoons of the salt and pepper to taste; cook, stirring occasionally, until onions are caramelized, 20-30 minutes.
- Add the balsamic vinegar, stirring up browned bits from the bottom of the skillet.
- Combine the onions with the goat cheese, creme fraiche, thyme, the remaining 1/2 teaspoons of the salt and pepper to taste in a medium bowl.
- Stir, allowing the warm onions to help melt the goat cheese.
- Cover; refrigerate at least 2 but preferably 12 hours.
- Let stand before serving to slightly soften and take the chill off.
